    Today's baking is ‘Tiramisu cake’ with rich flavor.
    The chocolate lady fingers and rich syrup makes it much rich flavor.
    You can make tiramisu with fresh cream and mascarpone cream simply. But the you can make the more delicious tiramisu with full of rich flavor by mixing with creme anglaise :)
    Let's make 'Tiramisu cake' to following this recipe step by step. You can make it!:D
    Italian tiramisu + chocolate radyfingers
    8x8x5.5(H) 4 cakes
    Ingredients
    Chocolate ladyfingers
    2 (70g) Egg white
    60g Sugar
    2 (36g) Egg yolks
    50g Cake flour
    10g Cocoa powder
    Powdered sugar
    Mascarpone cream
    2 (36g) Egg yolks
    50g Sugar
    60g Milk
    300g Mascarpone cheese
    20g Sugar
    300g Fresh cream
    Syrup
    80g Hot water
    40g Sugar
    12g Instant coffee
    15g Coffee liqueur (Kahlua)
    How to make chocolate ladyfingers
    1. Separate the egg yolk from the egg white.
    2. Whip the egg white. When white bubble is formed, mix the sugar into mixture in three times to make dense and smooth meringue.
    * The cold egg white can make the nice meringue.
    3. Put egg yolks into the meringue and whip it by whisk.
    4. Put the sieved cake flour and cocoa powder into the mixture.
    5. Mix by spatula until the powder is not seen.
    * Sprinkle powdered sugar and then do it again when the powdered sugar permeate the batter compleletly.
    6. Place the batter into a piping bag with round tip (1.5cm).
    * If you don't have a round tip, cut the tip of a piping bag into 1.5cm.
    7. Squeeze it into proper size.
    8. Sprinkle powdered sugar.
    Sprinkle powdered sugar again, when the powdered sugar permeate the batter completely.
    9. Bake it at 180 ℃ (355℉) for 9-10 minutes.
    How to make mascarpone cream
    1. Mix sugar with egg yolks.
    2. Heat the milk until the surface of milk boil over medium heat.
    3. Whisk the egg yolk mixture rapidly pouring milk in 3-4 times to prevent it from cooking.
    4. Pour it into pot again and boil it stirring it over medium heat.
    5. When drawing with a spatula, it's okay that the clear line is formed.
    (Complete creme anglaise)
    6. Sieve the creme anglaise at once and cool down.
    * Sieve for silky mouthfeel, not lump.
    7. Beat the mascarpone cheese at room temperature smoothly.
    8. Mix sugar with the mascarpone cheese.
    9. Mix the creme anglaise with it.
    10. Whip the fresh cream to 90%.
    - Whip the fresh cream depending on the wet or dense texture of mascarpone.
    11. Mix the whipped fresh cream in 2 times.
    12. Place the cream into a piping bag.
    How to make syrup
    1. Mix sugar with hot water.
    2. Add the instant coffee into the mixture.
    3. Mix the coffee liqueur (Kahlúa) with the mixture and cool down.
    Montage
    1. Turn the ladyfingers upside down and soak the ladyfingers into the syrup.
    2. Arrange the ladyfingers in the bottom and squeeze the half of cream.
    3. Arrange the soaked ladyfingers and squeeze the cream on the ladyfingers.
    4. Shake and make it flat.
    5. Refrigerate it to harden for 3 hours or a day.
    * When the cake was harden for 1 day, the sprinkled cocoa powder is not permeated well.
    6. Sieved cocoa powder.
    * It's good to decorate by using stencil.

      일반 제누아즈로 시럽을 적셔서 만드는건 살짝 축축한 그런 식감인데 레이디핑거로 만들면 시럽을 흡수해도 축측하지 않고 촉촉하면서 더 부드러운 느낌이었어요 ^^

      Instead of cocoa powder, add 10 g of cake flour .
