These are excellent. I make them all the time except with canned salmon (2 cans) because if I had fresh salmon I wouldn’t make it into a salmon cake. I coat them in Panko before frying.
Rich people problems I guess. They have to figure out how to use leftover lobster. Peasants eat all their lobster in one seating because thats the only lobster they’ll eat the entire year 🤣
I love this treatment of salmon. My mom didn't have access to the fresh salmon we do today. She was from New York and was most likely using fresh when she lived there in the '30's and '40's. But in Detroit outer neighborhoods, not so much. She use large cans of salmon and egg as the binder. Umm, not gourmet, but a delicious way to introduce little kids to good food. I adore 👑 Ina because she makes a cooking so easy but yet it appears as if l you've been slaving over a hot stove once served. No slaving here. Everything looks so gourmet but she's just throwing this in and throwing that in and mixing and comes out 😋 and elegant and fit for a king . Her dishes are comforting and tastes fabulous. Oh c’mon. None of the ingredients are expensive in the recipe. Mayo, dijon, worcestershire, tabasco, salt and pepper are pantry items that everyone has. The veges are cheap too. Bell pepper, onions and parsley. The Salmon might be a bit expensive but not that expensive. You can do it. Of course life as a peasant is hard. I’m one too 😄 Good luck.
Leave it to the great Ina to do something I've never seen in an ancient dish. Salmon cakes, croquettes, Patti's what have you have been done by everyone. I've never seen it done with capers, mayo, or dijon mustard. I dont doubt for a second how amazing they must be. Thanks Ina, as always.

I’d leave the celery out because celery contain a lot of water and it makes salmon cakes mushy. Also a little old bay seasoning would knock these out of the park!
Yeah, it's a grand slam right outta the park! While at bat, in the strike zone she swung in more than a little of old bay during the video. 🤣 Yes celery would add moisture raw but when you cook it along side of cups of other veg, for 20 minutes you will find the moisture lift up up and away into a vapor cloud to never never land. Raw celery holding onto moisture and canned salmon isn't what Ina did here. PS. In my crab cakes I do all she does, PLUS add dill pickle. Blotted but full of the wet brine. When you take a bite you get a squirt of dill. My crab cakes aren't mushy. Award winning actually.

I made these and it was a HOME RUN!!! Be sure to follow her given measurements and adhere to all the steps. The first time I made it, I didn't have time to let the mixed ingredients cool in the fridge, so some cakes fell apart. Let me just say, that following everything to the letter my second time making, the patties stayed together. Unreal flavor, guys!!! My boyfriend wants this again this week and he's normally picky. This recipe is worth the time!!
I remember years ago my sister telling one of my nieces not to fill up on after school snacks because she was making salmon croquettes for dinner. My niece was about 6 years old at the time, announced that she didn't want any old "sour bouquets"!
Two things I didn't have was fresh salmon and bell peppers! I used can salmon and no peppers unfortunately, but it still came out great! This recipe is a keeper, it was fluffy, and I really think the mayo had something to do with it! I've made salmon cakes before and did not add mayo and they were not as light! However, these cakes were very airy and so tasty even with the can salmon! I can't even imagine what it would taste with fresh salmon! and also, I didn't deep fried just sauteed and that to me made me really taste the salmon!
Ma'am, very nice recipe, I'm 58 & got sick at 10 yrs old on pink salmon in a can, thank God you didn't use that, I can't eat or even smell it to this day. Thumbs up for using Hellmann's mayo, the best, I like a little fresh dill weed mixed in mine. For viewers, use wild caught salmon & not farm raised, huge difference in flavor as farm raised is tasteless, but less costly, wild caught worth every extra penny

I made this recipe! They are Delicious! I had everything in my pantry, except no bay seasoning, not a staple in Israel, I used canned salmon, its what i had, chili flakes in place of tabasco, but I left some brine in with the capers! Big difference between “Salmon Cakes” versus “Salmon Crochets” I make Salmon Crochets but I love Ina 👍🏽

I think it has to do with the shape. Croquettes are more like a cylinder shape and the cakes are flat. I use the same basic recipe for both.

Just once I want to see someone on the food network use Regular old yellow mustard instead of Dijon Mustard just to see if they survive the shock :)
Yellow mustard is yucky and has a very different taste than Dijon.
YELLOW MUSTARD is fabulous. Use in deviled eggs, potato salad, or on plain old grilled hot dogs or brats.
Yellow mustard is too strong for recipes. Hence Dijon. It has nothing to do with elitism, just too strong a flavor in the wrong direction
