- Edman degradation is a a method used for the sequencing of peptide/protein. In this method the peptide is allowed to react with edmans reagent under mild alkaline conditions. The edmans reagent reacts with
the N terminal amino acid and forms a complex. This complex is then cleaved from the peptide and separated by chromatography or electrophoresis. The method can be repeated several times to find the sequence of the peptide.

Why is it that you can do only upo to 30 aminoacids?

After N -terminal amino acid is detached why not next amino acid also react with pitc at the same time ?
I think that is possible because of the change in the pH conditions. The aminoacid is labeled in the alkaline media, and just cleaved in the acid.
