Killing it with this recipe! Berryhill Tamales in SW Houston has the best baja fish tacos in the world and they have a self serve salsa bar with a huge bowl of these style pickled carrots and I eat a big portion of them while waiting on my fish tacos.....

My now closed (years ago) Mexican restaurant had the pickled carrots on the tables. No other Mex restaurant had ever done at that time. I liked the peppers, not a carrot fan. Mi Pueblo, had the best tacos in town. But nobody seemed to know.☹

I have made pickled jalapeños with carrots but when I put the jar in the fridge it doesn’t stay clear juice inside.
What are you using for the brine?
