Thanks 👨🍳 Both ways looks tasty, another way my mom use to make was with dahi. Bhunna baigan, chopped green chilies, roasted cumin pd, freshly chopped coriander, salt to taste, and last but not least little bit of sugar. Served with khichdi.

Also an innovation i have done is to roast the baigan in the air fryer. It saves your effort and gas stove bhi block nahi hota hai. Baigan ka skin easily nikal jati hai.Those who hv Air fryer can try that
