Brown rice takes like 22-25 minutes to cook - about the same time as frozen chicken breast or dried black beans.
And don't stir in the cream of mushroom soup before pressure cooking. Just layer it on top without stirring to avoid getting a burn notice. Stir it in after cooking.

Looks like a good recipe. FYI, there’s generally more arsenic in brown rice than there is in white rice. If you look it up, you’ll see I’m right.

Next time you have fresh Broccoli, slice the stem in thin pieces about a nickel thickness. Saute them in a little butter until soft..season as you like. They taste like artichokes! I like it better than the florets.

Switch out coconut milk for liquid, add s&b curry paste and you have coconut curry. And less sodium. You can also use firm tofu. Or pork. I clean out vegies in my refrigerator.

My BIL keeps kosher, so travels with his own small instapot. He can cook whatever he wants without worry in our non-kosher household. We also have a small countertop fridge for his use when he visits. And a double sink, so he chooses the side he wants to use. It works well. Instapot is amazing. Personally, I put the slow cookers and the rice cooker in the garage for whoever wants one. Saves a lot of space.

I usually use an induction burner to cook most things in my van. However, I have a 3-quart no-name electric pressure cooker for anything that takes more than a few minutes to cook. It uses around 600 watts until it reaches pressure but then cycles on for only short bursts while it is at pressure. The pressure cooker is very energy-saving on solar.

My recipe for cheesy rice, quick and easy. A can of cheddar cheese soup, then fill the can up to the top with rice, dump that in, then fill the can up to the top with water, dump it in and stir it up. My crockpot/rice cooker has 1 button to hit. I hit that button(white rice) and a few minutes later I'm eating.

I would absolutely do that! The recipe goes back to WWII and I grew up on it, as did my kids. I added green chile and corn tortillas but, as you say, it is a flexible recipe. I would also do this in a baking pan or Dutch oven (over the fire gives you a really good crust at the bottom as a fun addition!). I would put the chicken in the bottom of the pan, whole or chopped and pour the rice around the whole chicken or over chopped chicken. Liquid came last to make sure all of the rice cooks in liquid. I am stumbling over the instant pot. I love them and I hear (and you just said) that they use a small amount of electricity. But they are 1800 & 1500W kitchen appliances. 9 minutes cooking and by Watts do they mean xWatts per hour? This is where I am struggling. Thanks Bob! If you can get your hands on a 1950s or 60s edition of the red and white plaid cookbook, it was not written with new appliances in existence and it has a lot of “New “ casserole and 1 pot recipes that were entering the American kitchen at that time. So many recipes can be over a fire or off grid. And I typed this publicly before I found me another copy. Uh oh.

Agreed. Amy’s soups are delicious, and so much healthier. At the very least, if using Campbell’s - get the low sodium & use a low-sodium chicken stock or bone broth because that’s a lot of salt in this recipe (including sodium count for cheddar cheese and added table salt).

Lots of flavor in it, but super high in sodium and other "stuff." However, probably hard on the road to substitute. I also like to make a big pot of something and eat for several days. You did a superb job of doing a cooking show!

Eating life in the van is a totally different world. I mainly resort to frozen food and a microwave. It’s just so small in there and I like to keep things clean. It’s not very healthy, but you’re definitely right.

We love our instant pot pro 10 in 1. We are a family of 4 so we got the 8 quart. The inner pot of ours can also go on the stove. ❤

I have 2 instant pots..a 3qt and a 6 qt. We use the 3 qt 4 or 5 times a week, I cook a lot from frozen. The 6 qt has the air fryer lid, we do use it quite a bit, but I use it mostly for whole frozen chickens, roast, ribs, corn beef stuff like that and use it 4-6 times a month. I love to cook, but don't always like the time considerations. I also cook a lot of egg and cake bites in my 6 qt. A lot of pot in pot in my 3qt...I do have a really good 1.5 qt rice pot, but nothing, absolutely nothing cooks yellow rice and chicken like an instant pot. Very nice video...(fyi, we have 860ah @24v and 2200 watts solar. I have and induction/propane cooktop and a rv micro/convection oven)..It's nice to see someone else doing pretty much what we do.

I've made several mistakes with my 3 qt instant pot. LOL. Like forgetting to put the rubber gasket ring back into the lid. It won't seal without it! I also over-filled past the max line, and the food leaked out. But one smart thing I do is I remove the bowl from the appliance before mixing in the additional ingredients after the cook is through, just to save messing up the appliance. It's a great cooker! I like it, but I prefer my rice cooker on the road as it's a smaller appliance, draws much less power, and very flexible in what you can cook--much more than just rice!

It's so good to see Bob going beyond the microwave. I use the 6.5qt Ninja Foodi pressure cooker / air fryer. On solar I have 600 watts on the roof. So on a sunny day it only takes down the battery about 15% to cook the very best spicy buffalo wings from freezer to plate in 30 minutes. I pressure cook them for 5 to 6 minutes, drain and dry them, then air fry them for 20 minutes. I then melt butter, add Louisiana hot sauce, and then dump the air fried chicken in and shake it all over. The it's ready to hit the plate. You can make this as hot as you want with your hot sauce.
Wow, Bob is really cooking. Now we enter a great new era. He's going to start eating good.

This is a healthy, and very quick pantry meal. Bagged rice, yes, canned mushroom soup, yes, replace the chicken with canned chicken and frozen veg with canned veg - spinach and carrots maybe. Would only take a few minutes because ingredients are already cooked, except for the rice. I'd soak the brown rice ahead of time to cut cooking time. So if I use the chicken broth also, that's like five? cans plus the rice and the cheese and the onion. That would easily feed my husband and i dinner, and possibly our lunches, also for two days. Or more. Anybody who wants to stretch the meal could soak beans ahead and add the canned items last. For protein and fiber. If there are a few leftovers, they can be cooked with eggs for breakfast on the third day. If on the road without fanciness, place leftovers in a small cooler with some ice to keep it tasty and safe. Budget and time friendly healthy meal, Thanks, Bob.

I love instapot cooking. A no name brand works just as well. For one to three oeople the 3 quart is a fine option. Perfect rice every time. Meat cooks fast and can cook noodle/ ramen and steam dumplings, veg or fish and shrimp at the same time with a steamer basket. It replaced a gaggle of cooking options. Can even tiast bread or make a grilled cheese or cheeseburger in the thing. I love it!

I picked up a free-at-the-curb Instant Pot and I love it. I would buy one new with what I know now. For cooking rice, tho, I like to cook the rice in a bowl on a steaming rack over water in the instant pot. 12 min for brown rice and then let it sit closed for 12 min. Then I would take the rice out and then do the other stuff and put it all together as I wish. I don't do canned mushroom soup as I have allergies to that thing. Maybe kale "rissotto" with brown rice and bulk pork sausage (nitrate free)

My instapot replaced my crock pot and rice cooker, plus it adds pressure cooking. Love the saute feature.
