      Cynthia Nieves Béchamel sauce. It’s French. You start a béchamel sauce with a roux (also a French word). A roux is basically equal parts fat to flour, so a it’s starter, thickening sauce. Hope this helps.

    Thank you so much for this recipe Nydia! I'm an Indian married to a Cubano. When I moved to my husband's home in Miami, the first place he took me to was a Cuban bakery to try the pastelitos and the croquetas and it was love at first bite for me! Now with the COVID-19 stay at home routine, we hardly ever go to visit our favorite Cuban bakery to pick up snacks and breakfast. I was searching everywhere for the perfect croqueta de jamón recipe when I came across your channel. I tried making it exactly as you explained, and dear Lord! The croquetas taste exactly like our favorite bakery! I can't thank you enough! You have a fan for lifetime in me! Following your channel and hoping to learn more Cuban recipes so my dear husband can enjoy all his favorite comfort foods at home! 😘😘

    Con esto del Coronavirus como no podemos salir estoy aprendiendo a preparar croquetas en casa, vivo en Miami desde hace 6 anos y nunca se me habria ocurrido aprender a hacerlas hasta que llego el dia en que no pude salir a comprarlas. Gracias

    My husband and i went to Florida for vacation and went to a lovely Cuban restaurant and this is one of the most delicious food i have ever tasted i swear i wanted to vacation at that restaurant i know that sounds fat but i am fat lol thank you for bringing this yummy Cuban croquetas to my home im a new fan of yours😍😍🙌❤❤

    I've done these croquetas 2 times and they are really good. The ones they sell at the store have so many ings and preservatives, etc. These are easy to make and delicious. I use a pack of diced ham and just ground it in the food processor. Thanks Nydia, awesome recipe!

No Cuban restaurants in my area either, thank goodness for my abuelita she taught me lots of recipies over the years. Can you make a video on yucca?     Your are correct.. Roux is the combination of flour and butter.. wich is the base to make the Bechamel.. and yes Bechamel is also known as white sauce.. I wich i had more time to explain these things on the videos.. but we have a limitation in time and some people get bored with all those explanations.. Im glad there are people like you that really know and appreciate the proper terminology.. Nydia

    I love croquetas. I found a Cuban bakery near my condo and found them there. I could eat them like popcorn. I have trouble with portion control. But it's fun to see how they are made. I also had them in The Netherlands many years ago. The Dutch have their own version. Thank you for the video. I'll go buy a dozen and pig out!!!

    We have a cuban restaurant here in Indianapolis, that makes a Cuban sandwich, using the croquetas. They are so tasty!

    Hi! Most latino supermarkets carry the ham. If you can't get the Serrano buy any sandwich ham low in water. Use blender or food processor to grind it. See information at the end of the video.

    Just to clarify, Roux and Bechamel are 2 different things. Roux is an ingredient of Bachamel sauce. Roux is traditionally equal parts of butter and flour.
    Roux is a cooking mixture of wheat flour and fat (traditionally butter). It is the thickening agent of three mother sauces of classical French cooking: béchamel sauce, velouté sauce, and espagnole sauce.
    Béchamel sauce also known as white sauce, is made with a roux of butter and flour cooked in milk.

    I'm taking back to childhood. I make these a little smaller. I also process some panko and use regular bread crumbs for the coating. They taste so good. Thank you. I'm not a big fan of ham. These gives me a chance to serve ham to guests.

    I just tried them. I made the mix yesterday and even though I thought that there was too much oil and butter for the amount of flour, I did as you said. After refrigerating the mix for a couple of hours, the big problem became apparent, the oil started separating from the mix... I kept it overnight hoping for the best, but no luck.i decided to cook them anyway but was sooo disappointed because it is too soft.
    I believe instructions are essential; not everyone has seen someone make croquetas. I did see the list of ingredients but your verbal directions indicated to mix the oil and the butter. By the way, I did cook the bechamel well. I plAn to try again but this time I’ll try go follow the amounts given in the old book Cocina al Minuto. I hope this is a positive criticism in order that the same problem might be avoided, after all, Serrano ham is not cheap...

      Sometimes the ham releases too much liquid.. depends on the type of ham ect.. when this happends you just need to add more flour. thanks

      NydiasMiamiKitchen Se haría más fácil leer la lista de los ingredientes si se pusiera en las notas del vídeo. Para verlas al final del vídeo hay que ponerlo en pausa y se interpone el botón de pausa. No se puede leer bien.
