I use a Makita plane blade for scraping. It is solid, easy to hold and you don’t get the chatter of a Stanley blade. It also lasts a long time, being high carbon steel.
Are the coloured lines on the body the joint lines of the wood? I found when doing anything more than a 2 piece body I was better off applying a veneer and then staining that or painting the body. I love the contrast of the binding against the black of the burst.
I haven't ever thought that those small pen brushes could actually be in somewhat same category as rattle cans. When doing general woodworking, I usually do everything with brushes and rollers since I have thought that spraying would require enermous compressors and other equipment, but it actually seems that this very smallish gun is covering surfaces faster than I would have thought. Might be worrth of a try since investment is not astronomical.

Sure don’t blame you for using the air brush! Way too cool of a guitar to risk anything from a spray can!

I genuinely can’t recommend airbrushes enough for this sort of work.
