I don't know about your ranch dip but Tzatziki is made with yogurt, which is fat, and fat does not can. Example, when canning soup it can't contain milk.
@drexldog thanx, yes, using yogurt of course. it is possible but only by inverting the jar into hot boiling water covering only the jar lids, it works 😊

I've never had pickled carrots before so I'm going to try this. Do the carrots get cooked/softened some during the canning process?
Not really. They maintain a lot of crunch.
I was hoping you'd open a jar and show us if they were crunchy after being boiled for 20min.

The recipe I had said 20 minutes. Do what you feel is right for you.

How did you make the brine
It's just one part vinegar and one part water. I add a little salt and a little sugar.
My hubby doesn’t care for carrots but will eat them pickled, go figure lol
