Ingredients:
1 tbsp olive oil
1 yellow onion, diced
4 cloves garlic, minced
4 stalks celery, diced
2 carrots, diced
1 cup red lentils
1 cup green lentils
1 can coconut milk
1 can diced tomatoes
3 cups vegetable broth
1 tbsp turmeric
1/2 tsp ginger powder
2 tsp dried oregano
1 tsp dried thyme
1 tsp salt
1/2 tsp pepper
2 cups spinach, chopped
Instructions:
Sauté Vegetables.
