  • Turn the regular poha greener and flavourful with the addition of coriander, mint leaves and green peas.
    GREEN MASALA POHA
    Ingredients
    1½ cups pressed rice (poha)
    1 tsp sugar
    1 cup fresh coriander leaves
    ½ cup fresh mint leaves
    1 green chilli
    3-4 garlic cloves
    1 tsp cumin seeds
    1 tbsp lemon juice
    Salt to taste
    ¼ cup scraped fresh coconut
    2 tbsps oil
    4-5 cashew nuts, halved
    1 tsp mustard seeds
    1 medium onion, chopped
    ¼ cup boiled green peas
    Lemon wedge for garnish
    Fresh coriander sprig for garnish
    Method
    1. Wash the pressed rice thoroughly with sufficient water. Drain out the water and add sugar, mix and set aside for 5-10 minutes.
    2. To make the chutney, put coriander leaves in a blender jar. Add mint leaves, break the green chilli and add along with garlic cloves, cumin seeds, lemon juice, salt, coconut and ¼ cup water and blend to a fine paste.
    3. Heat oil in a non-stick pan, add the cashew nuts and fry till golden brown. Drain and set aside.
    4. Add mustard seeds in the oil remaining in the pan. Add onion and sauté till golden. Add the blended chutney and sauté for 1-2 minutes.
    5. Add the soaked pressed rice and mix well. Add salt and sprinkle some water, mix, cover and cook for 2-3 minutes.
    6. Add green peas and fried cashew nuts and mix well. Switch the heat off and serve hot garnished with lemon wedge and coriander sprig.
