First xmas in my own restaurant the power to the town went down after a storm, we had redirected calls from very early asking if Christmas dinner was cancelled... we cooked on gas so it wasn't, much to the delight of ALL the patrons... the best part for me as the chef was there was little to no pressure on me.. people were happy to get fed in candle light. The power came on just before coffee was being served and most of the customers shouted " turn the lights off"
Love the term 'ANZ accent'.Think l'm going to start calling it that too. I know Andy's a Kiwi but, lMO our 'middle ground' accents seem to be getting closer to each other. Sometimes it doesn't matter how long l listen l just can't tell which side of the ditch someone is from. 😊

Made the roast beef and the potatoes. Beef was an absolute winner - loved by everyone and I will be doing it again next month because it was too nice to only have once! I cooked it to well done and it was tender and melt in the mouth. Thanks so much for the brilliant breakdown on timings - it was very helpful!
Awesome video Andy! Everything looks delicious! In Germany, we always roast a whole Goose on christmas day. In our family, the goose is stuffed with dried plums, Apples, chestnuts and the innards of the goose. The meat is served with a delicious gravy, Potato Dumplings and red cabbage. The fat from the goose is saved, and we use it as a spread on our delious german bread or to make fried potatoes (Bratkartoffeln). The presents are always opend on christmas eve. On Christmas eve, we always have Bread with good charcuterie, and cheeses. We also eat salads. One very traditional german food on christmas eve is the heringssalat, a salad with hering and cooked red beets. I love our christmas food, and its always fascinating to hear what other cultures like to eat this time of year!

Since it’s for only three persons I do two or three different meals over a few days, starting with the feast of seven fishes on Christmas Eve. My Christmas prep started today. Got my 1.3kg crayfish out of the freezer, in the fridge to defrost for a meal on the 23rd. My family always has cold food and salads for Christmas.

Andy is one of the most wholesome and down to earth food related content creators on UA-cam. It's good, simple, honest cooking that you can easily follow along with at home. In my opinion, he is the future of what the general public has coined "celebrity chefs." It's nothing like Gordon Ramsay, which is very explosive, to the point, and hard to follow along with, almost as if Gordon is leading a service in a professional kitchen, not teaching someone who simply enjoys cooking at home. Andy is concise and takes his time to explain each step in a way that someone who isn't a professional chef will understand. I've cooked a few recipes of Andy's and had success every time even managed to get my children eating them as well, which is amazing as they are both picky eaters.
This is absolutely fantastic, real and explained. My girlfriend suprised me with your book for my birthday after she noticed I was watching so much of your content. It's helped me really level up my cooking! Highly recommend Andys book to anyone! Keep it up 👌🏻

As an Australian we never have chicken or beef at Christmas. We have Turkey and ham and prawns, and I think most people I know do this too. We also don't have it hot but cold with salads. I think this may be more New Zealand Christmas? Or maybe Queensland? What do other Aussies have for Christmas?
@keenahudson1853 America does Christmas dinner different across the country. I'm used to lasagna on the east coast. I live just above Texas, and it's usually smoked meats. My MIL loves me and is making lasagna. Yes, I'm Garfield the cat as a human! 😆😆😆
My Australian family never do Turkey for Xmas. Sometimes roast beef, but usually roast lamb and chicken. I think it just depends on the Family tbh. Super hyped to be hosting my family this year for Christmas! I've rehearsed pork belly crackling 4 times to dial in a method and settled on the Cantonese method. I've also gone full hedonist and my "Roast Potatoes" will be deep fried! I'm woefully slow in the kitchen but thankfully I know my brother and mother will show up and be delighted to assist. Andy's professional workflow skills really show here. 😆 Also I thought the thin gravy was probably deliberate and at risk of being labeled a heretic I appreciated it.

Missed this last year but thank you for making a Christmas dinner that shows how calm and relaxed it can be. As the one who does all the cooking for any big family function I've never understood why everyone makes such a big deal about it. Sure its a bit of work but even a halfway decent cook that is confident enough to know what can be done ahead of time and what can be left alone and what needs attention when can pull it off without a panic. That being said I've also learned that if anyone cares enough to comment negatively about something they're welcome to do it themselves next time... so far no one has taken me up on my offer lol

Absolutely delicious the potatoes cut them in half after you peel them boil and par fry them on the stovetop and season and finish them off in the oven that’s the British style of cooking them and how I grew up eating them they’re called roast potatoes delicious. You did great and so organized too

Super hyped to be hosting my family this year for Christmas! I've rehearsed pork belly crackling 4 times to dial in a method and settled on the Cantonese method. I've also gone full hedonist and my "Roast Potatoes" will be deep fried!
I'm woefully slow in the kitchen but thankfully I know my brother and mother will show up and be delighted to assist. Andy's professional workflow skills really show here. 😆
Also I thought the thin gravy was probably deliberate and at risk of being labeled a heretic I appreciated it.

Missed this last year but thank you for making a Christmas dinner that shows how calm and relaxed it can be. As the one who does all the cooking for any big family function I've never understood why everyone makes such a big deal about it. Sure its a bit of work but even a halfway decent cook that is confident enough to know what can be done ahead of time and what can be left alone and what needs attention when can pull it off without a panic. That being said I've also learned that if anyone cares enough to comment negatively about something they're welcome to do it themselves next time... so far no one has taken me up on my offer lol

Absolutely delicious the potatoes cut them in half after you peel them boil and par fry them on the stovetop and season and finish them off in the oven that’s the British style of cooking them and how I grew up eating them they’re called roast potatoes delicious. You did great and so organized too
I respect you doing this over a week from Christmas so i can borrow some tips. Its means you've done this recently and will maybe do it again at Christmas.
