To be honest, initially I was surprised because in italian "stroncatura" means also "harsh criticism", so I thought: "Wait, did they really found a bad type of pasta?" :D
My experiments usually end up as sad little moments of horror. Watching Eva just throw every kind of flour into that pasta was like ok if she can I can. Perhaps I will attempt it. Perhaps. With a big ol glass of wine for courage

I would say back in the day no batch would taste the same because it was floor sweepings and it would depend on what was ground that day.

Italian food amazes me. I miss Italy so much. It’s simple ingredients at times but the BEST and freshest ingredients in the world. When I came back from Italy it was hard to recreate the dishes because the ingredients in Italy are simply the best.
It’s the soil that it is grown in.

I love this channel because being an enthusiast of Italian food for 10 years now, I still learn new things and you guys cover topics that aren't widely discussed in Italian Food UA-cam, such as Stroncatura, Pasta all'assassina, how to incorporate chocolate into Italian dishes, etc. I used to follow another prominent English language Italian food channel (that I won't name) that just in the last year just turned into clickbait, reaction videos and beating the dead horse of not putting cream in carbonara. I am always learning something new with you guys and every Sunday is ignites my spark for Italian cuisine

Great history. My Mother is from Reggio and as you were walking and showing us the town, makes me wonder did my Mother walk on the very same concrete. It is so beautiful no wonder my Mother has such great memories of where she grew up.

Dasa' should do what the town of Rasiglia, up in Umbria did recently, and restore the water channels once again.
It has been wildly successful there with tourists who come visit to see the running water and the old machines.
I once heard a term "Cucina Povera" of "Poor people food" this pasta seems like that. I love it

In Italy we actually use that term a lot (referring to food and cusine) 'cause almost all the most famous and traditional dishes come from there, from "poor" origins.
It is that cuisine that knows the edible spontaneous herbs, is able to use the food waste (think of the "fifth quarter" of the butchering of meat!), and re-use the leftovers to recreate tasty and nutritious dishes and (often) even excellent.

So true! I always say: _anyone_ can cook a filet mignon and it’ll be tender. But it takes skill to take a tough cut and make it tender and delicious. And that’s what “poor” food does - it takes “crappy” ingredients and makes amazing things out of them. I have a lot more respect for that skill than for haute cuisine that always calls for expensive stuff.

I've been living in Rome for over 20 years but have never heard of 'Stroncatura'. It looks interesting. I am familiar with the Northern 'pizzocheri' made from buckwheat flour..
I was disconcerted when you drove down the rubbish-lined road, a problem which sadly we also have here in Rome. Dumping waste on roadsides gets worse the further South people go in Italy. If only regional governors could do more about it.
I’m surprised to see that Eva was on the left-hand side of the vehicle when driving. For some reason I thought most countries in Europe had the driver’s seat on the right side of the vehicle - but maybe that is just the UK?
As a converted Italian, (who has spent 2 summers in Torre Mellisa in ancient days) I am more than intrigued. The sauce looks easy. There is a buckwheat pasta that is seen only in Val d'Aosta in Northwest Italy - pizzocheri, that may be similar. I like the idea of integrale with semolina and regular 00 flour, made with water, and formed with a pasta machine and dried. If this was made with floor sweepings, my guess is that it is more white flour than whole wheat, but I think it's worth playing with. Thank you, I hope the two of you realize just how lucky you are to have each other, along with family in both Italy and the States. Grazie, buon appetito! Is the old mill broken? It would a nice if the village would make an annual event and run the mill once a year. It would help ensure it remains in good condition and the people on how to use it.. just in case. Oh, they would get to party for a day!
It’s ALMOST in working condition. With a little work, it could be made to function again. It’s a project that we’ve definitely considered trying to make happen!

Amazing!!! I was so happy a week ago, when at the local italian deli in my little country in Central America, I found N'duja, I couldn't believe it!!! Try a very simple pasta aglio e olio with some toasted breadcrumbs on top! A whole new level!!!
And here I thought the only pasta crime was spaghetti and meatballs.
On the contrary. According to Italians there's plenty of crimes related to pasta. Overcooking it, using it as a side dish, putting ketchup on it, cooking it in sauce. The list goes on.

I never knew such as this even existed! It is quite a good surprising history in depths from Italy hearing it from another country, our USA. :) . This makes me wonder how all chefs in America dealt when it comes to cooking without wine (Alcohol) when it was forbidden to sell or make. Where that stuff was made, hmm. I have to ask ,because ,from your past videos ,you told us that Harper is a ‘lover’ of ancient history: did you know that in the museum in Reggio Calabria there are the ‘Bronzi Di Riace’? ( 2 Perfect Ancient Greek statues recovered under the sand in the Ionian sea close to Riace). Also this is for Harper: the Ionian is a ‘sea’ , not an ocean. Keep up the good work!😊

@@annother3350 My original comment got deleted for some reason. The dumping of trash is mainly because of the calabrian mafia aka the N'drangheta. They control the trash companies and organize illegal dumping so they can make more money by not processing the trash.

Fascinating story. I like Eva's attempt at recreating this pasta. Looks like I'll have to go to Italy to try some.
It looks amazing. What I heard is that, being made from scraps collected from the mill floor, it went against health regulations. It used to be a mix of not only flour... but people still ate it because it was literally "dirt cheap". it's good to know it has been brought back and manufactured from safe ingredients. This is a way to preserve local culture through time.
