Hi Peter! I've been fortunate enough to run into a couple other people who share our name. We sometimes call them prawns too, but usually when they're very large. I do find steaming intensifies their flavor. I do the same for crab and lobster. Thank you so much for watching!

Lincoln, NE After steaming, how long do you cool before taking shells & tail off? Do you rinse with water after that? If adding to a hot pasta dish do you add shrimp just be serving to avoid overcoming the shrimp?
Great question!! If you steam them with the shells on, you want to let the cool long enough that you can handle them safely. Don't rinse, that will wash away all the flavor. If you're adding them to a dish, you can add them right before serving if they're already steamed. Alternatively, you can steam them without the shell if you choose, or you can cook them in whatever sauce you're using on the pasta as well. Just take the shells and tail off before adding them. I actually prefer no seasoning, I love the natural taste of the shrimp. The sea taste just has that effect on me. Maybe a few shrimp in then I'll dip some in cocktail sauce
You could, but I find the steam sometimes washes the spices off. When you add the spices to the water first, and get it boiling, the steam permeates the shrimp and takes the spices with it. I find you get a better flavor by flavoring the water and not the shrimp. Try it both ways, and do whichever you like better. Thanks for watching!
It's a lot better if you add Old Bay (and I like to add salt and pepper as well) on top of the shrimp in addition to your seasoning additions in the boil fluid.

Always plunge freshly steamed shrimp into an ice bath. This ensures a tender cocktail shrimp and prevents overcooking. Letting them “carry over” to doneness is not something one does with shrimp.
My concern with that is washing away any flavor you would get from the steam. But it is a good way to put a quick chill on the shrimp if you need to. Thanks for watching!

I like my steaming water to have lemon, light beer and old bay, with a little old bay sprinkled over the shrimp when served. 🍸🍸

Marinated shrimp will usually be partially cooked by the acid in the marinate. So yes, but cut the time in half
