  • RICE PORRIDGE⤵️
    All 3 of the boysenberries were sick so what better way to take care of them than with a hot bowl of chao- rice porridge
    BASE
    1.5 cups jasmine rice
    8-12 cups water or stock of choice
    MEAT OPTIONS:
    Ground meat of choice- I used ground pork/ chicken
    Shredded chicken
    Salted egg
    Salted century egg
    SEASON TO PREFERENCE
    Fish sauce
    Mushroom bouillon
    Chicken bouillon
    TOPPING
    Scallion, chopped
    Cilantro, chopped
    Fried shallots
    Black pepper
    Bean sprouts
    Lime
    1. Rinse and wash your rice at least 3x or until your water run clears.
    2. Then add your rice into a pot along with 8 cups of water. Turn your heat to high and bring to a boil. Once boiling, reduce heat and simmer for as long as you need too. [NOTE: add water as you go and make sure to stir so the bottom does not burn]
    3. Once it comes to the consistency you want, then add your protein of choice. I’m using ground pork??? Or maybe It was ground chicken/ turkey.
    4. You’re porridge is a blank canvas so season to preference. I like to season with: fish sauce, mushroom bouillon and chicken bouillon.
    5. Once everything tastes good, then assemble urself a bowl with scallion, cilantro, fried shallots, black pepper and whatever ever other topping you’d like.

      Crack an egg on top and whip it in at that heat for a stick to your ribs meal. Time spent cooking the egg will also cool it down a tad more.

    I like my chao loaded up with crumbled boiled egg, homemade garlic chili sauce, fried shallots, sliced scallions and cilantro. Mmmm!!! And you need the quay (fried breadstick) to dip it in.

      Saffron is ridiculously expensive. From what I gather, most of us Filipinos use safflower (kasubhâ), which is way cheaper and gives a similar orange-yellow tinge.

    One of my favorite comfort meals. My mom would make this for me when I had the cold/flu. Always made it for me when I was diagnosed with cancer at 18 because it’s so easy to digest. At 31 now, I make it for my 3 children. This morning I woke up feeling under the weather telling myself “I’m gonna make khao piak (rice soup in Lao) for dinner.” Gonna do shredded chicken from a rotisserie. Got some cilantro and lime, fried garlic, and chili oil. Love your content! Wish we could meet. We both like our food stupid spicy.

    I love this so much. You can also sautee ginger in a little bit of oil with the meat, IT IS A GAME CHANGER. Our climate is approaching the rainy days and this will be a frequent recipe in my house again ❤

    You can also add ginger, it taste even better and it’s really good. And ginger is very healthy. You should try 👍 here in the Philippines we call it Lugaw (porriage)

    Something we do here, we chop some garlic, fry them in a pan until golden and drizzle with the oil. Also, you can add some crispy rice treats (the thicker ones that need frying in oil)

    I made some today but I used sesame oil instead of fish sauce because there wasn’t any at Walmart. I topped it with rotisserie chicken that I browned and seaweed. It was so delicious I can’t believe I made it myself

    Scallions.. and that hurt me on a personal level. Top tier garnish. I am far from the biggest fan of cilantro. I actually think it taste like chemicals, but I find it to be a very benign flavor in combination with others.

    Dominicans have a dish similar to this that’s called asopao’ and I can confirm it does cure hangovers and amazing in colder months. We usually don’t put ground meat but the basis is the same, rice and water and condiments.

    This was my fave growing up. In the Philippines, it's called arrozcaldo. Love adding patis, fish sauce, with white pepper and fried garlic. Oh and it must come with an egg. In ecuador, there's a similar dish called aguado. It's almost made in the same way minus the fish sauce

    One ingredient that is very important for the healing properties of this dish is the black pepper. The black pepper just makes the soup. Period. And depending on what you’re treating, sometimes it’s a case of the more pepper, the better (within reason).
