    Hello friends! I want to share with you a wonderful recipe for grated eggplant casserole with a hearty filling of fried onions, carrots, cheese and eggs. This dish is incredibly delicious and very easy to prepare, resulting in a great main dish for lunch or dinner that the whole family is sure to love. Since I discovered this method of preparing grated eggplant instead of the usual roll, I began to cook it very often. Believe me, the taste of such eggplants is much richer and more interesting. I'm sure you'll like them too! Just a few available ingredients, a little time - and fragrant, juicy grated eggplants with cheese filling in the oven will be ready to serve.     INGREDIENTS AND RECIPE:
    2 eggplants.
    1 teaspoon salt.
    3 eggs.
    Salt.
    Black pepper.
    2 cloves of garlic.
    Paprika.
    3 tablespoons of tomato paste.
    100 grams of flour.
    1 red onion.
    Olive oil.
    1 carrot.
    Dried garlic.
    100 grams of cheese.
    Dill.
    Breadcrumbs.
    1. Coarsely grate 2 eggplants and place in a sieve.
    2. Add 1 teaspoon of salt and mix well.
    3. Squeeze out excess liquid from eggplant and place in a bowl.
    4. Break 3 eggs, add salt and pepper and mix well.
    5. Finely grate 2 cloves of garlic and add paprika.
    6. Add 3 tablespoons of tomato paste, 100 grams of flour and mix well.
    7. Cut 1 red onion into half rings and fry in olive oil.
    8. Coarsely grate 1 carrot and fry with onions.
    9. Add dried garlic, salt and pepper and mix well.
    10. Coarsely grate 100 grams of cheese and set aside.
    11. Finely chop the dill, place in a bowl and set aside.
    12. Grease a baking sheet with olive oil and evenly cover with breadcrumbs.
    13. Spread 1/2 of the eggplant mixture evenly and arrange the fried vegetables on top.
    14. Sprinkle with dill and sprinkle evenly with cheese.
    15. Spread 1/2 of the eggplant mixture evenly on top and sprinkle with breadcrumbs.
    16. Bake at 180°C (356°F) for 35 minutes.
