With the weather changing, I just got around to making this and man, it was phenomenal. Followed the recipe to a T, but cut the sugar down from 1/3 to 1/4 cup. Phenomenal recipe. Very well done.

Your recipes are AMAZING! The one thing I love about chili on the egg is, about 20 minutes before it's ready to serve, I pour some cornbread batter right on top of the chili and bake it to perfection! Seems like the cornbread goes too quickly when I do that, but it's my favorite!

Awesome chili Malcolm! We had a fundraiser at work and it was based on a chili cook off. I was one of ten people to enter the competition. Using your instructions here, I won by a landslide! A week later, people are still asking me how I made the chili. I directed everyone to this video. My next task is to make smoked shrimp and grits. Yum!
My work was closed due to the weather. In San Antonio that meant there was a bit of ice. Cooked up the chuck roast on the egg the night before and the rest on my deck in the freezing cold the next morning for lunch time chili. Malcolm, that is some incredible chili. I made this over the weekend. Didn't stray too much from the recipe. I knew the people I would be serving are not a huge fan of things very spicy, so I omitted some spice and substituted more fresh roasted red and green peppers. It was the best chili I have ever had. I never would have thought to smoke a chuck roast for the meat. I am doing that every single time I make my chili now. Thanks for posting this!!!!
I just made this chili with a couple minor changes, and wow! This recipe is amazing! Added ground venison and left over chopped up beef ribs instead of smoked chuck. Malcom, you’re truly a master. I love learning from you and replicating your cooks. Thank you!

I smoked a brisket this weekend. Its Monday night. I used about 3 lbs of brisket, 1 lb of 80/20 ground beef, onion, red bell, jalapeño, serrano, tomatoes, garlic, corn and black and kidney beans. Just did this on my Traeger. So good. The chuck roast is something I never would have thought of. I did cut the heat back for the kids, still had great flavor.

I want too add for all the charcoal guys out there I started using B&B hardwood briquettes that they can get supper hot when needed and also keep great temps for long cooks! I’m not having to refuel anymore..

Malcom I made this recipe on my Akorn on the weekend. Used some leftover prime rib as well as a piece of outside round which I partially cooked in my pressure cooker to about 160 deg. Instead of smoking beef in advance because i wasn’t prepared ahead enough, I threw couple hickory n pecan chunks on the Akorn for some smoke flavour during the cook which lasted about 4 hours at 300. Man that might’ve been the best chilli I’ve ever had! It’s going to be my go to recipe from now on. Awesome!
