One detail near the end that got me was Franco presenting a pizza conceptualized by his son. That is where you realize that to him, his family is so important that he wants to show them to his closest clients. The video starts with him saying the entire idea of hanging out and cooking for his friends was his dad's, and finishes it with a dish developed by his son. Here you see, in very simple and subtle detail, that if you are in Authentica, you are at his home.

Was there 3 years ago, and completely randomly(we thought) we were given the chefs table (only 2 table on his terrace). This was the best restaurant experience of my life as alex described, but the most frustrating also. Franco was checking on us every 5 min, but couldn't speak English. As a big pizza enthusiast myself, I had tons of questions about his dough, but couldn't ask one. Promised myself to learn Italian before going back. Oh and why the special table? Because a famous Italian actor(from the TV show Gomorrah) was also coming on this terrace, and they thought French people like us wouldn't recognize them. This was a magical moment. My whole 2 weeks naple vacation were organized around this booking, from visiting his Mozarella supplier to tomato productions, and it was so worth it.
Hey! I'm currently in Napoli after yesterday's night dinner and today's lunch at pepe in grani. We flew from France just to eat there, for the second time. We had to come back! We were beautifully received and the food was simply amazing. Every ingredient is a star on the pizza and you can feel all the research and technique behind every dish. Franco was checking on us all the time and was really concerned about us having a good time at his place. Same as you, as a neapolitan pizza enthusiast I had a ton of question about everything I wanted to ask him but I was not able to because of my level in Italian. Beside that, every thing was magical. He showed us the kitchen, told us about the different kind of tomatoes that are used in "La ritrovata",... It really was our best restaurant experience ever. You can feel the passion he puts in what he does. Definitely coming back in the future, with some Italian speaking skills! Thank you Franco

I went to Pepe in Grani last week for dinner. Restaurant was incredibly full and still they managed to serve the best pizzas I’ve tasted. Their tasting menu is incredible and all ingredients are superb. If anyone happens to be in the south of Italy, it’s worth going the 1h drive from Naples only for the pizza experience.
This is a beautiful experience. The chef, A master at his craft, having fun with friends and Alex, someone who could truly understand the craftsmanship, showing us every detail in a cinematic way.
This is the first video ever that made me physically, I mean _literally_ drool. I've just had dinner, I'm full, and yet my saliva glands are hyperactive! I loved when Pepe was building the first pizza, his face was like a mad scientist, and Alex looked on with awe and wonder. What a great video Alex, and Franco Pepe was a legend as usual!
Alex, Thank you for reminding me how good food is in Italy. I lived in Castigilone Fiorentino for five months and traveled mostly Northern Italy. Taking pictures, sketching, eating, and drinking wine the whole time I was there. It was the best five months of my entire life. The food, the people, the art, the history. I look forward to going back. Merci Alex!
I have been making pizzas as a learning process, so I can open my own business for over a year now. Then...I saw this video and I went "bonkers". My mother is from Caserta,... and to think the greatest Maestro is from that region. Alex,...I love your channel. I work at creating wonderful works of art that taste as pleasant as they look...and I desire to be a great pizzaiolo. Now, I want to put a photo of Franco Pepe on my wall as motivation and dedication to the "King of Pizza". Alex....thank you, grazie...from Nashville Tennessee. -Giovanni (Johnny B) 🤗
Being a chef myself, i can't even imagine what a great experience that most have been!!! The "pizza's" he served, looked amazing, and the flavour combinations are simple but you just know they work. Italian cuisine's descendants of the "Cucina povera" is something really beautiful, simple ingredients that can become a great dish, if you know how to use them.
Indeed. This is my favourite part of Italian cuisine. I'm still working on Cacio et Pepe.... two bloody ingredients (three if you count black peppercorns, which you usually don't, but here it's such an integral part of the dish) and it turns out completely divine without lacking anything when done right.
@@goffe2282 I made Spaghetti San Gennaro the other day and I used quite a few more anchovies than the recipe calls for and the magic didn't happen ... sometimes, less is more. That's what I like about Italian cuisine, it's simple and it's all about the quality of the ingredients and a few simple to learn/hard to master techniques. That's why going to an italian restaurant can result from terrible to simply amazing depending on if the chef is taking shortcuts or not. You can't lie with Italian cuisine.

I’ve watched your entire catalog and I thought I was going to dislike this. I thought from the title alone that watching this would make me unsubscribe. It made me cry. I worked in restaurant kitchens for about 7 years while going to school. The techniques you pick up and the love of food, working with food, selecting food, making food, pleasing people, working with a close team - above all the joy food has to make a bond between people - once you feel that, the desire for more of it never leaves. At least, I thought it never left. My fiancé died two years ago and my little world was destroyed. There has been little happiness in my life since then. Cooking for yourself, there can be some joys there, but nothing like the joy of knowing what someone likes, exactly how they like it, and making it that perfect way that makes them so happy. I used to host restaurant nights for friends, one or two people at a time, and cook course after course of a menu made especially and uniquely for their tastes, that night. You can begin to imagine how I connected with this video. I’m no Franco Pepe, but I do know the joy and passion you can see in his eyes serving you. That’s the joy of restaurant work - the joy of serving someone. If you enjoy serving people, if you enjoy finding out exactly how someone likes things, anticipating their desires, thinking of what they like before they even know they like it or want it, there are not many things that beat the immediate feedback of serving someone food. I cried because I remembered how happy I was serving people and remembered there’s joy to be had there that I need to return to. There’s joy in serving the anonymous customer you never met, and from small cues delivering exactly what they want. There’s immense joy in serving people you know intimately with exactly what they want, and still being able to surprise them with how well you know to please them. You can imagine the flood of memories and realizations that made me cry watching this as I remembered cooking for her, as I realized I missed restaurant nights for friends, and as I realized I was _your_ anonymous guest whose needs you anticipated perfectly with this film. Thanks Alex, it was delicious.
My condolence for your loss, as I hope you find someone to fill your emptiness. Being able to look at their expression, after they take a bite, is the reason why I cook.
Your comment just opened the gate and flooded my mind from memories of similar experiences I had with my ex wife and friends. Thematic food nights for close friend, and seen the smile on her face for making simple things that she loved. I really miss that feeling, and your comment just made me realize I need to go back to working with food again. I hope you find a lot of happiness in your future.
What an absolute treat to even be able to see this! Jealous isn't even the word - I am so proud of you and how far you've come, Alex. As a professional chef from America who dreams of living and cooking in Europe one day, I will live through you until that day comes!

Alex, this was a gorgeous experience! You managed to bring back my appetite even though I'm recovering from some food poisoning, which is truly incredible. Your editing and filography were a marvel, as always. My hat off to you sir!
To me, that combination has been vindicated for about 10 years now, ever since I saw the late great Anthony Bourdain in the Rome episode of The Layover. In that episode he challenged a pizzaiolo to make him a Hawaiian pizza. His comment? "That should not have been good." But he admitted it was.
I can't watch any of Alex's videos and do anything but smile. This dude's personailty is as beautiful and bright as the food he finds. His reactions are genuine and incredible. What a guy.
I fear "The Jerk" may be a cultural reference that is lost on Alex. (it's a Steve Martin movie) Cup O' Pizza was a joke that made fun of the then new instant noodles in a cup.

Hey Alex! When I was watching the video, the part where I first saw the dough, it was just pure awe. I've never seen a dough look that... pudding-like, only in one dish, so I got suspicious. So shiny and soft, but it holds together. And when Franco put it in the oil to fry, and basically made something that my experience would describe as Lángos Pizza, my suspicion was confirmed, and my experimental brain lit up. I will definitely try making a Pizza from traditional Hungarian Lángos dough. This is too interesting not to try.
Alex i cant tell if its an equal measure of luck or beacuse of ur hard work and dedication to food that u are where u are. Being invited to exclusive culinary events like this that many would literally kill for. Truely inspiring both your work and the works of others that you share.
First, Alex, I love your videos. They transport and immerse the viewer as if we are there with you. As an Italian, I've been a purist. Pizza Margherita, sauce, cheese, fresh basil, and that charred crust, the holy grail. Yet my mind is open. Fried basil, brilliant. But pineapple on pizza, blasphemy... until this video. This man is a genius.
I am completely at a loss for words. True art, Alex; what an experience watching your video was. As satisfying a cultural experience as can be imagined. The photography, the music, the angles, the food, the lighting, the pacing, the flow. You are amazing, man.
This is definitely the best video in the channel so far. The cinematography!! WOW. The pizzas!! WOW. It's the first time I feel envious of the food someone's eating in a youtube video
Hey Alex, our Good friend Jean-Felix from Truffles on the Rocks needs your help!!! He needs you to recreate the original Picon recipe!! Please don't abandon him in this time of need!
As long as you keep making videos Alex, I will always watch. The production to your videos is always great. The passion you have for food, to me, is a mix of Anthony Bourdain meets Alton Brown. And they are the reason why I learned to cook myself. I'm not on that level, but it helped me learn the basics to cook for myself and my friends.
What a coincidence... I've been following you for three or four years, Alex. And a few weeks ago, my partner and I were looking at a trip to Italy. We found a trip to Pompeii. So now a table is reserved on Sunday, and it will be very exciting to try a masterpiece of pizza. Thank you for your inspiring channel and great work! Regards Anders from Sweden.
@@giovanni-cx5fb It was definitely worth it. The pizza was the best we have ever eaten, and there were also starters and desserts made on pizza dough which were also very good. And as Alex mentions in his clips, Pepe's is located in a very cozy and lovely village up in the mountains. Small narrow alleys where you feel the wings of history of all the workers who have struggled to build all these fine buildings and you enjoy studying each step up to Pepe's. So go ahead and enjoy! You will not regret it :)
Alex, I've been following your videos since the ramen series and I'm amazed at how far the production quality has risen. And even more amazed to learn that you CAN have pineapple pizza in Italy without someone having a heart attack in anger 🤣
I don't know if you were shooting for it, but I got a really strong sensation of how important the whole experience with the food is. It is just not about technic, ingredients, it is very much about people enjoying what they all have in common with each other. Social experience is an important spice or even an ingredient.
Is it worth travelling "all the way" from Paris to Naples? As an Australian, this makes me laugh! But I agree Alex. As someone who also loves food and has travelled around the world to experience different cuisines, it is always, always worth the travel.
Just stumbled onto this video on a Sunday morning and I was not prepared for this. Amazing music selection, great characters & storytelling, slick edit. I’m coming back after lunch, I have to go eat some pizza.
"I've been skipping lunch and breakfast for this" Doesn't everything taste 10 times better immediately when you're severely hungry? Anyways, it looks incredibly good. And not just in a "I really, REALLY want some of that." But in a "time to get into the kitchen and prepare the dough" way. Inspiring. Is it all the same dough though? Also, love the attitude, of everyone involved. What an incredible experience that must be. Thank you for sharing this.
Looks absolutely amazing, 2 very lucky guys to have been able to enjoy this :) Not sure if it really needs this kind of "dream/nightmare-ish" cinematography though, the food an experience seem to speak enough for themselves already!

Two things I have never seen before today, 1. The pizza experience by itself 2. The way this video is created is art of story telling by itself. Feeling the exclusivity of the experience by just sitting at the couch is discovery by it self. On top of it, I read the video.
This is, for the lack of better words, a beyond-video. Not comparable to any cinematic piece because it has genuinely oppened a niche for a 1-of-a-kind video diary-like. Holy fucking shit. The experience, the intimacy, the authenticity -- thanks for sharing all of that.

Merci Alex!
Come back soon then! Italy always loves back any soul that loves Her!

Good day Sir, where is your pizzeria in Nashville?
@@Random63R400 due to the economy, I am taking myself to Minnesota where I will be working on my dream there.
It's such a simple dish, but to make it really well you have to respect the fact that it was a poor person's dish and adding too much spoils it.

LOVE on u brother !
My condolence for your loss, as I hope you find someone to fill your emptiness.
Being able to look at their expression, after they take a bite, is the reason why I cook.
Rest in peace to your loved one. I'm glad that you were able to find some light in this video.

Yes vindicated, pineapple and pizza! Alex you are one lucky man. Franco Pepe has created one beautiful space for beautiful pizza.
I shed a tear when I saw the love and creation that Franco put into this dishes

I was literally in tears half way through the video, by the end of the video, I had no tears left to weep.
I don't know if you were shooting for it, but I got a really strong sensation of how important the whole experience with the food is. It is just not about technic, ingredients, it is very much about people enjoying what they all have in common with each other. Social experience is an important spice or even an ingredient.

Two things I have never seen before today,
1. The pizza experience by itself
