They are called xeno-estrogens because they mimic the hormone estrogen on a chemical level. Regular consumption of them has been shown to drastically diminish testosterone levels and is a major factor in why asian (particularly japanese) men have some of the lowest T levels out of any other male racial demographic in the world. It's not nearly as big a problem for women but I still think it should be avoided.
Seriously, this should be the top comment. Japanese breakfast is savory without being big bold flavors, it's light so you don't get a food coma immediately after, it's inexpensive, and yet you feel full and ready for the day.
Definitely a good suggestion. I like a simple scrambled egg, still wet, with a mild cheddar separately melted on the tortilla. Combine and roll 'em up. As versatile as a bagel for sure. Or homemade gravlax (instead of smoked lox), capers, tomato, red onion, cream cheese.

I don't know how NYers do it everyday. My stereotype impression is always that they work so hard for what they earn. Rent is high. Food cost is high. Everyone is on the go and already late. People might say Los Angeles/OC has high cost of living. I don't think it even compares to NY. We're so relaxed here on the other end of the coast.

hi Alex! I just finished my first week in NYC the week after you left! I was in almost the same area of Brooklyn. My favorite spot for morning bagels was knickerbocker bagel! I also have got to disagree. Love that coffee bagel and lox combination 😋

Like any baked item, get one from a baker that gives a damn about making a good product. A bagel is not toroidal (donut shaped) bread. I feel really sad for people that have never had a real bagel. My choice is St. Viateur in Montreal. Cream cheese, smoked salmon, and thinly sliced cucumber.
Why not croissant sandwiches? Slice a good croissant and fill it with eggs, saugsage, etc.? As with croissants aux amandes, it can even be a good way to use up old or less than perfect croissants.

Yes, lox is the usual way, but lox refers to the cured version, salmon to the fresh and untreated, as far as i know. The german word is lachs which is pronounced laks/lax.
Guy it also goes better with bagels than the uncured salmon, at least in my opinion. Fresh salmon on sushi is a must but in every other scenario it’s gonna be lox for me.

Black Seed Bagels, Alex!!! I keep telling you this dude. Anyone at Eater would have sent you there if you had asked. At Black Seed, bagels are baked in a wood-fired oven. There is a Black Seed right across 1st Avenue from Momofuku Noodle Bar. So you can go to the New York shrine to ramen and then pick up one of the best bagels in New York!!!
Nice video. Breakfast for me is often "fridge porridge". Oats, greek yoghurt, milk, and then a sweetner and something for flavour, usually honey and blueberries. Really good energy, good protein, and it tastes like a pudding

Yes same in here. I live in Istanbul and you can get really loaded breakfast menu for that price. And I would definetly prefer proper breakfast instead of this thing. But we eat so much in the breakfast I wouldn't be surprised if European or American people didn't prefer that.

I just got my first full time chef position and I want you to know that you are one of my biggest inspirations! the first video of yours I saw was when you fixed french onion soup. I made it that week and then got my first interview for my current job the next. I am now happily cooking everyday :)
I did the EXACT same thing when I stayed in NY last autumn for two weeks working in Brooklyn (I'm a theater technician). Tried some different bagels at first then really got into having a sesame bagel with cream cheese and a cup of coffee every morning. A couple months later, my nostalgic cravings were so bad that I had to learn myself to bake bagels, the store bought stuff in Sweden isn't as good unfortunately.
Oatmeal with lingonberrys and a crispbread with boiled sliced egg and some swedish kaviar takes abit of time to make in the morning but you will not get an energy dip between breakfast and lunch that is for sure.
This isn't an option for an everyday breakfast, but sometimes you need something properly savory for a long day, but when you aren't in an an extreme rush. I suggest biscuits and sausage gravy. On the surface, it seems simple and is a solid guilty pleasure even when not expertly executed. However, when you really think about what can go into the dish, there's a lot to dig into. The dish itself is an experience - it wants to be consumed immediately after preparation so your biscuit doesn't lose its character in the gravy. You can have different sorts of biscuits, the gravy can be anywhere from thick and hearty to lighter and creamier, and - most of all - the sausage, while traditionally a simple breakfast sausage, can bring in both spice and umami. It's miles outside what I'd think of as a Paris breakfast but it's an interesting dish that has complexity many do not get to fully appreciate.
Definitely, biscuits and sausage gravy is up there among the top ten of global breakfasts. Fluffy biscuits, peppery gravy, savory sausage, mmm! And I was wild over what Puerto Penasco had to offer at 7am: huevos rancheros with salsa and chorizo, mmm! My favorite bagel combo was a toasted onion bagel with lox and cream cheese, but my wife didn't appreciate smelling that on my breath the morning after our son was born. I still go nuts over Eggs Benedict, and even have room in my heart for its poor relative the Egg McMuffin.
Crepes- Just like a bagel they can be made sweet or savory and have all kinds of fillings inside. And they are French. A perfect solution to you're problem.
We eat croissants 🥐 with cheese or thyme and olive oil for a middle-eastern twist, or with egg and salad for an egg sandwich feel. A croissant is a diverse bread too. You just got to eat it the none-french way 😂
Hey Alex, my favorite breakfast is a Japanese dish called tamago gohan. crack a raw egg over a fresh hot bed of rice and season with a little soy sauce. stir it up and it's ready to eat! its got a wonderful flavor and is so simple and comforting. Hope you like it and thanks for all your hard work.
Jan Müller well the French also eat beef tatar with raw egg yolk so I don’t think they have an issue with eating raw food. Has to be fresh from a butcher of course! ;)

"Lox" for salmon is pretty funny (Lax is the scandinavian name) but I think the name has come from the jewish community in this case. Is Lox the usual way to write it?

Yes, lox is the usual way, but lox refers to the cured version, salmon to the fresh and untreated, as far as i know.
The german word is lachs which is pronounced laks/lax.

Guy it also goes better with bagels than the uncured salmon, at least in my opinion. Fresh salmon on sushi is a must but in every other scenario it’s gonna be lox for me.

Black Seed Bagels, Alex!!! I keep telling you this dude. Anyone at Eater would have sent you there if you had asked. At Black Seed, bagels are baked in a wood-fired oven. There is a Black Seed right across 1st Avenue from Momofuku Noodle Bar. So you can go to the New York shrine to ramen and then pick up one of the best bagels in New York!!!

Nice video. Breakfast for me is often "fridge porridge". Oats, greek yoghurt, milk, and then a sweetner and something for flavour, usually honey and blueberries. Really good energy, good protein, and it tastes like a pudding

Yes same in here. I live in Istanbul and you can get really loaded breakfast menu for that price. And I would definetly prefer proper breakfast instead of this thing. But we eat so much in the breakfast I wouldn't be surprised if European or American people didn't prefer that.

Spain would be an awesome place to have breakfast, each region has its own traditional one. The most famous and eaten in the hole country is the andalusian one (toast w/ oil and tomato), but you can try them all 😂
Try bagel with traditional turkish menemen with very fresh tea and black tea with little briwn sugar.

Agreed! I was about to comment this about the cream cheese and lox! Black coffee would be too bitter and acidic but coffee with cream keeps everything in the same ballpark.
a latte or cap would also work!

I did the EXACT same thing when I stayed in NY last autumn for two weeks working in Brooklyn (I'm a theater technician). Tried some different bagels at first then really got into having a sesame bagel with cream cheese and a cup of coffee every morning. A couple months later, my nostalgic cravings were so bad that I had to learn myself to bake bagels, the store bought stuff in Sweden isn't as good unfortunately.
So can you make a decent bagel now?

Oatmeal with lingonberrys and a crispbread with boiled sliced egg and some swedish kaviar takes abit of time to make in the morning but you will not get an energy dip between breakfast and lunch that is for sure.
This isn't an option for an everyday breakfast, but sometimes you need something properly savory for a long day, but when you aren't in an an extreme rush. I suggest biscuits and sausage gravy. On the surface, it seems simple and is a solid guilty pleasure even when not expertly executed. However, when you really think about what can go into the dish, there's a lot to dig into. The dish itself is an experience - it wants to be consumed immediately after preparation so your biscuit doesn't lose its character in the gravy. You can have different sorts of biscuits, the gravy can be anywhere from thick and hearty to lighter and creamier, and - most of all - the sausage, while traditionally a simple breakfast sausage, can bring in both spice and umami. It's miles outside what I'd think of as a Paris breakfast but it's an interesting dish that has complexity many do not get to fully appreciate.
Definitely, biscuits and sausage gravy is up there among the top ten of global breakfasts. Fluffy biscuits, peppery gravy, savory sausage, mmm!
And I was wild over what Puerto Penasco had to offer at 7am: huevos rancheros with salsa and chorizo, mmm!
My favorite bagel combo was a toasted onion bagel with lox and cream cheese, but my wife didn't appreciate smelling that on my breath the morning after our son was born.
I still go nuts over Eggs Benedict, and even have room in my heart for its poor relative the Egg McMuffin.
Savory breakfast? Grits with crumbled bacon and a fried egg on top. :)
Crepes- Just like a bagel they can be made sweet or savory and have all kinds of fillings inside. And they are French. A perfect solution to you're problem.

We eat croissants 🥐 with cheese or thyme and olive oil for a middle-eastern twist, or with egg and salad for an egg sandwich feel. A croissant is a diverse bread too. You just got to eat it the none-french way 😂
Hey Alex, my favorite breakfast is a Japanese dish called tamago gohan. crack a raw egg over a fresh hot bed of rice and season with a little soy sauce. stir it up and it's ready to eat! its got a wonderful flavor and is so simple and comforting. Hope you like it and thanks for all your hard work.

Jan Müller well the French also eat beef tatar with raw egg yolk so I don’t think they have an issue with eating raw food.
