How Italians Stuff EVERYTHING | 18 Stuffed Italian Recipes
I recently remarked to Eva that Italian cuisine seems to have a lot of stuffed dishes: stuffed vegetables, stuffed pizza, stuffed pasta, stuffed meat, stuffed EVERYTHING. In response, she decided to show me just how little I understood the word "everything."

We only scratched the surface here! What's YOUR favorite stuffed dish?
Definitely Manicotti!
"Petits farcis", which is a nissard dish (south eastern France). It's an assortment of stuffed zucchini, onions, eggplants, potatoes and tomatoes. The stuffing uses, among other things, mince meat of your choice and parmesan 😊 we usually use small veggies, so that they're individual portions, rather than large ones (particularly for eggplants). It's more of a spring or summer dish, and so the potatoes we use are also on the small side.
Actually, if ravioli count as stuffed foods, then ravioli niçois is my favourite dish. It's stuffed with a beef (cheek) ragout and blettes (a type of chard I think). No tomatoes in the ragout, but red wine. It's marinated for 12+ hours, cooked for 12-24h then we use it to stuff the ravioli. Definitely not something I've ever made! My grandparents used to, but it's tedious and intimidates me 😄
.... Now I'm hungry....
Stuffed scallops!
So has the Discovery Channel discovered you guys yet ?
I can’t begin to fathom the sheer amount of effort it took to make a video like this one. Wow. Just wow. I’m impressed
You could say it's... *_stuffed_* with great content.
@@xevira Pun intended 🌚
Your such an amazing cook! Thank you for all your effort
Harper makes excellent videos. And, he is funny, too. I like both of them together. It's a lot of fun.
“I’m Calabrian. Of course I can stuff this.”
😂🤣😂🤣💀
I think that’s the funniest line I’ve ever heard Eva say 😁
Mulingiani chini (as my Calabrian daughter-in-law would say)...that right, Eva? Linda
@Roberto Lucarini Yes!
The fact that even though some of these dishes are stuffed, fried AND baked and are still healthier than most American food...
Da italiano sono sconvolto dalla quantità di ricette che questa donna sa eseguire perfettamente: complimenti!
Una vera ambasciatrice della vera cucina italiana all'estero!
Grazie mille!!! ❤️
Harper: What do you wanna do with this pepper?
Eva: [cooks 84 course meal]
My head is reeling from the amount of time and effort that went into this. Recipes for weeks now. Thanks guys!
I love how I, as an italian, have my own recipe for stuffing almost all those things but they're all different from Eva's, some just a bit, some completely different
That's called cooking!
Actually it changes not only region to region, but from family to family... nearly everyone who cooks in Italy has their own creative twist that their family prefers. ;-)
@@lagringa7518 and amazing thing it is, every version is great, in its own way!
ma perché se siete tutti italiani vi parlate inglese ahah
Not only do they stuff veggies, they also stuff empty stomachs!
They should open a restaurant! 🙏
@@alwaysinprayer900 I'm 👍 with you comment. Dai aprite un ristorante in Milano e torre del lago puccini Puglia Calabria.
The “real stuffed olives” - OMG! Then came the rice… And the culinary wonder that was the braciola… 18 recipes! Speechless.
7th law of Italian cuisine. If it has a shape even vaguely suitable to be filled, it will be filled.
😂😂
I spent the whole video laughing every time Harper went to the fridge to find something new to stuff xD You guys are amazing, as always. Much love from Scotland :)
34 years ago I went to an Italian Restaurant outside Minneapolis and had stuffed Cannelloni in White Sauce. I still remember that meal to this day.
Do you remember the name of the restaurant? My Italian husband (we are originally from New Jersey) would like to try it!
@@kathrynsangiacomo9243 he never replied.😢
Ava....literally EVERYTHING you make i grew up on!!!! I am turning 50 this year and this makes me fondly remember when we used to have large extended family gatherings several times per week. I still cook like this but it saddens me that most Americans never get the chance to see or rather taste these humble gems of authentic (southern) Italian/Sicilian comfort foods. Most Italian restaurants in the United States have Americanized what they offer and the same old worn out dishes of food drowned in too much cheese and generic sauce are passed off as authentic Italian dishes when they truly are not. Thankyou for showing people that they can make spectacular things to eat that are healthy using what they have in the pantry for little cost.
How many men are jealous of Harper being married to a woman who can cook like this?!
I dunno, but I'm a woman and jealous of Harper being married to Eva (and vice versa, he's wonderful to!)
How many women are so fortunate to have a husband that is so responsive to her talents? That has to be wonderful for Eva! It is absolutely lovely that he uses his talents to make his wife shine!
I’m not a man and I’m jealous of Harper who gets to eat her delicious food!!!!
🧟♀️ grrrrrrrrr he is soooo lucky…thanks Harper man for making it possible for Eva and all of us to experience all this Italian culture ❤️❤️❤️ I can eat Italy off of the map !
🙋♂️
Non c'è niente da fare, la domenica è l'appuntamento con la vostra simpatia e con le belle ricette di Eva.
Grazie
There is only one word for this video…and that it EPIC!
Beautiful is the giant picture of Totò in Misery and Nobility who eats pasta with his hands, which was done in Naples in the 19th century on the road!
I love how Eva is able to cook single portions! Since choosing to live alone after 30 years of raising children and catering to men, it feels like I have no idea how to cook for just myself 😂 I'm learning alot more than just recipes, thank you 🙏
My favorite stuffed snack and still is... from my Grandma Lupo...Dates stuffed with whole toasted walnuts rolled in sugar and fresh grafted nutmeg. Sometimes it was...dates stuffed with gorgonzola, prosciutto and walnut then drizzled with honey. Eggplants....till this day I can't stomach. Growing up in a family where both mom and dad are from Sicily gives Italian food a little twist. For the better. For that I'm grateful to have the flavors of the Mediterranean in my life, daily!
Ciao
I'm glad Eva has gone back to her true nature, and into her roots.
And, is back to using the best cutting surface in the universe;
Her thumb.
I laughed all the way through at the number of dishes. I'm like, "Eva surely didn't cook all these in one day, surely it took a week," but I noticed her top stayed the same - for continuity? Really? All in the one day? Amazing! I'd struggle making just one. We missed the vicarious thrill of watching you eat them except for the calzone - I guess cos you had to wait for your guests.
It’s technically impossible, but the legend say she did it and she is also not human 👽... up to you to believe what you want haha
Well: you definitely don't know my grandma...
I could do this. Just don't dawdle around.
I’m pretty sure that there’s nothing Eva can not cook and make fantastic dishes and I’m also pretty sure that Harper should probably weigh 300 pounds at so point soon ‼️🤣🤣🤣 Much Love 💕 too you both 🍝😍
What? She made _one_ stuffed pepper, not 20. It’s all about portion control.
Harper is still young. My dad was always thin also. But when he got into his 50’s, he started gaining weight! He’s chubby now!

Guess it was just a matter of time before you ended up here. Hope you are well and be seeing you again soon! Lol. Peace!
@@cyanidejunkie 😉 👍
I assume that Harper and Eva are active and do a lot of exercise. I too love good food and even with only eating normal portions i need to
ride the bike, swim and go running on a regular basis to prevent getting to heavy! ;)
Eva sure did a lot of cooking, I hope Harper did a lot of clean up.
And booty smootching for all that good food. :-)
Eva: "I'm Calabrian Harper, of course I can stuff this!" when asked about the eggplant. As someone who's maternal grandparents were Calabrian, I think the better answer she should of given was "Don't ask stupid questions?"
And after eating all this delizioso food, Harper was the one who was stuffed, what else?
"Eva, are you putting cheese on seafood?" "No, I'm putting it inside seafood"
Passatelli in brodo di pesce ....Marco sapessi cosa sono !!
I don’t think I’ve cooked that much in a year. Wow. What a feast
This is a wonderful episode. Stuffing foods saves so many ingredients that are not enough for a serving and to make recipes go further. Aside from that types of stuffing are also nice to eat on their own even if you have nothing to stuff. Stuffed calamari is my favorite. I made a promise to some neighbors that I would cook it for them in thanks to their help with shopping etc. during the lockdowns as I am somewhat disabled. I really must come up with the goods now!! It is a wonderful way of cooking because it makes so many daily ingredients a new and tasteful life.
Oh my ……. We have stuffed olives on a holiday. I was told my grandmother invented them. There goes that story!
Yeah stuffed olives are pretty common in Italy too
This channel never ceases to amaze me with the wonderful music selection. The food is pretty good too
WOW Eva! You've really outdone your self. So many delicious recipes. You are one lucky man, Harper! I would love to be invited to your house for supper. I'm sure Harper's family enjoyed the feast,
I’m crying from happiness !!! The emotion and passion and food art is incredible!! Thanks guys !! Wonderful people like you and Vincenzo’s plate teach us to respect and eat real food made with the whole heart !!! Bravo Eva and Harper !!! Now I feel like a Roman style calzone 😁
for everyone who's not italian: please be sure to try those rice stuffed tomatoes, they're delicious, EASY and perfect for the summer
A Brazilian friend of mine made these long skinny hot peppers stuffed with ground meat mix and then roasted that were absolutely fantastic.
They eat that in croatia a lot. Its amazing
Ancora prima di guardare il video so già che sarà una bomba 🥰. Saluti dal Belgio ragazzi, io e la mia famiglia vi seguiamo sempre e ogni volta torna la nostalgia per quello che è il buon cibo italiano ❤️

Yes, and usually very simple. That’s what I love, the simple, clean cooking.
Eva and Harper need to bring their show onto the food network or the cooking channel! I love their vlogs! Grazie and Ciao. Al from Sarasota by way of South Philadelphia. 🍝🍷🇺🇸 🇮🇹

Such great memories.

Wow, amazing! What a lot of work this must have been. Y’all are really raising the bar on what a cooking video can entail. Would enjoy a separate video on each of these delicious recipes! Thanks for being so clever and sharing with us.
"I'm Calabrian, of course I can stuff eggplant!" ahahah E basta. Brava Eva, we really stuff anything! Ciao ragazzi

The stuffed olives alone were enough to hold my attention. Your lucky family, if you feed your neighbors...I'm moving to Arizona!
Your food always looks delicious. Would love to be able to buy an actual cookbook with all of your recipes in one place! I enjoy your videos very much! I am also in Arizona . . . and the rain we are getting right now is WONDERFUL! Puts me in the mood to cook. :)

Pochi minuti di video nascondono l' enorme lavoro che c' è dietro queste stupende ricette!🤤🥰
I actually didn't know italians also stuffed everything! stuffing stuff :)) is a specialty of balkans and middle east as we make dolma out of literally anything and everything
For the record, my favorite dolmas in the world are stuffed vine leaves, zucchini flowers, dried eggplants and intestines :))
@ecenbt Yeah, we definitly beat the italians in stuffing. Think also about stuffed onions (italians only grill or grate those) and practicly any big leafy vegetable we can turn into a wrap and we add a stuffed twists to fermented veggies aswell!
@@daniby9894 we can stuff onions, just with bread, garlic, parmigiano, salt and pepper … but I love the zucchini flowers, they’re my favourite! My dad makes them with a good mozzarella and anchovy and I also love stuffed artichokes … now I’m hungry…!
Eva these dishes look amazing!
Man! That is fantastic!
To those who claim italian food is only pasta & pizza.
who claims that?
@@aasolano Obviously this can only be said by someone who does not know the Italian cuisine. Because someone who says "only pasta and pizza", it is clear that he does not know the Italian cuisine.
Eva, in bed: "Harper, I am not really satisfied yet"
Harper looking at her in panic like "OMG physical activity *now*?" 😂
Honestly I expected a "Just one thing left to be stuffed..." and a fade to black.
@@jeremykiahsobyk102 me too 😂😂😂
Yuuuuuum!!!!!!!!! Thank you so much!!!!!!! So inspiring!!!!!!!
I LOVED this episode! A cookbook with just stuffed recipes would be wonderful!!!
No elaborate premise or backstory... just down to business. Eva stuffs EVERYTHING, including Harper. Oh, just got to the end, and of course there was a twist - although it went the food route instead of BOW CHICKA WOW WOW.
I just was thinking the exact same thing!
I'm salivating guys. I can already see myself copying the recipes with Eva's vegetables, in my veg variant ... or even vegetarian. Of course our Eva has incredible abilities. Everything she prepares is enchanting. Thank you so much to both of you for this episode :))
All of the meat/fish used in this video seriously grossed me out beyond belief.
For the peppers, I recommend a boiled potato (mashed) mixed with the cheese/vegan substitute of your choice (mozzarella or cheddar are the best imho), breadcrumbs on top to give it a crispy top.
@@Lidalgirl Great idea, I love potatoes!!!. I normally use smoked tofu (dairy products only if I have guests) and homemade pepper sauce mixing it with tofu

Thank you so much for this channel! My favorite Sunday show!
The stuffed tomato is a greek household staple called "gemista" which literally means "stuffed" in greek. Cheers 🤜🤛
I was in Greece few years ago, as tourist, in Mikonos.. I knew a greek girl and she took me to a greek restaurat.. WOOOO.. it was AMAZING ! 😊
Love and respect from Genova, Italy 😎♥️
Is it strange that I made the stuffed shells recipe before I really understood cooking. I was a young wife and just put together flavors I liked. They were also easy and inexpensive to get in FL. at the time. Honestly, the way you make it is almost the same as I did and do now thirty years later.
You mean seafood right?
I am not sure what you are talking about.
Shells as in pasta?
@@cosettapessa6417Yes the medium sizes shells.

Oh my god so many dishes, so much knowledge!!!!
I thought for sure towards the end that the two of you were going to make an announcement about how you had your own (stuffed) “bun in the oven”. [And that would of been perfect too]. The calzone instead was a good second replacement. Hats off to Eva for all that cooking.
LOVE! LOVE! LOVE! This is the channel that I have been missing. Love that you bring these regional unknown dishes to us. All I wish that I was invited to taste them too. ;)
