Budget Friendly Beef Enchiladas!

I bought over a pound of beef stew meat for 6 bucks and turned it into 4 different Mystic Meals! Once I made the Chili Colorado, I had burritos the first night, then the enchiladas (which made 2 portions) then I had the rest over some cheese & scallion grits, with breakfast in mind with the leftover grits.
