    My roommate used to ferment blackberry and dandelion wine in his bedroom, and the smell was so unique. Well worth it for the end product.

      My grandfather who was English born 1898 used to make dandelion wine with the flowers, parsnip wine and damson plum wine. He aged it in a large vat behind the wood cookstove at first with a piece of toast sprinkled with yeast on top then covered with a clean dish towel.

    My first wine that I made was from apples from our trees. I wasn't allowed alcohol unless I made it myself (I was 15)
    I made it from a recipe from a book from a garage sale.
    I shared it at Christmas and it was really good considering I only used ingredients we already had in the house. It came out very nice and clear and now I'm all grown up and an alcoholic 🙃

    Have got my most recent batch of strawberry wine aging in the fridge RN. I did my last one beneath the cabinet by accident. OMG that was delicious! Strawberries and plums make the tastiest wines! ✨
    *Edit: To clarify: I START them beneath the cabinet, and move to the fridge to age more slowly.

      Plum is so good too. I made some from cherry plums and some from Italian plums. Both were great but the cherry plum wine was tops. It was so strong.😊

      Fermenting in the fridge?! Never heard of that. 😂 we do a similar process as this but just put a hose going from the fermenting jug to another jug with water and everything sealed off. Throw in the hot box (a wooden box) outside and wait about two months. Strain it through cheesecloth several times and you got some wine that’ll put you on your a$$ in just a couple shots.

      Could you elaborate a little bit on the different yeasts? I want to try to make mead and so far from this channel i know there are 3 types. Have u tried them all and whats the difference? Thanks!

      @@MrWhateverthenameis the difference is usually alcohol tolerance, the first yeast I used was lalvin d-47 yeast which has a tolerance of 14%, it took a month on every batch to finish at maximum sugar for that 14%, where as the ec-1118 can go up to 18% , and I noticed it ferments so much faster and has been a lot healthier ferment, and the k1-v116 is similar to the ec-1118. This last ferment with the ec-1118 was done at 18% alcohol in 2 weeks, but it’s always cloudier than the d-47

      I used to make alcohol in school with fruits and juice, shit was retarded but you could get the slightest buzz, we mainly did it for the sole purpose of the “mission” itself

    A full on South East Louisiana Cajun man I knew in the 70s and early 80s made the best watermelon wine you could ever imagine and it was strong. Good stuff!

    Rotten fruit doesn't automatically make alcohol, the only reason it works are yreast spores that are all around floating in our air (tho in the video they add a strong lab one) BUT, yeast is facultative anaerob, meaning it's normal life cycle doesn't involve making alcohol, only WITHOUT air it resorts to another way to break down glucose down which involves producing ethanol.
    When fruit rotts only the parts of the fruit on the INSIDE that no air is getting to may produce very, very little alcohol but enough to make animals a bit drunk.
    There's an exception when A LOT of sugar is present called the Crabtree effect iirc but to make it reliable like in the video you need a fermentation cap which lets CO² (pressure) out BUT lets no oxygen (air) in. That's the glass bubble thing the bottle is sealed with.
    DON'T ever close a fermentation container hermetically, there can be an enormous pressure that builds up (1 liter liquid can produce 50 liter of CO²)
    and it can easily explode.
    On the other hand no air at all should get inside.
    Those fermentation caps do that well. Instead of a fancy glass one you can as well seal it but have a rubber tube leading out and put the end in the small water cup or something

    I adopted an abandoned 40 gallon Car Boy about 47 years ago while in college. I made a batch of wine made from the cheapest grape juice from Walmart. It developed an alcohol content of about 18 % by volume. Really tasty.

      Idk how much his kits are, but if you’re just getting started go cheap. Go to your hardware store and buy yourself a food grade 5 gal bucket, $5. Some clear plastic tubing, $3, and some sugar/fruit. Only thing that will be hard to find in person and should buy online is your yeast and hydrometer.
      You drill a hole in the bucket lid the diameter of the tubing (1/4” or so tubing) and run the tube from the lid to a cup of water.

    Ive only made wine once, I was 14. I stole a carboy, and yeast from moms friend, googled how to make wine. I stole a bottle of cranberry juice from mom, added some sugar to the jug of, juice, dumped the yeast in and waited a week and half while it bubbled.
    It ended up sweet and kinda fizzy I think. It definitely had alcohol in it even if all the sugar wasnt converted.

    I did an independent research task in year 9 science where I attempted to discover how much ethanol can be produced from 2, 4, 6 and 8 grams of yeast in a glucose solution and boy was that my favourite science experiment I've ever done.

    I started on my first mead ever using the Craft a Brew Mead kit, and I'm so excited. I'm officially now as of this writing on day 21, and everything is going smooth. Can't wait to try out my first batch. Went with the highly recommended Orange Blossom Honey this time around, and can't wait to gain more experience with this and start experimenting a bit like you showcase here.

    The best mead i ever made was sour cherry. Got 10 kilos of cherries, couple jars of honey - 20 litre batch. Excellent result. Mead always needs some citric or malic acid, really brings the flavour to the fore. Either added or some sour fruits.

    We have that in Romania, it's called "Capsunata/Căpșunată" and we have almost from every fruit, the most known one is "vișinată/cireșată" from cherrys🍒
    It's a very sweet alcoholic drink

    My buddys dad used to grow a TON of strawberries. We would smoke up and go pick them when they were ready... He would make strawberry wine. Then he made shine from the strawberry wine.... 180 proof, he would proof it down to 130. His still was high tech for the time. Heat was electricity controlled by a box. No idea what it was made with as I was more into drinking than distilling ar the time... Started making shine for myself at home about 10 years later.. Haven't drank,or made booze in 9 years

    I don’t drink anymore but Mead is my champagne, it’s what we drink on “Special” occasions, surrounded by friends and celebrating life. This looks absolutely delicious.

    You can use sugar, like 5kg sugar in a 50L plastic barrel full of fruits sealed perfectly, when you open it after a month and it's foaming, you might also see some tiny bugs in it, that means it's perfect, you boil it in a big copper pot , attach a pipe on the pot and make sure the pipe is cooled constantly preferably with cold water, the steam that comes out of the pipe will turn in to vodka , make sure to put cotton and coal at the end of the pipe where the vodka comes out to filter the ethanol and have nice pure homemade killer vodka (60-80° Volume depends on the amount of water and sugar and type of fruit you add) 👍🙋🏻‍♂️

    Last time I brewed something, i used a very fast yeast with a high alcohol tolerance, so it would get wine up to 18%. I've used Red Star before, the Premiere Cuvee years ago, and Premiere Blanc more recently. But then i did some experimentation with small batch hard soda, and tried Lalvin EC-1118 and K1-V1116. The EC is a workhorse, very reliable and clean. But the K1V is super fast and vigorous. I noticed you use that yeast in this video. You have to give it a lot of headway and watch your airlock, because it'll spit foam off you're not careful. Both the Lalvins finish very clean very fast and don't leave a strong yeasty aroma as I recall. Both tested high, 16+, once up near 18%.
    Years ago I brewed beer, but lost interest in it. I never made a mead, though i wanted to. I really wanted to try doing something with Maple syrup, but I've heard you can't do it with straight maple, you have to use some honey.
    I'm a fan of Lois McMaster Bujold, and she had a brew called Dendarii Mountain Maple Mead in some of her stories, called the "most vicious attack beverage known to man." I always wanted to accept that challenge... But I came down with diabetes, and that ended the brewing.

    Aint no way it naturally turned that color from that few strawberries. Ive made fruit wines and I've made wine with strawberry. Strawberries dont leech that amount of red into the liquid. That orange color we saw during the 1st siphon was its natural color, there was either a swap at some point with a different ferment and you edited it, or you added food coloring which is crazy. Strawberry melomel is not red and something so bright orange is not going to completely change hue between 1st siphon and bottling.
    Dont try to fool people by making things "more appealing" for your algorithm, be realistic so people have realsitic expectations for their own projects.

      100% accurate. In fact the mead would be a brownish color unless micro filtered. Then there could be a redish tint but it's more of a muddy red.

      @@diligentsun1154 temperature is absoultely relevant in developing a smoother product, unfortunately its not an easy answer, typical room temperatures are too high for the highest quality possible, and fridge temperatures are too cold for the yeast to properly do their job. They will die. We had a regulator device with a temperature-sensing wire that you slotted inside an old fridge and we used that to regulate the temperature for wine brews. It bypassed the fridge's controls and provided power and wattage based om what we set it to. But if you have any dark and slightly colder place you can store it thats ideal.
      For the head space question, it really depends on what youre making and how much solid matter is involved, iirc 80-85% head space is a good rule of thumb because all of the gas being created will get somewhat trapped in the mash and cause it to expand before the bubbles can escape the airlock. Too much head space can increase the risk of infection, and too little can cause you to lose liquid through the cap/airlock
      For your other questions, its honestly too much for a youtube comment. There are a ton of detailed guides that go more into depth than these shorts on youtube, i recommend that. If you're a bit more old school and live in a decent sized city though, you probably have a brew shop that isnt too far away and the people in they are usually extremely friendly to helping newcomers get started

What the COMPANIES are doing, is using special yeasts who transform more sugars to alcohol, which means not need for them to use the perfect grape to make the wine they desire.     We made infused met in our senior bio class. At the start of the year me and a few friends were tasked to make it via a recipe. We wanted to earn some extra points for this class and asked for a task. Well our teacher was rly cool and said to make this in the student kitchen while they watch a documentary. Lemme tell you it was a rly funny project bc me and my friends nearly messed up a couple of times. We learned a lot about fermentation as we kept looking after it. Plus fermentation cycles were also smt we had to learn anyways and this made it fun. A few days before we went into exam preparations we tested the wine in class and altho a little mild it was still pretty tasty. 10/10 great time and got good points
    Edit: it ofc fermented a few months before testing. 😅

      If you don’t understand the fundamentals don’t try it. Do your research first and understand how contamination works and what to expect at different stages. Brewing is an art and takes time and technique to master but is a lot of fun.

      It’s drinkable after a few weeks to a month.. as soon as the fermentation stops and all the sugar is gone it’s usually safe, I usually let my mead age (after fermentation) 2 months, just cause I can’t wait, best flavor is after a year, if it takes more than a month to ferment your yeast is lacking nutrients, or is stalled

      Sanitizer. The first step in any home brew is to make up a batch of sanitizing solution and soak everything that will come in contact with the brew-fermenters, tubing, siphon, airlock, etc. You can purchase brewing sanitizer in powder or liquid form.

    I remember my old man made wine for years that friends and family always tried to buy.. So for a science fair project he made wine with me. All that to say I was fairly familiar with what happens as yeast consumes sugar and kinda farts alcohol. Soo, I'm in fifth-ish grade eating breakfast in the cafeteria and I remember opening one of those foil sealed apple juices. Instead of preparing myself for a big drink of cold, crisp apple juice, I should have been preparing for a solid pull of Apple shine! It was much stronger than any taste of wine I had tried, in hindsight it was more like an Apple moonshine or vodka. It was actually pretty good from what I remember. This was in the '90s so instead of rushing me to the hospital with a team of attorneys and somebody holding my hand, they told me toss it in the trash and drink water 🤣 Not sure who else ended up hammered from that batch of juice but I'll never forget it. I was living in a big city and am now almost in my 40s.. by the way I made it to state finals with that science experiment! And brought wine to my teachers without word making it to the news or the school board..

    Lalvin is great yeast. Ive made hundreds of batches of wine but never meade. I never knew water was an ingredient in a meade recipe. I dont understand how your airlock is sealed. There is a few questions about this procedure I have but I enjoyed this video! Thanks for posting!

    When I was 13 I bought a few litres of grape juice and added a cup of sugar and half a teaspoon of bread yeast to each bottle. 2 weeks later I had some strong wine that had my friends and I blacked out in the forest throwing up everywhere. Fun times 😂

    For those thinking of making your own alcohol for the first time. Mead (honey-based wine) is the most user-friendly way to go. You can use fruit (melomel), spices (metheglin; try mulling spice for the holidays) and many more. Have fun and happy experimenting.
