    Ingredients for Soya Masala Curry:
    (Tsp- Teaspoon; Tbsp- Tablespoon )
    Soya/Meal Maker chunks- 100 gms (2 US cup measure)
    For Boiling Soya Chunks:
    - Water- 1.5 litres
    - Salt-1 tsp
    Tempering:
    - Cumin seeds- 1 tsp
    - Green Cardamom- 3
    - Cloves-3
    - Cinnamon- 2 pcs
    Spice Powders:
    - Turmeric powder- 1/2 tsp
    - Red Chilli Powder- 1.5 tsp
    - Coriander Powder- 1.5 tsp
    - Garam Masala Powder- 1/4 tsp
    - Kashmiri Chilli Powder- 1 tsp
    - Garam Masala Powder- 1/2 tsp
    - Kasuri Methi powder- 1 tsp
    Fried Onion-Cashew paste: (4 tbsp)
    - Fried onion- 120 gms onion
    - Cashews- 8
    - Water-2-3 tbsp
    Other Ingredients:
    - Whisked curd/yogurt-5 tbsp
    - Ginger Garlic paste- 1.5 tsp
    - Readymade tomato purée-5 tbsp
    - Salt- 1 tsp + a pinch for seasoning
    - Oil- 3-4 tbsp
    Preparation:
    - Boil 1.5 litre water in a pan, add the soya nuggets and 1 tsp salt.
    - Now stir and cook for around 3 mins till it swells up.
    - Remove with a strainer and add these into a bowl. Add cold water.
    - Strain water from the nuggets and shift these to another bowl.
    - Slice the onions and fry on medium heat for around 15 mins till golden.
    - Remove from oil and cool it.
    - Add these and the cashews to a grinder and coarse grind it. Now add
    - 2-3 tbsp water and blend it into a smooth paste.
    - Slice 2 green chillies.
    Process:
    - Heat oil in a kadhai and add the whole garam masala. Now add the cumin seeds & give a stir.
    - Add the ginger garlic paste and fry on low heat for 1-2 mins.
    - Add the tomato purée and a pinch of salt and fry on low heat for 2-3 mins till it’s cooked and oil separates.
    - Now add the boiled soya chunks and mix and fry on high for a minute.
    - Then add Turmeric powder, Red Chilli Powder, Coriander Powder, Garam Masala Powder and salt
    - Mix and fry on medium heat for 2-3 mins till oil separates.
    - Now add the fried onion paste, Whisked curd/yogurt-5 tbsp and green chillies and mix & fry for 3-4 mins on medium heat.
    - Add 250 ml water & cover and cook on low heat for 10 mins till tender & oil separates.
    - Now add the garam masala powder and Kasuri Methi, mix and simmer for 2-3 mins
    - Garnish with chopped coriander leaves
