    Hello Jill!
    I MUST tell you what I just made with your cheese sauce. When I was growing up we used to have Mom's (yes, Mom, because I'm from the West Midlands in the UK) cheese and potato pie... basically, mashed potato and onion with loads of grated cheese, mixed in, then put back in the oven to brown.
    I SO miss it, so I thought I'd have a go. WELL, let me tell you Mrs, it's fab! Mashed potato with your sauce mixed well through it, piled into a dish and browned in the oven AND with a line of sliced tomato length ways across the top (70s stylee).

    Jill! This is AMAZING! For 2 ppl.. i made potatoes in the airfryer and broccoli in the ipot... and this cheese on top! Lady you do not disappoint! it makes a lot! And still 12oz left over! Gonna make a small some rice and mix that in with a new batch of broccoli.

    OMG! Just made this and it is so good!!! This was always one of my favorite things pre-vegan and now I can have it as a vegan. Thank you, Jill McKeever, I love you and my Instant Pot! Can't wait to use the cheese sauce for other things--NACHOS!

    For broccoli : I use the steam function, the regular lid and set the time on 0. Makes perfect steamed broccoli every time :)

    If you like a gooey melty cheese sauce, use this recipe and add 4-5 tablespoons of tapioca starch. You have to heat it up to get the melty thing going on (I always use the stove and stir like crazy but maybe the heat in the vitamix would work). it gets amazingly melty in just 5 minutes or so...yum!

    I made the fat free version cheese, added rotel and soy curls with the cooked rice and broccoli. Baked it in an 8x8 pan. I am in heaven. :)

    I do not have an Instant Pot and against yours and Chef AJ's desire for all people eating this way, I will not be purchasing one anytime ever (don't have room in my kitchen or storage), HOWEVER, I love your recipes and am always able to make them without the I-Pot. I am excited to try this rice broccoli concoction. I tried your broccoli casserole recently and while my family ate it and enjoyed it, I felt that there was an undesirable after taste that I THINK was from the "No Chicken Chicken Bouillon". I literally could not think of anything else it could have been. Having said all of that, you have inspired me to make so many recipes I never would have thought of ever. I'm always curious to see what you got coming next. All my best to you!

    Our only store doesn't have roasted peppers without oil (I live in a very isolated place up North) so I used fresh carrot for colour and smoked paprika. I also added garlic powder, because where I put carrots garlic must follow! :)

    I have never thought about steaming broccoli using the sauté mode...great idea! I like to make your cheese sauce and either use it plain on macaroni for mac and cheese or as a cheese sauce on baked potatoes. When I want nachos, I just add some jalapeño "juice" from the jar to zip it up. It's also great like you made here over rice, but with a little curry powder added to the sauce. Thanks for all the great inspiration❤️

    Hi Jill, I made this today before work for my lunch today. I over steamed my broccoli and I poured way too much cheese on my rice and mushy broccoli. But I'm eating it anyway. I personally needed more salt and I added garlic powder and onion powder. I will make this again but next time without overcooking my broccoli. Thank you for the recipe.

      You're welcome for the recipe, Gale. Broccoli can be tricky to cook, especially in the iPot. Honestly, when I don't want to overcook broccoli, I cook it in a steam basket in a regular pot. I bring an inch of water to a boil in a covered large pot. Once the water is boiling, I reduce it to a simmer, drop in the broccoli and set a timer for 4 minutes. It comes out fork tender every time. I never leave the broccoli in the pot once the 4 minutes is up; otherwise, it keeps cooking and gets mushy still. Try it.

    Cheese sauce is good. Used peanuts --no roasted pepper used chipotle seasoning smoked paprika, no vita mix so I steamed oatmeal, onion, peanuts etc in microwave and then used my food processor. Yummy stuff thanks.

    Not sure if you will see this comment but I had to let you know I was watching your videos on my TV and my 3 year old was playing in the room. When this video came on she sat down and watched it with me. As soon as it ended. All she could say was make for dinner mom PLEASE!!! How do I say no to that. Well my family loved it!!! I told my sister about it and she made it for her family and they all loved it too! I am making it again tonight. I can't wait!!! Thanks so much!!!

    I always overcook my broccoli unless I'm doing it in the microwave. Clearly what I need is a glass lid for my InstantPot! I've had my 6qt IP since 2015 and recently replaced my gasket because it had become a bit finicky about coming up to pressure. In the event someone else has the same issue with their well loved IP, the new gasket solved that problem right away.

    Oh I just made the sauce in my NutriBullet and it came out just fine my only caution would be to make sure you only use a tiny bit of the smoke. I'm just starting to eat plant-based and this tastes just like traditional cheesy rice and broccoli!

    New to the Instant Pot too. I got a glass lid for my 6 quart and can’t figure out how to cook with it instead of the IP lid. Steaming broccoli turns out too soft and you can’t take the lid of to check. I like your idea better. Can you incorporate how to use the glass lids in some of your videos please.

As I was watching I said to my husband, I think I will add soy curls, and then 1 second later you said if you have shredded soy curls you could add them.     HI Jill, I don't post very often, but I wanted to let you know I made this last night and I loved it! well, actually, last night I made the cheesy sauce in the blender and cooked it on the stove, cooked rice and kale, then put it all in the refrigerator overnight because I wound up going out, and ate it this morning! So, even though it looked a bit gelatinous sitting in that jar, it heated up wonderfully and the flavor is terrific. Thanks Maggie!! I am taking more for lunch. The flavor in this sauce is just right, imho...

    Okay-This looks amazing and since I am new to the instant pot, I love another way to use it. My son has a cashew allergy. What can I use in place of the cashews? You are adorable by the way and made me smile!

      You can leave the cashews out and it still makes an awesome cheese sauce. The magic deliciousness of this sauce comes from the liquid smoke, roasted red bell peppers in water, and onion (either fresh or powdered). The oats work to make it creamy and the cornstarch adds to the thickness.

      OMG thanks for this. I have a severe nut allergy too and this response made my day. I'm going to have to try it (though I don't have a Vitamix - just a Nutribullet). I'm also going to add 4-5 tbs of tapioca starch to make it stretchy (like I saw in a comment above). I LOVE "broccoli rice faux gratin" and think I could get even my veggie hating wife to eat it. :)

    Thanks for referring me to this version of the recipe, I liked it. We omitted the liquid smoke and added in some pickled jalapenos and a splash of the brine they are packed in, and it came out very close to the classic nacho cheese flavor. If I don't have raw onion on hand, do you think onion powder would work? If so, how much?
    Also, what do you mean by "10 minute natural release" method? Is that where you leave it on keep warm and time 10 minutes, then quick release the pressure?

      Onion powder works just as well. I have used up to 1 1/2 teaspoons onion powder to make 3 pints of cheese sauce.
      As for the pressure cooking, your guess is correct. The pressure release method 10-NPR, is with either the Keep Warm mode off or on, you wait 10 minutes after the cooking time is over, then turn the steam release handle to "Venting". Allow the remaining pressure to escape the cooker, the float valve/lid lock will drop, then you can remove the lid. It will take about a minute for all the pressure to escape. :D

    Looks so yummy! BUT, my daughter is allergic to all nuts. Can I use sunflower seeds instead of cashews for the cheese sauce? Or what would you recommend as an alternative? Thanks!

      You can leave the cashews out without hurting the recipe. The oats and cornstarch thicken the cream sauce. The cashews are there to add a creamier fat undertaste.

      I don't have it either, I used a regular blender (Hamilton Beach) and it was fine without soaking.

      +beautymariely This dish is tofu-free, which is helpful to some folks. It's easier to pull together and my family is addicted that cheese sauce. They pour it over everything. 😍

    I"m one of those who will drink that pot liquor LOL..... To be honest here, I would add in onion to steam along with it so the liquid has a bit less of a 'farty' smell to it har har. Now that my tummy is grumbling and has caught up to my watering mouth, I will have to make this a reality in my kitchen.

    I’ve a question on the cheese sauce...I don’t know what a blender that cooks your food as it processes is...Ive a low end cuisinart high speed blender...should I blend to smooth in this and then thicken on the stove?

      Blend the ingredients smooth then transfer to a medium-size saucepan over medium heat for 5 minutes, or until thick like melted Velveeta. I cook the cheese sauce in a Vitamix blender because it cooks food when set on high speed for several minutes.

    Hi Jill - enjoy your videos. Just wondering with the cheese sauce recipe if you can substitute fresh red pepper as is, or would it need to be cooked first? It's probably a stupid question! As it so happens, I bought all the ingredients today to make this soup for a weekend gathering of friends on a secluded beach (Bay of Fires, Tasmania). I am HOPING the soup will stay hot in the ipot for an hour or so from leaving home to consuming soup..... Pot will travel.... fingers crossed! S

      The roasted red bell peppers from the jar REALLY help make the cheese smoky, along with the few drops of liquid smoke. If you have a way to pop those peppers in a toaster oven or oven to roast, I say it's worth the trouble.

      Yep - gotcha! Next question: I thought I would try your way of "steaming" the broccoli and I got in a muddle: I understood using sauce to quickly bring the water to the boil, I don't yet have a glass lid, so I used the normal lid with the venting open..... but I couldn't work out the oder of the button pushing to have sauce, high, and 6 minutes. (When all else fails, ask siri to set the timer for 6 minutes!) This really is the coolest machine, but I have a LOT to learn! S

      that is suppose to read "saute" not "sauce"

      Some folks I know are avoiding nuts because of their fat; that's why I said it like that.
