      Can you use regular milk if you don't have buttermilk since you add the juice and zest of the lemons which you can do if you have no buttermilk. That way you won't have to buy a carton of buttermilk just to make a cake.

      @@paulaonyenyeonwu9117 An easy substitute for buttermilk is to take a little bit of lemon juice or white vinegar and add it to the milk to sour it before using it in your recipe.

    Saddened to hear of Maida Heatter's passing. I got her Book of Great Desserts in 1977. Had no experience baking cakes. My first attempt was Queen Mother's cake. Followed the directions. perfect. Everyone wanted the recipe. Two days later I did the strawberry-raspberry Bavarian and my reputation was made!
    I have made over 100 of the recipes and not one has failed.
    I've never made lemon buttermilk cake - but I'm a fan of her best damn lemon cake.
    I wrote a letter to Maida many years ago and she sent me a reply. I treasure that and was so happy learning to bake from the Queen of cake.

    I have 2 of Maida Heatters books, given to me by my grandma and mom. Her cookie book and dessert book. The best recipes I have found when I started baking as a child.

    I have a lemon tree that makes more lemons than I have recipes! And when I make a recipe that has buttermilk in it, we have buttermilk recipes all week long to use it up!

    Wonderful work and many thanks. We used to cream butter using a big ladle or the palm of a hand- we didn't have a whisk or a mixer where we were at that time.

      @@food52 The making went smooth!!! But my bunt pan was a little small so there was a large plop of cake on the bottom of my oven )o;] But i have aluminum foil there so easy clean up (o=]

    When I first went to Finland 50 years ago I was surprised to see the Finns use dried bread crumbs with all their cakes. When I mentioned our using flour they were appalled. Who would want that nasty raw flour on the out side of their cake when you can have toast crumbs,

    Hi. I am planning to try this out. Just 2 questions.
    Can I relplace oil with butter? If so how much oil.
    Have you used fresh bread crumbs or dry bread crumbs to dust the bundt pant? Does it not affect the taste and texture of the cake

      @@food52 Thank You so much. I did bake it at 350 and came out perfect except it was little darker from outside than yours and did not rise like evenly. But it baked perfectly and so soft . everybody loved it :) Thank you this great recipe. It was my first ever cake baking. :)

      I know this was a while back but raspberries are beautiful with lemon. I would use raspberry preserves a thin layer for filing. You could make more glaze but make it much thicker with sugar and use that to frost the cake. Otherwise raspberry buttercream

    Did we ever find out what went wrong with cake#1? Demons is not a satisfactory answer, at least not if the #2 recipe doesn't involve an exorcism .

      It probably didn't look presentable, but I bet it was very delicious. Or the measurement of the lemon juice or milk was off and she had to test bake in till she got the results she wanted, thus the 2nd recipie.

      The original has more flour, granulated sugar, and eggs. The amount of lemon juice is the same in both-3 T.

    All of your videos so frustrating! I watch on a tv so because you don’t make ingredients obvious I have to pause and get my phone and then pull up the same video. Please include ingredients and recipe in the video so I can enjoy your videos on my tv as I do with America’s Test Kitchen and others.
