Well, since Lalo died and Gus got back to regular business, he probably doesn´t have that much to do. Their operation is tight, and most of the grunt work is handled by the various lower level dealers in the organization.

Mike probably does jobs for Saul not only as a side hustle but it also helps him keep tabs on the criminal community so he's more aware of any potential issues their drug business may have. Plus Saul does all the lawyer work for Gus so it makes sense Mike and Saul would continue to work closely with each other
It's just a case of having to write around some inconsistencies. In Season 2 of BB, when this scene takes place, Mike didn't exist as a character until the finale so they didnt even write him as Gus's top man. It wasn't until Season 3 he was revealed as such. Even then, after the situation with Lalo, Gus probably saw Saul as an asset whenever they would need a lawyer. It's not outside of the realm of possibility that Mike occasionally worked as a PI for Saul to maintain connections. You even see in this scene that Gus comes into the conversation when they talk about Walt.
after watching this scene im now fully convinced the entire breaking bad/better call saul universe was never walts story it was all jimmy's. every single thing is about jimmy

He was stacking for his family at this point. Gus side was peaceful so Saul was most likely his side hustle.
