I wish I had an eggplant to cook right now. That looks so good. That is how my mom used to make them and I loved them cold the next day too; but without the bread.
I'm glad to hear that someone else made them that way. Any time I tell an Italian that my mom didn't bread them, they think it's strange.
Great video - love the antique salt shakers. Love the idea of frying them crispy! Nothing wrong with "cheap" bread - if you can actually get it, lol.
Growing up we used to use a bread called Roman Meal. It was like the wonder bread version of wheat bread. In fact, it may have actually been made by Wonder.

Mozzarella pointless?? Far from it! I always ask them to brown the mozzarella a little, giving it a nice nutty flavor. Certainly NOT pointless!
It's mostly texture though and not enough flavor to help out eggplant, imo. It wouldn't help this particular dish. Thanks for watching.
