    First I was sad because you made this delicious bath of great deliciousness seasoning just to steam the shrimp, then I was happy when I saw you soak those shrimp in that spicy liquid. I never tried steaming the shrimp but i have boiled a spicy batch and put the pot to the side and then boiled the shrimp and put them in the season cooled pot for half hour and they come out good.

      I've done plenty of crawfish boils in the big pots, but the capacity of this steamer really wouldn't do that many at one time. I usually boil about 35 pounds of crawfish at one time. Yes, the shrimp had just came out of ice and were very cold. Pretty impressive how fast they steamed. I actually could have pulled them off after 2.5 minutes.

    • @SmokyRibsBBQ
      @SmokyRibsBBQ  5 років тому

      Kosher rock salt is not sodium nitrite. If you have a Academy Sports you can find the sodium nitrite there if not Amazon carries it. It’s not real bacon without it and won’t taste like bacon without and unsafe to cold smoke without it, so yes, you absolutely need sodium nitrite. The brand I used is Prague powder #1
