Had a friend who was a head chef at a Japanese restaurant Daimaru, he looked sloppy when he cooked, just like throwing "pieces" together, not measured, but the dish was delicious, as usual extremely witty and funny. 3 stars for Gordon the master.
In Asia they don't really measure dishes or follow recipes when cooking, they go by taste and experience

Note that rendang seasoning is optional. If GR was cooking in West Sumatra, this made sense because Rendang came from West Sumatra. In Jakarta, most of us use Worchestershire (kecap Inggris) or if Chinese-influenced enough, use fish soy sauce and oyster sauce.
