i usually tried to leave it sit until it was ready to flip, "dont touch it" but her tip of how she presses it into the pan helped. she spins it around to make sure its cooking evenly in the oil and gets all those divits. normally i get impatient and turn the heat up and burn it lol but i just tried today exactly as she did it and it was perfect. definitely a great video. i also tried making the sauce in the description but failed; i tried to deglaze the fish pan with the wine after cooking the shallot(i used onion same thing), i think i should have done it in a seperate saucepan. i also substituted chives for dried parsley and basil(yes fresh is better but im poor lol). it was really good regardless, dont think i added enough lemon juice though, didnt measure it. in my top 5 fish list for sure

I wonder why during the HK show some chefs still cooked it raw .. this fish is so easy to cook, just 2 minutes each side. Is it supposed to be on high or medium heat?
No way, 2 min. Each side on a piece that thick?? The whole video was less than 4 min..?? Not sure about how high the flame was either... 2 min. For Seared side but at least 4 for the other, the "bath" does help though...
Fish + spinach is such an underrated combo, probably one of my favorite pairings ever. Add some aioli too and it’s so good
