      I’m impressed that he white shoes and pants remained unscathed. She was a force of nature and very proudly showed us what true rustic cuisine is Brava Franca!

    I can only imagine how amazing the food was solely on the fact that everything was cooked on open fire and imparted with a wonderful smoky aroma, something we can never recreate in a modern kitchen. I also how love self-sustaining her garden is. What a beautiful way of life!

      Yes, everything homegrown, cooked over real fire in ancient flavorful cookware. There's no faking or recreating those flavors. And an incredible amount of skill and knowledge in cooking this way. It is not simple at all actually very elevated

    I’m struck by the calm amusement Eva displays watching Harper’s father being mercilessly ribbed by Franca as she takes him through the cooking of the fagioli😊

    This is a rather ancient way of cooking, requires a lot of intuition. No measures, no knobs or buttons to control heat. You need to FEEL it and watch your fire. We do the same in Hungary when we cook in our ancient cauldron the bogrács.

    What a fun episode!! Boy! That lady Franca is quite a character! Max seemed surprised at times but he did pretty darn good and clearly he was impressed with how this lady managed so well in such a rustic setting!

      this was their best episode, better than pasta grannies. I'm glad harper's pop is catholic, cause she was looking at him after referring to the holy trinity to see if he'd agree. If he were protestant, that may have been the end of the hospitality. Lady is old school.

      @@ricodelavega4511 Uh, Protestants believe in the Holy Trinity: Father, Son and Holy Ghost/Spirit. Some Protestants, like Lutherans, still cross themselves as well and it is widely accepted in Protestantism.

    To me this was your best episode yet! She’s a natural, she reminds me so much of my good friend Claudio‘s mother. The first time I went into their backyard here in Canada I could not believe it, their entire backyard was a garden and she was constantly tending it. Her root cellar was a sight to behold filled with wondrous charcuterie. Every time I stopped in she always greeted me the same way as this beautiful woman does with an exuberance for life and a warm have you eaten. So thank you for this great episode it brings back beautiful memories.

    Love this episode so much. She reminds me so much of my Grandmother also from Calabria. She would never sit down until we all had our food and sometimes not even then as she continued to cook and serve. Very strong determined women but with a heart of gold. Wish you could make her a regular. Love her 🌶🇮🇹

    OMG this might have been my favorite episode! I love when people learn to speak Italian, then go to Calabria and don't realize that even in the next town over, they probably have a completely different dialect! It was great to understand what she was saying! BTW, glad you pointed out that Calabrian women are so strong that they can pick up hot embers with their bare hands. 😉

    She's wonderful. I think she was somewhat patient with Max, but gracious and fun as well.

    Love to hear la lingua Calabrese. La signorina Franca is quite charismatic. The house in New Jersey that I was raised in was a single family dwelling. We had a normal house with a kitchen, dinning room, living room, etc. However, we only used the proper house for sleeping and morning coffee. The majority of our day was spent in the basement which had it’s own kitchen, dinning room and den and cantina( where we kept the homemade wine, tomatoes, eggplant, etc). My father built a large fireplace in the dinning room. During the winter we used the fireplace for cooking more so than heat. It certainly enhanced the flavor of everything.

    I watch every video and this one is my favorite! You should travel allllll over Italy having Max interact and learn about cooking. All if you speaking italian and showing us all these new concepts is awesome. All of you inspire me and make me laugh at the same time.

    I could watch comare Franca all day long! Just to hear once again the dialect that my late Calabrian mother and father spoke warmed my heart and transported me to a wonderful time of my life! We indeed ate chicoria and beans and often times we picked the gigantic dandelions right from our front lawn to cook or make salad. Sometimes we would used hard bread and put it in the bottom of the dish and then put the beans and greens on top to soak up the juices! I was so transported by this video. People spend tons of money for fancy kitchens they don't cook in and here la comare cooks in primitive but time honored way when COOKING WAS INVENTED!! What a wonderful way to do this video! Harper's dad is gorgeous and he's a great sport! Would love to see Harper's dad and Eva have a cook-off!

    Boy,I don't think Max knew what he was in store for!! This video was great. The amount of physical work needed to prepare a healthy,organic meal from scratch is well worth it. Most people do not want to put in the "old school" way of preparing fresh food!

    Loved this..Franca reminded me so much of my exuberant aunts near Conegliano, Veneto... Always a smile, everything measured by the eye and the hand, no plastic, only earthenware, glass and metal..and that homemade wine!!! Grazie mille!

    This episode was fantastic, I became a little emotional thinking about my grandmother and all the wonderful food she made using fresh vegetables, herbs, and fruits that my grandparents grew in their large garden. Thank you.
    Harper has similar mannerisms and speaking cadence as his father.

    The best way to cook ... I love potatoes under the ember, we ate them when we prepared tomatoes sauce in the yard in a big pot.
    Harper's dad is a very nice person, accepted to take the joke and understands calabria dialect better than me!

    This was one of my favorite episodes! When my dad put in a fireplace in our house when I was growing up, he would roast potatoes in the hot coals too, just like my grandmother did when he was growing up in Abruzzo. Loved watch how Franca cooked and was teaching Max. He was a great student! 👍🏻👏🏻Bravo!

    Absolutely loved this episode! It actually really reminded me of the many summers that I spent with my grandparents who live on a provincial island in the Philippines. Pasta Grammar (and Harper's Dad) are #1! This is the real life worth capturing and you'll never regret this. Keep it up always guys :)

    I'm glad to see that the Calabrian countryside isn't all that different from the states: rustic, unrefined, and home to interesting people full of spirit and vigor. Makes me wish for a life there. This was really fun to watch!

    The cooking method is very similar to what I've experienced in some parts of the Philippines. I've adopted many of these methods back home in Canada. One thing that's amazing is sweet corn done the way the potatoes are done in this video. Husk on, of course... amazing flavour that isn't there boiled.
    I'm definitely doing a batch of potatoes this way!
    Cooking on fire/coals is awesome... something primal about it... putting us in touch with our early social selves. Family, community, sharing food near the hearth... telling stories... as a Great Ape I love to share this with my fellow Apes!
    To spend the day roasting a beautiful lichon and all the sides while eating bits and bobs throughout and drinking homemade wines, beers and spirits... that's living!

    Cooking food near the fireplace gives it a incredible taste.

    I loved this! Hearing Franca speak in her dialect, one I have not heard for many years but still understood and what’s wonderful father you have Harper!watching this amazing way of cooking reminded me of how my Nonna cooked in Frosinone. Going outside, picking the vegetables, having already killed the rabbit that morning. My heart feels swollen and yet tight in my chest. Thankyou so much for sharing this

    I enjoyed this so much ! It made me think of being back with my grandma in Montenegro 🇲🇪!! ( Herceg Novi to be exact ). When she picked those hot coals up with her hand I instantly thought of my baba ( grandma) ❤️

    Every building in northern countries should have 1 stone oven like that when electricy goes out. Would be usefull: heating the building, cooking for each occupants to cook their meals or why not, have a neighbors supper and sing and play music or telling stories with candles.... brings back the people together. And having on top roof or backyards, gardens of herbs and veggies

    So enjoyable and fun to watch. Cooking without measuring, guided by experience and feel makes one more connected to the food. Another wonderful episode, the "grammar" extends beyond pasta and goes to the heart and soul of Italian regional cooking.
