@@jauneetbrun Thank you for the feedback! I will try to remember to convert to Celsius and post it on the screen. 71% of my audience is from the US, and we're still on the Imperial System here. I can remember (when I was a kid) there was a big push to go metric, but it just didn't take. Again, thanks for the feedback and I'll do my best to make those conversions.

Hey Greg, french viewer here, I believe the name name "Au Cheval" is a take on "Steak Haché avec œuf à Cheval", which means Burger patty with egg on a horse. In this case the patty is the horse and the egg the rider. I've been watching you for years but never commented, I love your videos! This one looked really good and fancy!

Awesome video and burger! I was pleasantly surprised the burger that is voted "best" wasted to oner the top of ingredients and flavors. It takes the best quality products and makes some incredible with it.
Had it in Chicago where it draws a crowd even on a weekday afternoon - and it's a wonderful burger, especially if you make it at home without the hassle of the long lines. I remember them making it in large batches, served almost well done like here but it's set off by the bacon and the sunny side up egg. So, on point - great job, thank you!
Isnt dijonnaise a hollandaise with dijon mustard instead of a mayo?
No there's not any egg yolks used or clarified butter used with mayonnaise in hollandaise sauce. The two are totally different except for the bit of lemon juice ( of course the type of mayonnaise used for Dijonaise might have eggs in the recipe just look at the label). Just going from memory I don't believe mustard is used for hollandaise sauce lol but I'd have to double check to confirm ( it's been a while since I made it).

Alright, I made this burger again like I promised. I followed your directions perfectly this time (except I smashed them) and it was much better!
I always try different types of burgers, and this one was very unique. Although the ingredients don't sound very strange, the burger had an extremely unique flavor profile.
Greg, was wondering if there's no access to the meat grinder if an 80/20 ground chuck ( which you commonly use in several copycat burgers), would be similar enough for replacement instead of ground NY strip? Also, what type of thick bacon cut was that again, jowl sliced by hand or something else? Thank you for all you do and your time and devotion to all of us which appreciate those awesome burgers and try our best to keep up. You are inspiring for those who try to cultivate any type of culinary divination from watching this type of posts, which are littering the Internet and your videos are easily discernible from the rest.

Greg-great job! One small detail you missed (not sure how much of a difference it makes), but when I was there a few years ago in Chicago, I sat at the bar right in front of the cook for 2 hours. They par cook the bacon on the griddle, then finish it under the salamander with the syrup and black pepper.

Each burger patty was beautifully caramelized on the flip and having them the same diameter gave a single patty appearance. I think I'd rather have your version Greg!

Hi Greg, I'm Brian. Really enjoy your videos on here and your bbq channel. Just wondering if you've ever had a Nessy Burger? Back fifteen years or so ago, I used to drive truck down I-15, and I'd always see these big crowds of 18 wheelers parked behind this gas station just off 15 on the 76 in Fallbrook. Looking closer, I noticed there was a food shack back in there that was packed. Anyway, next time through, I stopped and had the first of many nessy burgers.. soo good! I've since moved away so haven't been there in well over 10 yrs. You should check them out and would love to see your copycat version in an upcoming video. Keep the burgers coming. Brian

Instead of "Dijonnaise", try this... mix 2 parts Dijon mustard with 1 part maple syrup! (Real maple syrup is best) Put that on your burgers, hot dogs and ham sandwiches....It's AWESOME!!!!!!!!! You will have trouble keeping Dijon mustard and maple syrup in the house!

Hey Greg, as a burger novice, I was wondering how do you keep your burgers staying flat while cooking? Few times I've made homemade burgers they tend to "balloon" in the middle. Is it related to having a high enough fat content? Or something else? Anyway, love your vids!

It's a "Double Cheese" burger. To your point, however I think it should be named a triple beef, double cheeseburger.

the burger needs to be constructed upside down from how it is done. The bottom bun gets destroyed by juice doing it this way. EASY FIX!
This is a copycat recipe and Au Coeval builds it this way. Seems to working out for them.

@@BallisticBurgers Bey Greggy! In 2016 for a short time Wendy’s released the Jalapeño Fresco spicy chicken sandwich. Honestly the best spicy chicken sandwich I ever had. The spice level was more than any other. If you could somehow recreate it, that would be awesome.

@@BallisticBurgers Yeah I hear you, wish you had tried it when it came out. It really was an awesome sandwich. Jalapeño bun, their standard spicy chicken breaded patty, pepper jack cheese, red onions, ghost pepper sauce, and fresh(not pickled) diced jalapeños. It was really unique sandwich to be in a fast food restaurant. It was only around for a few months I think and then they pulled it and I haven’t seen it since. I guess it was too much spice for most of their customers. I actually mentioned it years ago on the other channel. I totally get if you’re not able to do a vid. I’ve never looked but I doubt there’s any existing copy cat recipes since it was around such a short time.
