The challenge with these options are either incomplete profile of protein or having high carbs with such protein sources. Bottom line we need to be mindful and aware of protein sources and quantity of the same. Sprouts are good options.

Oats with honey. -Lunch millets instead of rice half spoon ghee, bowl of any soaked and cooked lentil or channa, big bowl of healthy tempered cooked vegetable like bhindi, palak saag or Karela or broccoli, bowl of yogurt -snack of nuts and 2 dates -Dinner bowl of any fresh soup, sautéed paneer with 2 ( preferably gluten-free)roti or 2 dosa with veggie stew. -drink 2 liters warm water minimum during day not during meals.

Rice roti is bad because it's starch is not removed by boiling, rice if you don't want it to eat it as rice than do fermentation and make dosa and imli i.e. tartaric acid with sambar to digest the starch of rice.

Few things has been discussed here i can completely resonate as when i started watching Satvic movement/fit tuber i understood true food philosophy.. If possible Pls bring Vivek (fituber) and Satvic Movement founder Subah/Harsh Jain as i saw himeesh ji pic when i joined Satvic workshops founder Subah jain shown one pic from delhi naturopathy where himeesh ji there as well.. My hubby has that ...u can't have biryani without meat n me being vegetarian I tell him I won't give up biryani so replace meat with potato n that does work...even at home my mom makes without garlic dal for me or without sugar one for me n with for family n same was with granny n mother different cooking as 1 has garlic always n mom never allowed onion
One very important point to consider for vegetarians is incomplete and complete protein. Most veg foods like dals have incomplete protein, so if eaten alone it will change into fat in the body. Dals, beans, peas, etc need to be eaten with cereals like rice, wheat, millets etc. Only then you get the protein. Otherwise your body makes sugar, fat and urea from incomplete proteins. Eating dal and salad without rice or roti is not good.

Carbs are important in vegetarian diet as carbs such as rice and wheat are basically grasses, and ruminants specially cow and buffalo eat lits if grasses to keep themselves healthy, and as humans are not ruminants but we copy them we should have carbs uf we are following vegetarian diet, but they n vegetarian diets some spuces are very important, such as Asotefida hing, as hing is daid to have chedan quality as per ayurveda it destroys the fibre if carb further hence making it easier for nin ruminants to digest those fibers
