The Terlingua World Championship Chili Cook-Off doesn't allow any fillers (beans, rice, potatoes, etc.), but tomato products are allowed. The hardcore "purists" are meat, chiles, and spices only, but I think you'll find most Texans don't have an issue with beans and/or tomatoes. Happy Trails..!

Thank you for this recipe it was so awesome. I googled Chili without Tomatoes & Beans. I Cannot have either one of these, due to my Kidneys. Both Tomatoes & Beans have a lot of potassium that I can not have. This texas chili was perfect, also was amazingly delicious. Loved the different kinds of peppers. I will definitely be making this again.

I make several kinds of chili from Cincinnati style to ground beef and bean to Texas Red. The Texans I know might make it with beans, tomato and store bought chili powder, but they also make "Texas Red" like this. I've found it's easier to toast the chiles, soak in hot water and then remove the stems and scrape out the seeds. The kind of chiles are up to you but I have some dried Morita Chipotles instead of canned chipotle. My other difference is I buy cumin seeds, toast them and grind in a spice grinder - more flavorful than pre ground. Also, I heat to a boil then put in the oven for 2-3 hours at 325. I wait until the end to add the masa harina slurry. I would advise against using many chipotle and avoid chile d'arbol to avoid making it too hot. You can always add hot sauce to your bowl.
6:10 Nicole, ya know I trust ya, BUT; with all those chilis + the chipotle in Adobe sauce alone, you WILL NOT tell me this will be like 🔥 lava! W-O-W!!!!! I used the latter in a pot of my smoked chuck roast chili & no one could eat it, it was THAT spicy! And I used only 25% of a small can. God bless you; load up on the Tums! 🔥🔥🔥🔥🔥

After working in my wife's Mexican restaurant restaurant, yes, cooking ancho or guajillo chili's is great, but it's a pain for me now. I have to order them from Amazon because none of the stores in my town carry them, so I bought both ancho and guajillo chili powder instead. I've mixed that with tomato sauce before, but just isn't the same. What if I used tomato paste instead, or just make a paste with water or beef broth?

Im a Texan and that's not a Chilli but everyone cook differently. That meat you put in there you should have lightly floured it and than browned it and made you a stew. But great video 😊
Fighting over what constitutes "true chili" is pretty silly. If it's good I like it. If it's bad I add pepper sauce, cheese, etc., and then I like it. Every person has their opinion and every recipe depends on what you can afford and what's in the pantry. This recipe looks tasty. Let's save our arguing over that "beer" she's drinking. LOL
Pro tip: You can alternatively use unsalted corn chips instead of Masa Harina. It adds an extra layer of flavor. I also use two tablespoons of Roux (peanut butter colored) before adding the beef stock.
This is like a stew without all the great taters and veggies, especially if you're not going to use tomatoes or beans. It's just a meat sauce to me then, one I'd like to pour over some mashed potatoes or rice.
No such thing as chili without beans or tomatoes!! Not a fan of Texas (on almost anything). Chili must be HOT with Beans!! Other than that, love you’re cooking!
