My wife and I have started a plant based diet due to health reasons. Our kids eat our food now and then, but usually they get quick convenience food that they will eat. Tonight I was fixing this dish, and about to start my kids' hamburger helper when my 7 year old tasted the cream sauce and LOVED it. He then ate some beans and liked them too. He asked if he could eat our food. I put the junk food away and he chowed down on this dish. I have cooked cauliflower every way I could think of, and have hated it. I am so glad I gave this sauce a chance. It is fabulous. Thanks

Okay, I made these but mine turned out soggy so I'm going to try it again this weekend. The cauliflower cream sauce was so AWESOME. Whew, I could just stick a straw in my vitamix and drink it up! I made some of the cauliflower sauce another night and put it on steamed veggies. Thank you so much for doing what you do and being you. :) Patricia :)

We had this last night for dinner...was great! I added some salsa to the beans, but Hubby wanted it even a little spicier, so he added more salsa and thought it was wonderful! That cauliflower sauce was so yummy Jill! Thanks for another winner!
I am making this cream sauce today to use in scalloped potatoes. My husband requested scalloped potatoes. I have the cauliflower, onion, cashews, salt and water in the Instant Pot now. Then I am going to add a bit of lemon zest and lemon juice when I blend this as well as nutritional yeast to give it a bit more cheesy flavor. I will let you know how it turns out.
Simple Daily Recipes I tend to get in ruts and forget about favorite recipes I made previously. I need to go through my recipes more often. We get bored with the same old stuff. Our breakfast is the same every morning. Lunch is usually our big meal of the day. Then we have a salad or fruit bowl for dinner. When you come to California you will have to come visit!
The scalloped potatoes were so delicious. Our son and daughter-in-law came over last evening and hubby raved about the new sauce on the scalloped potatoes. We had a big salad with them for dinner with fresh basil from the garden made into a pesto dressing, oil free of course.
I've tried that cauliflower sauce over pasta but now I must try it in enchiladas! Looks YUM! Whenever I make enchiladas the husband likes a bed of crunchy lettuce, tomatoes and onions under his. Also, my son has to have chips with his and eats his enchiladas almost like a dip lol. Great recipe thanks for sharing!!

Just made my first ever Jill McKeever recipe. This Black Bean Enchiladas recipe is AWESOME! Unfortunately, I thought I heard you say 4 teaspoons of chipotle chili powder. I knew something was wrong when my cauliflower sauce was orange and not creamy white like yours. Oh well, the good news is that I like spicy food and I'm going to enjoy eating both trays (flour and corn) of enchilada.
Jill, I just made this cauliflower sauce for dinner tonight. I added in a cup of mushrooms I’d sautéed a couple days ago (in veg broth) and served it over whole grain pasta, with green beans from the garden on the side. I also doubled the garlic, as we love garlic. This dinner was AMAZING! Amy husband and I both loved it, and I had a real hard time stopping when I was 80% full. When I told him it was basically cauliflower and cashews with seasoning, my husband was shocked! I’m gonna also try it over steamed broccoli, and come up with a couple other ways to try it out. This stuff is SOOO good! cooking has never been so exciting for me as it is since I found your channel. And my husband bought me an instant pot for Christmas (2018, 5 days ago) and I’ve already cooked several awesome things in it, and your O M Gee instant pot book arrived in the mail today, so we’re gonna be adventuring for quite some time here at our household. I just want to say thank you. I’ve never had much fun cooking until now, and your recipes are all comfort food, and easy and fun to make. I don’t think I’ve ever eaten this well! (Until now!)

Well.... I've made this recipe. I did everything that you said I even dropped a lot of it on the floor (you only did a little so a lot would even be more delicious). I only needed to change a couple of things. 1 cup of water for all that cauliflower wasn't enough. Maybe cauliflower in the Netherlands are way dryer? So I edit 2 cups. I don't have an vitamix but a Dutch brand high speed blender. Well let me tell ya.... that's some dangerous hot lava. I almost got scared for life. I needed to open the lid a couple of times to stir the mixture, everyime a bubble was trying to attack me. A bubble hot cauliflower lava. When I finaly finished and put everything in the oven turned around..... Well.... my kitchen got completely destroyed. Cauliflowersauce. Cauliflowersauce everywhere. Cool sidenote I needed exactly the 20 minute oven time to clean this mess up. After all the battle I was proud and gave my husband a portion. I loved the tasted alot actually. My husband "liked" it but thought it was pretty heavy and didn't eat it all. After all that battle I had to go through....

I made this and loved it, even though I substituted regular nuts for cashews and substituted 3 russet potatoes for one can of beans because I only had one can of beans, it tasted so good! Will make it better next time, and I only added one heaping teaspoon of cayenne and that made me and my parents start sweating after quickly eating the enchiladas! Yay guilt free enchiladas, thanks for taking the time to make this 👌

I watched a few of Chef Del's videos and was amazed that his favorite skillet was cast iron!!!! I have several that I thought I wouldn't use again due to no oils in cooking. WOW, WOW, WOW!!! I love this cheese sauce. I added nutritional yeast and extra garlic. I am eating it with a vegan lettuce burrito. I will be using it for chip and dip, and anything else that calls for cheese!!!!
I made this again, second time in two weeks, it was so good! I did one small alteration this time, though. I had roasted three poblano peppers , so I whizzed them in with the cauliflower and cashew cream. I think it will be amazing, although your recipe is great as is.

Made these over the weekend ! Luv them! Only change I made was add 1/3 cup of nooch to cheese sauce. These will be a weekly menu item for us. It warmed up beautifully for breakfast. Just 45 seconds in the microwave. Thank you.

These are wonderful. We had them tonight. I didn't have any chipotle chili powder, so I used some ancho with a smoked African spice I have to get some smoky hotness.. Here is a question. If I am using black beans I cook in my ipot, am I making 6.5 cups of black beans? I am just going by the measurements.. Two 27 ounce cans make 52 oz which translates to 6.5 cups. is that right? That seems like a ton of beans, but if that is right I will do eet!!

Hi Jill Mary here. Little background for you my sister is an international long haul truck driver. I cook WFPB meals for her and freeze them so she doesn’t have to eat the extremely unhealthy greasy artery clogging food they serve at truck stops. I live in Alberta Canada and she drives all the way to the southern states and back. (Chances are you have purchased some of the food that she has delivered to supermarkets throughout the USA.) So about once a month I have lots of meals cooked up for her and frozen that she can take with her. So my question to you is how well do these freeze. I have eaten them they’re amazing, but they didn’t make it to the freezer when I made them last time LOL. So I’m wondering before I make them again if you’ve tried freezing them. TIA Thank you so much for sharing all your wonderful recipes. We have been WFPB-no oil for two Years now and plan on never returning to our old ways. Many of your recipes have become our family favorites 😊
Finally got around to making these...finally got around to no oil...I did use no chicken better than bullion in the cauliflower sauce...added mushrooms and onions pan fried with liquid smoke...stuffed those in the enchiladas as well...so delicious...
I made some smashed black beans w peas with my homemade New Mexico chili sauce. I had it over rice with some corn tortillas. yesterday. It was lush. Took me ages to seed all those chili pods. Here's me thinking it would only take an hour from start to finish. It took me 3 hours by myself having to keep stopping to rest. I froze some in the freezer but still have a bag of pods left. Making more black beans tomorrow.
Made them again already and I didn’t have black beans so I used one can kidney beans and one can pigeon peas (it was all we had) and I also had no cauliflower so in place I used mixed frozen veggies - peas, corn, carrots, green beans), and did everything else like the recipe and it was still amazing. You rule!!!
You mentioned chili powder in with the black bean mixture, but it's not listed on the ingredients. ???? Just enough to taste? I don't like things really spicy but am trying it, due to hearing that it's good for your heart.

I made this again, second time in two weeks, it was so good! I did one small alteration this time, though. I had roasted three poblano peppers , so I whizzed them in with the cauliflower and cashew cream. I think it will be amazing, although your recipe is great as is.

Made these over the weekend ! Luv them! Only change I made was add 1/3 cup of nooch to cheese sauce. These will be a weekly menu item for us. It warmed up beautifully for breakfast. Just 45 seconds in the microwave. Thank you.

These are wonderful. We had them tonight. I didn't have any chipotle chili powder, so I used some ancho with a smoked African spice I have to get some smoky hotness.. My husband added some tomatillo salsa to his. I may have over blended the beans, but still a definite keeper. Thanks so much, Jill. :)

Here is a question. If I am using black beans I cook in my ipot, am I making 6.5 cups of black beans? I am just going by the measurements.. Two 27 ounce cans make 52 oz which translates to 6.5 cups. is that right? That seems like a ton of beans, but if that is right I will do eet!!
+Iwonka K. If you're feeding a 4 folks with the plan for leftovers, that should cover the bottom of the dish, fill the tortillas and cover them.

Hi Jill Mary here. Little background for you my sister is an international long haul truck driver. I cook WFPB meals for her and freeze them so she doesn’t have to eat the extremely unhealthy greasy artery clogging food they serve at truck stops. I live in Alberta Canada and she drives all the way to the southern states and back. (Chances are you have purchased some of the food that she has delivered to supermarkets throughout the USA.) So about once a month I have lots of meals cooked up for her and frozen that she can take with her. So my question to you is how well do these freeze. I have eaten them they’re amazing, but they didn’t make it to the freezer when I made them last time LOL. So I’m wondering before I make them again if you’ve tried freezing them. TIA

Cooking just for myself can be challenging. I now I can freeze leftovers, but it's still kinda hard. I'll get used to it.
Finally got around to making these...finally got around to no oil...I did use no chicken better than bullion in the cauliflower sauce...added mushrooms and onions pan fried with liquid smoke...stuffed those in the enchiladas as well...so delicious...

I made some smashed black beans w peas with my homemade New Mexico chili sauce. I had it over rice with some corn tortillas. yesterday. It was lush. Took me ages to seed all those chili pods. Here's me thinking it would only take an hour from start to finish. It took me 3 hours by myself having to keep stopping to rest. I froze some in the freezer but still have a bag of pods left. Making more black beans tomorrow.

Made them again already and I didn’t have black beans so I used one can kidney beans and one can pigeon peas (it was all we had) and I also had no cauliflower so in place I used mixed frozen veggies - peas, corn, carrots, green beans), and did everything else like the recipe and it was still amazing. You rule!!!

You mentioned chili powder in with the black bean mixture, but it's not listed on the ingredients. ???? Just enough to taste? I don't like things really spicy but am trying it, due to hearing that it's good for your heart.
