I've never had pickled carrots before so I'm going to try this. Do the carrots get cooked/softened some during the canning process?
Not really. They maintain a lot of crunch.

The recipe I had said 20 minutes. Do what you feel is right for you.

The processing time was from the table from the National Center for Home Food Preservation. Thank you.
How did you make the brine
It's just one part vinegar and one part water. I add a little salt and a little sugar.
My hubby doesn’t care for carrots but will eat them pickled, go figure lolBlessings
