The First KH is pure magic as a child. As a huge final fantasy fan that really gave my childhood imagination a huge jump. It opened up a toy box of characters that was no supposed to be together in my mind.

The whole point of saying that is the gameplay is just that good that we just ignore how convoluted everything that ties it together is. It's meant in a sense that there's something so good about it that the bad is worth overlooking.
Honestly, if it wasn't for the community making great recap vids on the mobile game I don't think I'd have gotten back in KH after 2.5 released. The gap between console games is just too long for me to stay hype and I don't have the attention span for the drip feed of story in the mobile games. I'll still replay KH1 and 2 though. I don't think I'll ever get tired of revisiting the combat and worlds of them.
My biggest issue is that they had too much going on. 1. The Dark Seeker could've been done by KH2. Dragging out Xehanort's plan for another 14 years was unecessary, especially since his goal and descent into darkness wasn't clear (at least to me). 2. The wayfinder trio, Vanitas, Eraqus, Master Xehanort, and Xion were unecessary from a KH2 perspective. Make them new characters unrelated to the DSA and part of a new storyline instead. Of course, Terra, Ventus, and Vanitas would need to be redesigned--well, maybe Vanitas wouldn't, as Ventus and Sora could've formed a bond in the new arc. 3. Lea and Isa joining O13 because they had a female friend who went missing (because everyone has to be in a trio) did nothing for the plot. Simply having them caught in the fray or being made into heartless who happened to have strong hearts and thus inducted into O13 worked fine. It'd also explain why they didn't trust anyone else and Saix got jealous over Axel making new friends. 4. Namine's power of memory manipulation is pretty much only utilized for CoM. That should've been a huge plot point, with Xemnas using her to manipulate O13 and make them forget they were human. 5. Kairi getting the female shonen treatment was awful. I know she's been using the keyblade for less time than her friends, but being a PoH should give her some type of advantage. 6. Lauriam, Xigbar, Ventus, and Elrena are now tied to KHUX instead of the story being tied up, and Ansem's guards have no importance now that they're human. 7. Disney worlds lose their importance after KH2 and feel more like pitstops than important locations. The 7 Hearts storyline in KH3 pales in comparison to their importance in KH1--though why they used Alice instead of Ariel is beyond me. Disney should've had the foresight to make their worlds similar to Lorcana/Mirrorverse. 8. Everyone gets a keyblade. I'll praise the series for sticking to the "only the keyblade can free the heartless" rule, but from a KH1 perspective, Sora does NOT feel special anymore. Perhaps if a keyblade "blesses" a weapon (for instance, Axel's chakrams), then that weapon can also free the heartless. It'd make for a better variety of movesets and weapons. Maybe the keyblade is a rare weapon, so a FEW people have it, but there's no war with so many of them. 9. Xemnas was the nobody of Ansem, who was the heartless of Ansem, who was actually Xehanort (Ansem's assistant), who was actually Terra, who was possessed by Xehanort. We couldn't just make Terra-Nort an original character who had a heartless and a nobody? That was enough going on already. 9. Someone remind me: did "Coded" have any importance? The narrative is too busy, and I feel like even if Disney wasn't involved, they'd STILL have a lot going on! However, with some of these issues, it's nothing a remake or three couldn't fix: KH1 could allow Sora to collect BBS memories, with Vanitas being his shadow; KH2 could do something similar, allowing Sora to recollect his memories of CoM and allow Roxas to recall some of 358/2 Days; and KH3 could show Riku and Sora taking the MoM while Kairi trains. Nix the 7 Hearts stuff, give us backstories on the remaining O13 members (including Vanitas being tortured by Xehanort after he was seperated from Ventus), and it's much better already for me.
You're right about the complicated nature of the lore, but people definitely believe the series is more confusing than it is. If I had to give a good way of going through the games, I'd say this: Go in release order, skip Coded/Re:Coded. Look up the secret reports and read them online if you're interested. DDD is where things actually get a bit convoluted and confusing. Ignore the mobile games until after 3, they are supplemental to it and are really mostly lead-up to 4. All that, and don't take 3 too seriously. That's probably the best way to run through the series without missing the big details and confusing yourself. Fr tho they gaslit the fanbase into thinking you needed the mobile games before 3, nuh uh.

I enjoyed the first time i played kingdom hearts, but something did feel off about the whole experience
