  • Introducing a video of recipes and how to make “basic chawanmushi”. Chawanmushi may look difficult at first, but if you learn how to strain it with a colander and how long to steam it, it will be delicious. It is a perfect item for both everyday menus and celebrations.

    ■ Cooking time: 30 minutes
    ■ Ingredients (for 3-4 people)
    ・Egg: 2 ・a. Water: 300cc
    ・a. Dashi stock: 1 teaspoon ・a. Mirin: 1/2 tablespoon ・a. Usukuchi soy sauce: 1/2 tablespoon ・a.
    Ingredients ・Chicken thigh: 50g
    ・Shiitake mushrooms: 1 piece ・Kamaboko: 2 slices ・Mitsuba: Appropriate amount
    ■How to make
    1. Chop the shiitake mushrooms and kamaboko, and cut the chicken into 3cm cubes.
    2. Break the egg and beat it well so that there are no lumps of egg white. Add (a) and mix well.
    3. Strain through a sieve to make the texture smooth.
    4. Put the ingredients in the bowl of chawanmushi and pour the egg liquid from 3.
    5. Wrap a towel or cloth around the lid. Add water to the steamer and bring to a boil. Place 4 in a steamer, cover, and steam over medium heat for 2 minutes. Place the chopsticks between the lid and the pot and heat over low heat for 20 minutes.
    6. Pierce the center with a bamboo skewer, and it's complete when clear soup stock comes out from inside.
    ■Tips・Points・By rubbing with a colander, you can remove hardened egg whites, etc., and make the texture smooth.
    ・Wrap a towel or cloth around the lid to prevent water droplets from falling on the chawanmushi.
    ・If the heat is too strong, the chawanmushi will be hard and sticky.
