Steph you guys convinced me into buying one . I went to Sam’s paid almost 60 pounds paid 330.00 😮 it took me an hour to cut up one . The meat is tough 😮😢 Maybe I need a sharper knife? I’ve had to cook mine in the slow cooker to make it tender. Air frying it took two days to chew😂😂 it is cheaper than buying ribeyes which is mainly what I would buy. Thanks for sharing . If you can on your diet, use meat tenderizer on steaks. Don't do it too far ahead, it won't work right. About an hour before cooking (maybe 45 mins) put meat tenderizer on both sides and let your meat sit on the counter in a tray. If you prefer, put it on one side for 25-30 mins, then flip and do the other side. There will be a point where the meat will be bright red and you'll see some liquid on top. At that point- you can let it go a little longer if you like, it's time to cook your meat. Don't put very much salt as the tenderizer usually has some salt in it. You can let it go as long as 2 hours, but much longer and it will be mush. This is what those famous fancy steak houses that charge $75 for a steak a la cart do to make their steak so soft you can cut it with a butter knife. Good luck!
It’s the same meat as the ribeyes you buy. How is to tougher?
It's from a different part of the cow. Not the same as ribeye.
@@pabeader1941 the ribeye starts in chuck roll, the main section being nearer to the ribs. So some of the cuts you get are exactly the same meat as ribeye, just not the select cuts they display in the case.
Steph, the reason we are all so flabbergasted is because we watch butchers on you cut the chuckroll into diffeeent parts including stew meat and chuck roast which we have always been told you must cook low and SLOW! Hard to believe you could do all steaks with it but Im going to Costco to try it!! Thanks for sharing

Hmm, Thank you for the insight into why what we are doing seems so unbelievable. We love the air fryer, not just for how easy it is but how consistent our steaks are. It's Awesome! Maybe we should cook it a different what the results would be? They were delicious when we BBQ'ed them, even though it was harder to get the same results every time on the BBQ.
Are we the only ones having success with the chuck rolls?
I do something somewhat similar. I do a reverse sear on a "chuck roast", which is basically what you are processing the chuck roll into. The reverse sear comes out pretty tender. Searching "reverse sear chuck steak" in UA-cam will then up thE few videos I watched to learn it. In short, you're not alone :)
I have a Ninja toaster oven/air fryer and my steaks never turn out in it. Overdone and no color (gray). So if you have insights on how to cook in this I’d be very grateful.
@@wallowinthehallows I use a probe thermometer. This makes it easy to remove the steaks at your desired done-ness.
You need to get you a good 10” breaking knife. Would make processing that chuck roll a lot easier.
Wow! That is impressive!! Thank you for sharing this! We found that it’s easier to cut and package with the food saver if we’ve had the chuck roll in the freezer for a bit before we cut into it. Have you ever tried this?
No…my freezer is too packed to fit a whole roll 😆 but it probably would be super easy slightly frozen! 😀

You have yet to answer my question. How does your Chuck Steak’s turn out so great (as you aver) and mine are tough, chewy & sinewy??
Theyight just like tougher cuts. I love chuck roast for the flavor. I don't like tender cuts like fillet. Chuck isn't too tough for me. I don't mind chewing. Don't like melt in your mouth meat lol
If you have tough beef, I highly, HIGHLY recommend getting a sous vide cooker (they're quite affordable, nowadays). Cook for 24 to 48 hours in the sous vide at 131° (yes, I said 131° for medium rare), and pat dry/sear the meat after you take it out. The exact time is not critical (food safety wise), after it's been cooking for about 2 hours... but you'll want to go with longer times between 24-48 hours, for tougher meat.
You can pre-season the meat, before you vacuum seal it, or even freeze (for the ultimate in convenience -- it can go straight from the freezer to sous vide, without needing to defrost).
Also, make sure you're slicing the meat in the right direction, with respect to the 'grain', LOL.

I don’t know how to answer it..I can only tell you what we do 😆 observations that could be factors: The magic might be the not overcooking it? We also like really thick steaks (1.5” or so) and like it medium rare. We cook it in the air fryer very close to the heat element at 400 degrees so it’s nice and crispy outside and floppy and tender inside (13 min. For a thick steak flipping once midway). We also don’t let it sit since we like it hot when we eat? Maybe it’s the grade of beef Costco carries? Maybe our farm source they buy from (swift and national beef are the two brands think I’ve seen on the cases-might be a 3rd) and whatever the cows eat on those farms? I have no idea but ours is always tender and delicious.
I can tell you if I’ve overcooked it it gets tough. When I make pot roast out of it, it’s turns tough! I have to cook it a long time to get it to become tender again…so undercooking might be the magic
Steph, did you notice a difference in quality, flavour, fat, gristle etc between the 'Best beef' brand and this 'National' brand?? I feel that is an important factor as not all farms feed their stock the same.

Go get yourself a breaking knife off of Amazon 10 or 12 inch, you will freaking love cutting them up with the right tool.

@coderlicious6565 a breaking knife. They're an old school butcher knife, I use a 10 inch to cut up pork loin into chops.
@@coderlicious6565 a breaking knife with a flexible boning knife is all you need to break down large pieces of protein and trim out all the smaller cuts. Make sure to have a steel or something to keep an edge because these large pieces will dull your blade.

Apparently everyone thinks it’s not a proper knife for this! 😆 but it works for me! It’s the Santoku knife from my knife block. The block has a built in sharpener for each knife so it’s awesome! I found the set dumpster diving at Bed Bath and Beyond a couple years ago! 😆🎉 amzn.to/3SjzRNR
How do you cook what you cut? And what do you do with the fat trimmings?
Render the fat and store it of course.
We use the top rack of our air fryer as close to the heating element as ours can go ( a few inches) and air fry at 400 degrees for 12-14 min depending on the size of the steak flipping once. Air fried bites just sit on the rack next to them and cook the same time.
Wow! Thats fast. I did my first one today, it took me well over an hour. I also purchased at Costco. $104.14 for 23lbs, about 4.39lb. I struggled getting the silver skin layer off, needs practice.
Yes, when you buy 1 chuck roll it is $4.39 but when you buy a case like Steph did then they drop the price to $4.19 a pound. you can get 1 chuck roll out of the meat case in front but when you want a case, you need to ring the buzzer for the butcher . you can get a cheaper case price on most cuts.
I have gotten MUCH faster each time. Sharpening my knife is the ticket! 🎉❤️

Can you do a ribeye roll. Just wondering what kind of deal that is. I think the beef ribs makes it worth it.
I’ve never asked at Costco because their ribeye is so expensive! I just get ribeye if they’re on sale or marked down for clearance at the grocery stores. I will ask next time!

I dont like Chuck Roll that much i prefer Sirloin, Sirloin is mush softer and much more enjoyable,
The only catch is that is about 11 or 12 dollars a pound put its so worth it because your not getting too much Fat, your mostly getting tender meat that is at a higher quality

I think it is wonderful that you can cut up a chuck roll so expertly. I may buy one sometime and try it, but I have enjoyed watching the Butcher Wizard on UA-cam because he shows you which parts of the chuck are the most tender and what parts to make into ground beef.
She is just cutting it. There is a proper way to separate the sections and have steaks a roast and grind.
I wish I could get chuck roll for 4.19lb. I live in Maine and at Sam's it's 5.69lb for a case of chuck rolls 😢
Same here in Wi. Sam is $5.68 for a case and just 1 chuck roll runs $5.98.

We’re not the ones to ask-we’re beginners too! 😆 definitely join a few of the women’s carnivore Facebook groups! Very helpful and kind! The regular carnivore groups are kinda crazy! 😆 Stick with the women’s. I personally do take a multivitamin a couple times a week, I also take a few drops of lugol’s iodine a few times a week, and I try to drink homemade bone broth several times a week…and a few bits of frozen cut up liver (I wash it down like a pill) a few times a week and we eat organic eggs daily. I don’t know if I’m getting all the right vitamins and minerals or not but my labs look amazing other than the high cholesterol. We’re getting bloodwork done soon so we’ll share our results near our year carnivore anniversary soon

Never have! I’m not sure what chopped steak is! We like medium rare so I would think cubing it would be less delicious for us than in steak form 😀 but I’m willing to try any steak form! 😋
@@StevenSteph Basically it’s fresh ground beef. Not a fine grind like hamburger. Don’t knead or stir it too much or it gets tough. Also, called swiss steak or salisbury steak when slow cooked with gravy, onions and mushrooms. Serve salted, browned, medium rare with pan drippings.

Like are you OMAD. How do you incorporate your low-carb veggies. Stuff like that. I just started adding in low-carb veggies and berries. It's the only type of carbs I can do - other stuff gives me acid reflux. The only reason I'm adding them back in is to kind of regulate my cholesterol - similar to what you were trying to do.
We don’t eat any veggies anymore…we tried incorporating some carbs back in to appease our doctors for a while but we stopped when Steve’s autoimmune disorders flared. We might have some berries or avocado on occasion, but it’s rare. I also have some cheese now on occasion but Steve does not.

what if it's a real tough one?
Sous vide for 24-48 hours at 131°.
So far we haven’t had one, but I’ve overcooked it before and it got tough (we like it medium rare, I think not overcooking is the magic?) when that happens I cut it up and add bone broth and add chopped eggs and make a hearty soup…top with pork rinds and broil cheese on top for a really cool soup with a cheese layer like French onion! So fun to eat!

No. I asked them.
Nope…I’ve tried at my store as well (also checked with Sam’s). It goes in with the burgers I believe. The butcher at one of our Asian grocery stores will save me some and also stater brothers if you have that store near you. Just ask each butcher. Almost all of them say no 😆

LOL Steve eats about a pound both meals and I eat about 8-9oz each meal 😀 we eat eggs with it as well but that’s it. We do like them thick! That might be why they’re so tender since we like them medium rare inside and crispy on the outside

SOmetimes you can butcher something and make many great things. Other times you can butcher something and butcher means "Wreck completely". You cant arbitrarily cut meat like a loaf of bread and then call it a steak. Nothing about those cuts are steaks.
That said.... food is pwesonal. So is taste and texture. If it works for you.... run with it. But dont call it something its not.
If you want to get more bang for your buck I suggest checking out Butcher Wizard;s channel. If your gonna frop a few hundred bucks on something he will get the most out of it for you.

This lasts you a week; $327.24 x 4 weeks = $1,308.96/month approximately. Wow. I don't think we can afford carnivore.
There are 3 chuck rolls in each case. That’s just one chuck roll.
If you eat 2 lbs. of meat each day at $4.19/lb, it would cost you $8.38 a day to eat carnivore or $58.66 a week. That would last you for 5.6 weeks if you were eating 2 lbs. a day.
If I end up buying one, I will grind some of it into ground beef. The shoulders have a great beefy flavor.
I like doing 50% chuck and 50% brisket mix as well. Amazing burgers!

There are 3 chuck rolls in one case. She only cut one of them up. You’d need to divide your numbers by 3.
Oh sorry! No, a case/box of chuck roll has THREE of these rolls…one roll lasts us a week if we eat only chuck…a box lasts us 3 weeks. Steve eats 2 pounds a day, I eat about 1.25 so that’s 3.25 pounds a day times $4.19= $13.62 per day for us both (plus we eat eggs). Not bad! Around $400 total a month

The deal is real! Not all hamburger is ground chuck! You never know what parts go into reg hamburger unless stated or you know the butcher. Up front cost is the nature of wholesale/bulk-buying! Not for everyone but a good investment for tough times ahead, imho. ✌
That is way, way too thick! That's about 3 inches thick which would only be good as a roast.
Maybe that’s the magic! I think overcooking is what makes chuck tough and when they’re 1.5”

I should buy this though because I’m gonna lose so much weight eating like that. I guess the best thing for me to think is that if I spend about $350 As a weight loss investment. Because I know darn well if I bought that much meat, I would eat it all. I eat a Retarded amount of junk food. 70 pounds of beef is such a good idea though. And getting the breaking knife. I’ve wanted to do carnivore for years, but I’ve been putting it off. Being poor 300 plus dollars scares me, but my health should scare me more. I’m 25 and 70 pounds overweight. I hate it so much so I should just pay the damn 350 and get me a big ass box of steaks.
