    Hi guys! I'm back!!! And I'm happy to be back in the kitchen whipping up new recipes. This butternut squash soup is delicious and perfect for Thanksgiving.     I just made this and it is DELICIOUS! I also took some advice of things to add from the comments like roasting the garlic and using coconut milk. One of my favorite soups!!!

      I sautee garlic and onion and add to the blender then. Have digestive issues with raw onions and garlic. And the soup turned out so delicious.

      Hi, the coconut milk sounds like a good idea, I didn't see that comment. How much coconut milk do you add? Also do you still add the butter to it when using coconut milk?

    Delicious! So my mother in law just taught me to pop the butternut squash in the microwave for a couple minutes before cutting. It really takes the fear of “I might lose a finger” out of chopping process!

      @@rijaheda5121 I think it ws about a minute on high. (Yikes, I should have written it down) . Just enough to make it slightly easier to cut, then proceed to roast it as per the recipe.

    Fun Fact: Use a ice cream scooper to scoop out the seeds and guts :) It works really well with pumpkins too! But I always use the ice cream scoop for all of my melons and squash :)

      I use a grapefruit spoon to scrap out the smaller ones. It gets those stringy things out really good.

      I use the scooper/scraper from my pumpkin carving tools for winter squashes. Removes seeds with ease. (Late reply - I know. Just found this channel.)

    Nice. For more depth of flavour, roast the garlic too (with the skin on). Just remember to remove the skin before blending.

      S F I send another video where they roast everything then shimmer the whole thing with the stock for like an hr.. I bet really develops so much flavor

      @@sams517 With recipes such as this you would add the ingredients "TO TASTE" & preference. Be sure to taste as you go.

    Thank you for the receipt, in the future for easy cutting or peeling, use a fork fork the skin 6 times around it, then microwave 3min. pull out peel very easy to cut also.

    I make a variation of this with roasted red peppers in the mix, bacon and goat cheese as garnish. SO good

      What kind of red peppers? That's what I was looking up recipes trying to find out, actually. :) I saw a British recipe that just said "mild red chillies." But I'm in the US and there are a zillion kinds of chillies! And most of the red ones are hot. When I went to the grocery store, the employees also had no idea.

    I like it with coconut milk, after the broth- which I like the flavor of chicken bone broth better than vegetable broth. I put a whole can of full fat coconut milk. AMAZING!

      @@mauricegranger3788 after the broth. Stir in the broth and then the coconut milk. Most of the time I even add an extra cup since I love the flavor. It’s so rich! 😁

    Yes, I liked. I use an immersion blender because it's so much easier and I add pine nuts and lots of butter. Swirl of cream at the end. Oh ya and a small dash of curry back in the blending process. My family's favorite soup. Edit: Yes, it has to be roasted. Adds so much flavor. Don't you dare just boil everything!

    Welcome back! This is how I always make pumpkin soup. I also add a carrot and a small sweet potato for added flavour. Yours looks so smooth and delish!

    A friend and I were at an Austin cafe had the best butternut soup the waitress said it was made with vanilla yogurt butternut squash maple syrup all spice and chicken broth. Combined in blender and then heated. They served it with a Pistachio Biscotti stick my friend said she could eat a bucket full it was so good.

    I make this few times a year when I'm in the mood of comforting warm relaxing soup and this always hits home. 😌oh I added chicken broth and corn syrup cause I didn't have honey or maple syrup and it was still so good!

    I have to say this is amazingly delicious. I’m from Puerto Rico and I like to try different foods. I just made it! Holy cow!!!! I can’t imagine how is going to taste tomorrow. Even better!!!! Thanks so much for your healthy recipes. Best channel ever that I have found.

    I loved this recipe !!!! and riffed off it a bit but followed it in principle. I roast sweet potatoes and winter squash anyway and tried your method; highly recommended also your spice blend, I did however caramelize onions on very low heat on top of stove because there was enough time and got used to doing things that way no real reason; added frozen spinach and fresh basil because it was there ... didn;t need the maple syrup but Canadian so go for it guys. .... I am supposed to be vegan but cheat once in a while .... not necessary!!!!!!! i used olive oil because it was at hand and red lentils for protein which is easy to do and seasoned to taste. I like using miso paste for salty umami flavour in the veg broth, or use Better than Boullion in which case watch out for the salt depending on your health and palate ..also ground porcini mushrooms or nutritional yeast ... you really can do a lot with this idea and drive my favorite comedian Dylan Moran completely nuts. TX!!! Great autumn soup as thick or soupy as you choose. DEFINITELY spice choices great; I love ginger; added some turmeric and cumin because my version was getting exotic but I love messing around in the kitchen and think original recipe perfect.

    Your recipe has been the EASIEST butternut squash soup recipe i've seen thus far. After the blender i like to put everything on the stove once to add more spices and stuff but all other recipes require a handblender which i don't have. Really appreciate your more versatile recipes like this which are great for everyone to use

    I grew a butternut squash plant this year, but owing to the cool rainy climate here, I only got one, and its pretty small compared to yours (250g). Still, it'll be my first time cooking squash and that should be fun. Will definitely have to fill the soup out with plenty onion, and perhaps carrots too, which I've also grown :)

    Thank you for this recipe. I enjoy butternut squash but not the preparation. I cooked it this way, roasting it first with the onion which made it so much easier! I don't have a food processor or Vitamix so I used an immersion blender. I eliminated the butter and maple syrup to fit my dietary needs. It was so delicious!

    Made today for the fifth (or maybe sixth) time. My guests are in love with this recipe. And I am in love with this recipe. I am baking garlic and add it later so it is not that strong. And from time to time I could add baked yam to give additional sweetness. Cheers

    Thanks for the tip of roasting in the cut side down. I always did it the other way and found it burnt the squash flesh but the skin is still extra tough.

    I made this and I love the recipe. One thing I did was I deglazed the pan after the butternut squash was done roasting capturing all that roasting flavor and i put that in the blender (instead of plain water) along with the vegetable broth. It was really delicious.

    I always leave the peel on the squash. The Vitamix can blend it out nice and smooth, and you get that extra fiber in there! I’ve never thought of roasting the onion, though. Yum!

    Loved the soup recipe. Looks delicious!!! For time saving, I cut the squash and put it into crockpot. But it probably doesn't get the roasted flavor you do. See you next time;).

      ...watched the UTube on Panera Bread butternut squash soup made in a crockpot, made it yesterday and it was excellent! Just a few different ingredients. Next time I'll definitely try roasting the veggies instead.

    I did make the soup and it was delicious. The only thing I did differently was I use vegan butter, roasted my garlic and used my submersion blender. It was fantastic. Also I didn’t have ginger powder so I used a fresh piece of ginger.

    I made this tonight and it was delicious. I didn’t have nutmeg, but added cinnamon instead. I didn’t need the butter and used 3 cups of broth. I think next time I’ll only use maybe 2.5 cups of broth since I like my soups thick. Thanks for the recipe. 😊

    Holy Moly, this is delicious! I have HUGE Banana squashes from my garden (very similar taste to butternut) and I just made a triple batch for lunch and to freeze dry. Since you noted that the garlic was a bit too much, I roasted it with the onions and it mellowed it enough that I did an entire bulb. So glad I discovered your channel, our Montana garden did so well this year that I'm excited to try more of your recipes! Thank you :)

    2:35 - Note to Self: 30 Mins 425F. Flip ButternutSquash another 30 more mins along with adding Onions.

    I find it peels right off just grabbing the skin if u let it sit for half hr so u get less waste. Also a bit of turmeric as a condiment to a bowl full tastes great. Gotta check out your baba ghanouj recipe. I love baba ghanouj or eggplant in so many different ways like eggplant parmesan

    Tried this today, I overdid it with the garlic and substituted the vegetable broth for chicken broth because that's what I had available. Nonetheless YUM!!! Thank you for this recipe 😃❤

    Someone always told me if you're making squash soup to also blend the skins of the butternut squash as they have a lot of nutrients. If they are roasted or boiled first you can't taste them :)

    Tried this recipe tonight & must say, came out delish!
    However, I used olive oil instead of avocado oil
    I roasted 3 cloves of garlic (skin off) along with the onion
    I added 1 TBSP of Maple Syrup & opted from vegetable to chicken broth instead (I used a container of store bought chicken broth)
    After i blended, I melted about 2 TBSP of butter in a small pot, and reheated the soup

    In the past I've made a similar recipe. But I've added celery to the soup and instead of vegetable broth chicken broth is really amazing as well.

    This is a nice vedio, I love butternut squash and I bake and serve it with butter a little bit of cinnamon. I will try your soup, we are soup lovers here in Texas when it is cold.

    Your method is so simple and easy. I make it this way bc i love the flavor of the roasting, but i flavor it more savory rather than sweet. I usually roast it with Rosmary, add Chicken stock, half&half , garlic salt and pepper garnished with a drizzle of olive oil. Soo good :)

    I tried this recipe and while it’s cooking, I separate the seeds, pat them dry after rinsing, mix in a small bowl with olive oil and sea salt. I roasted them in a toaster oven on aluminum foil until season start to crack.

    In Israel, they usually add sweet potatoes and carrots to that, which gives it a more creamy texture rather than squash alone.
    You can also add to that coconut cream, I also add one or two cooked potatoes. It tastes much better with them.

    I went to Israel and Jordan this summer, the food was DELICIOUS!! I discovered lentil soup there and it's amazing with some bread (I'm French so French bread for me). I have tried one with red lentils and it was really good, but the ones I ate this summer were green soups. I may have to do some research on it, but if you have a recipe I will gladly try it :)
