Watching this, as a 62yo, makes me miss my years behind the line. Cooking great food for everyday people. Working with good friends who took pride and joy in their work. Best years of my life. 😊
I think it was one of the best pieces of a cooking show on YT ever. I'm a line cook for the past 12 years and this banter just puts a smile on my face.
That was great! No suspenseful ad breaks, out of context close ups or bash you over the head product placements. Could watch a whole series like this. Thanks
I am so glad chef Lambert mentioned his lamb trimming technique. It is a really good showcase of the right tool for the right job. Uncle Andy used a nice sharp deboning knife with a thin blade and good slim curve for finesse work. Lamb used a chef's knife that even sounded a bit dull (sabotage from maybe Mitch or Babe?) when it cut through the sinew
I agree with the chefs, celery is a basic pantry staple. My family, of Italian heritage, uses soffritto (essentially mirepoix with Italian herbs, and sometimes bit more) as a basis for stocks and soups. You have mirepoix, a classic of French cuisine and found often in other Western cuisines, and you have the Cajun spin on mirepoix: "The Holy Trinity."
Absolutely! It's amazing how many cultures use the same basic veggies when making stocks, soups, & sauces. They may refer to it by different names but it has the same ingredients. Hispanic cuisine (South & Central American) uses 'The Holy Trinity', as do a lot of Caribbean countries.
I use celery in a number of my bases and salads, but not enough as I frequently end up with some drying out and getting old in my fridge. I need to come up with more quick and easy use up recipes.
Not often I stop watching a UA-cam video on my phone because it deserves to be on a much larger screen. Watched this on a Saturday morning on my lounge TV with a cup of tea in hand. Perfect
An awesome video seeing you both so casual and looking so "at home"! A good laugh and a couple of very nice looking feeds. As always, keep up the great work!
I think this is my favourite video you’ve done Andy! The chemistry between you too as chefs and mates is unmatchable!! Look forward to another video with you two!
Thank you gentlemen! Splendid cook off: great seeing the thought you gave your dishes and flavors , and then the execution. Also thanks to Mitch and Cait for the commentary on the judging criteria. All in all most satisfying !
This was so inspirational. I loved seeing your thoughts at the beginning with just a bunch of ingredients, and watching them slowly evolve into beautiful dishes. Artwork on a plate, epic stuff!!!
Hey Andy, Thanks for this incredible video and having Chef Matt over. This is the most engaging, passionate, chilled-out and candid food conversation I have heard between two Chefs in a looongg time. Some parts, I was just listening to as if a beautiful podcast about food. Again, thanks for doing this. Hope to see more of Chef Matt. Cheers!
I've been a big fan of your channel for quite a while now, and generally prefer the shorter videos, but this was awesome! Seeing the chemistry between you guys, and the quality of the food that you produced! A really great episode, thank you Kind regards Rob 😀 🇳🇿
I like the format of this video, a low-stress and slower paced video that shows more prep as it happened with a kind of podcast element. I watched this while working on a craft project, learned some about professional cooking, some techniques, and enjoyed the anti-tiktocified energy
Please do more long videos! I prefer this kind of content and hope I’m not alone because while your shorts are good as well I love hearing you have longer conversations and interactions!
I loved watching this Great to see the definition of home cooking and restaurant cooking played out on the screen: one is fun, enjoyable and wholesome; the other is stressful, chaotic, but might produce a better score. Both have their place in the world. I'd watch this format of Andy and another cook again and again and again!
Normally on UA-cam I don’t care for longer videos but this was top notch, educational and a great perspective from both chefs. I would love to watch more videos like this!
Love this format! More from time to time - or even more frequently - would be awesome! The dishes looked great - such creativity. Reminds me of an older series called "Knife Fight"!
This video highlights what it means to “get” cooking vs what it means to “get” food. One chef’s dishes nourish the mind whereas the other’s, the soul. Because it’s not just about the food. It’s about the stories we tell. And those stories live on.
I really enjoyed the conversation about acids vs herbs. It made something I've been feeling about my own cooking click. Can't wait to put it into practice
I believe Silverbeet is known in the States as Swiss Chard, whereas Cavolo Nero is a type of kale with blue green daggers of a leaf, otherwise known as Lacinato or Tuscan Black Kale.
Oh wow 🎉we love your channel but this was another level. So good to see two great mates and fantastic chefs cooking and talking together. It was absolutely brilliant. It wasn’t about who won. The show was absolutely the winner. So good 🎉. Next time you two get together to cook or even chat I would love to be a fly on the wall. There’s obviously great respect and even greater friendship. As I said best episode ever 🤩
Bravo. This vid makes those faux competition cooking shows pale in comparison. Helping each other, making suggestions and chatting about what you're both doing is a fantastic collaboration. It's a great insight because you have two pros asking questions of each other that we viewers would never think to ask and questions you might not think to answer in your solo vids.
This was brilliant! Nailed the shoot with the few extra little questions so we knew what was going on, the chemistry was awesome, and nailed the editing too, perfectly paced!! More of this please!!!!
That was a longer video than I'm used to watching, but I enjoyed every moment of it. I don't normally comment, but this was brilliantly edited to keep attention as well as make it funny and interesting. Amazing dishes!
New subscriber🎉🎉🎉 These guys are the bomb❤ I absolutely love cooking so I've watched a few of these videos and I just like the technique style and to try something different
Really lovely to see. Seems like proper craftspeople are still able to beat the less important stuff on the socials. Thank you two for this, lots of love from NL❤
Awesome video chef, love this style of content. Awesome getting to see different chefs doing what they do best in there own way. Loved seeing someone as creatively talented as Matt.
I like chunky purees with my proteins. The variations in texture make the whole meal more enjoyable. I never knew about resting proteins after cooking until I started watching Chefs on TV & videos. The resting process not only allows the protein to reabsorb its natural fluids but it also continues the cooking process. So, if I want my protein at a final 165F, I stop cooking it when it reaches 160F. I use a thermometer on all of my proteins except scallops & shrimp; I can tell when they are done just by looking at them. I loved this segment because it shows how different people approach making a meal using the same ingredients. My Mom made the same things, the exact same way, every time. After a while, I got tired of eating what she cooked because there were no variations. Once I started cooking for myself, & started using veggies, herbs, & spices I had never heard of before, & I experienced a whole other level of eating & tasting foods; it's wonderful.
They say you eat with your eyes !I was salivating looking at Matt's 3 dishes...Andy's was good as well but for me Matt 9.5 and Andy 8.75 based on presentation! 🤤
That was amazing! I would love for you guys to make a series outta that one! Andys cooks off ? I love your channel and you have very much grew my passion for cooking and fresh ingredients ❤
This is a fantastic idea 🙂 Chemistry is awesome, the banter is to die for, Mitch & Babe being brutally honest on stuff is very nice... Makes me want to just sit at your table and enjoy the vibe!
Really enjoyed watching this with the stories and banter inbetween. Also learnt a bit about cooking techniques from hearing you two talk about cooking!
Yum, I would have enjoyed any/all those dishes. The obvious chef/friendship chemistry in this one was so good. The creativity and calmness when given a bunch of ingredients and a time limit and it all comes together so well. That’s when you can tell the difference between highly experienced chefs who know their craft vrs a home cook. 👍. cheers guys 😁
Guys, I am not a chef. I am a teacher, but what you say resonates with me, I have alwayse been there before my shitfs an hour early to prepare my stuff. And sometimes, that was even about cooking. I am an English teacher and I often cook wiht my pupils. Love you guys, keep up the great work!. :D
We absolutely need more of these types of videos! Long form pure cooking, great vibes and banter.
Yep, most definitely. Now I wish it was even longer
Yes
The chemistry between this two is top draw 🤣 great vid chefs x

@@purpleaki06 bet you’re fun at parties (no one talks to you)
Thank you, we had a lot of fun filming this video so I'm glad you enjoyed watching it.
Sharp editing helps too
Need more

Great times and memories we'll keep forever!
Wholesome comment
nice one phil 🥰
I think it was one of the best pieces of a cooking show on YT ever. I'm a line cook for the past 12 years and this banter just puts a smile on my face.
This video just felt like friends cooking together, talking casually, and making good food. Was an absolute pleasure to watch.
I love how the rules were more and more ignored as the cooking went on. Kitchen staple? Eggs are a staple, let's add some caviar.

The best thirty minutes I will spend this weekend! Thanks guys and you make me proud to be a Kiwi
Thanks legend, really appreciate that!

I think the banter was off the charts! great video!!!
So glad you enjoyed it in Spanish! We go through a company that uses AI to dub my voice into Spanish so it sounds similar.
@@andy_cooks Spanish?!

That was so relaxing overall. Just two chefs making culinary jazz and enjoying each others company.
Culinary Jazz! Love that!
Definitely one of the most entertaining cooking videos I’ve seen in a while… hearing the thought process is phenomenal

I love that you had two kiwi's cooking Lamb! So nice to hear the banter about NZ & your love of cooking. I enjoyed this video alot!
I would literally watch a whole series of this. I've never been less stressed when thinking about cooking.
I think this is my favourite video you’ve done Andy! The chemistry between you too as chefs and mates is unmatchable!! Look forward to another video with you two!

The format works, I like the dynamic between Andy and Matt, and I like that Mitch is branching out
Couldn't stop watching. Great video guys. Such a refreshing way to watch people cook. Two bros hanging out, chewing the fat, good times and good food.
You two lads are top tier awesome. Really enjoyed the banter and chemistry. More.
Loving this. So much energy and information packed into the banter
You should collab with the Sortedfood boys for more mystery box shenanigans.

Awesome, thank you!
Andy really liked the format of this unscripted organic fun two mates cooking having a chat and the banta!
What a great format. Definitely more of these cook off’s please.
Love this format, the banter is A+. Also love how you keep experimenting with format, also A+
Great video. I'd love a video of you on Back of the House reacting and explaining the chefy differences between you two
I like the format of this video, a low-stress and slower paced video that shows more prep as it happened with a kind of podcast element. I watched this while working on a craft project, learned some about professional cooking, some techniques, and enjoyed the anti-tiktocified energy
Would be a cool series if you interviewed chefs while cooking off against each other in these challenges.
This. It makes too much sense and would be a great long-term idea for viewership and inspiration.
Please do more long videos! I prefer this kind of content and hope I’m not alone because while your shorts are good as well I love hearing you have longer conversations and interactions!

A lot of fun to watch this one, both dishes look delicious!

Great vid. Love the concept, collaboration and very healthy competition between you both!
Loved the longer video .I like this new take and as always love to see Andy do what he does best ❤

Because it’s not just about the food. It’s about the stories we tell. And those stories live on.
Great duo - hope to see more vids with matt
This should almost be a series. Mystery box against famous chefs - other youtube chefs. Really enjoyed this!
Fantastic show guys loved watching you cook together, the banter, dishes, one of your best
Really enjoyed the chemistry and the discussion. Very nice format for a video with many different interesting facets to it.
That was a great watch guys. Two fabulous chefs just all in trying to out do each other with a fun friendly vibe. Food looks delicious. Love it.
Glad you enjoyed it
man this is like an NYT chef feature mixed with a chopped episode, without the stupid dad jokes and fake reality tv nonsense. LOVED this format
I loved the banter between you to. You should do this with more of your chef friends. This was dope
We need more of these two together.... Loving it!!!!
Loved this! And would love to see more videos at this length!
Matt Lambert swears like Gordon Ramsay. We must protect him at all costs.
This video was MEEAAN!!. The chemistry between you guys was solid!
I really enjoyed the conversation about acids vs herbs. It made something I've been feeling about my own cooking click. Can't wait to put it into practice
Great episode fellas! It's rare for me not to skip ahead in a 30 min video but this is one I watched from start to finish. Well done.
I believe Silverbeet is known in the States as Swiss Chard, whereas Cavolo Nero is a type of kale with blue green daggers of a leaf, otherwise known as Lacinato or Tuscan Black Kale.
Yes. We don't call this Cavolo Nero in NZ either🤷. Cavolo Nero is definitely a kale to us too . Sliver beet is should have white leaf stems.
This. Cavolo nero is a brassica, completely unrelated.
@@karohemd2426 Yes.... so is any kale. and all chards are beets. Hence the video being wrong.
Also seen it called dino kale lol

I could watch Matt and Andy being kitchen brothers all day. Amazing talent couple with fun and witty back and forth.
The chemistry and general food/restaurant chat in this video was fantastic - please get Matt back on for another video in the future!
Man the vibes are premium on this. 10/10 for content.
Matt is so knowledgeable and humble. Would be great to have him on again!
He's a legend!
Awesome vid. Just watched it while prepping dinner. Such a chilled atmosphere, so much fun! I'd love to see some more of these videos!
I love the competition between you two. Great video.

This was fantastic. Loved the chemistry between these two.
This was great! Love to see friends having fun while cooking together
I have to agree with Mitch, on Andy’s presentation. 7.5 is fair, because Andy was going for a rustic presentation.
1:13 Chef Lambert had Andy sweating 😆 Great video as always Andy!
This was such a fun episode to watch. How refreshing to see a fun light competition amongst friends
This was a great video. Fantastic food, charming banter, and lots of technique-y stuff sprinkled on top. Well done!
That might have been your best video. Your really on to something with the format of a competition/interview/hang. Very well done.
What a fabulous video. It's always great to see two chefs create different dishes from the same ingredients. Awesome banter 🎉
Another fabulous entertaining and informative episode with Andy and Babe and all the team!
This was just great fun to watch. A lot of great tips were slipped in, and the warm relationship shone warmly through it all. Great video guys!
