- I am so glad to share with you an amazing Norwegian cake, called Kvæfjordkake - or Verdens Beste ( World's Best Cake) that is absolutely delightful. This cake consists in two layers of soft vanilla sponge cake topped with crispy baked meringue and toasted almonds filled with a smooth and creamy vanilla custard and whipped cream. No wonder why this Norwegian cake was named Verdens Beste meaning the World's Best Cake as with its great flavor and texture it is truly a delightful experience.

Ingredients
Makes about 10-12 servings
Vanilla Sponge Cake
6 tbsp (80g) butter, room temperature
1/3 cup (70g) sugar
3 egg yolks
3 tbsp (45ml) milk
1 tsp (5g) vanilla extract
2/3 cup (80g) flour
1 tsp (4g) baking powder
1/4 tsp (1g) salt
For Meringue
3 egg whites
1/4 tsp (1g) salt
1 tsp (5ml) lemon juice
3/4 cup (150g) sugar
1/2 cup (40g) almond slices
Vanilla Pastry Cream
2 cups (480ml) milk
1/2 cup (100g) sugar
1/4 cup (30g) cornstarch
1 tbsp (10g) flour
3 egg yolks
pinch of salt
2 tsp (10g) vanilla extract
1 1/4 cup (300g) whipping cream
1/2 tbsp (5g) gelatin powder
2 tbsp (30ml) cold water
For Decoration

As a Norwegian it was fun to see this cake featured. I’ve never seen it made as a round cake (we make it as a sheet cake, cut it in half and stack one part on top of the other with the custard in the middle), but I actually think I’ll start to follow your example as it’s always a hazzle to find a dish for the square cake. I hope you’ll keep looking into Norwegian cakes.
Yes.. I know this is usually made in a sheet pan, cut in half and then stacked one on top of the other.. but I I wanted to make it in a round shape as I find it more aesthetically pleasing and easier to slice :) I really enjoyed making the cake and everybody loved it .. made it for a few times already :) my new favorite

I posted two days ago that I might try this for my birthday party today. And I did!! It was awsome: without a doubt the most professional cake I have ever baked in my life. A lot of steps and it takes time waiting for the custard to cool, but so worth it. Thanks!

Cool the custard in a water bath or slip it back and trough a two bowls then it will chill faster. Yes as a norwgian we always make krasjkaka as a square so it last a 20-30peoples at the party but this looks great too. Gonna do this when i have a small party and making it vegan :0)

This Cake looks delicious! My Mother in Law loves to bake a sheetcake, which has red currant mixed into the meringue on top. I might combine these two as i imagine that little sour kick would taste delicious with the almonds and the vanilla custard. Thank you for this aesthetic video

As a Norwegian I can only say that I despite the way you made the cake. In a round form?! And the plastic around it makes me wanna cry
You are the first Norwegian that is saying that:) I've made it round because I personally think it looks more elegant this way ... but that doesn't affect the taste.. and that "plastic" is just an acetate sheet that is usually used when making cakes and it makes the removal of the sides of the pan much more easier. (Acetate Sheets are plant based products.. in case you didn't know ).
Looks almost identical to German Himmelstorte, except there is whipped cream and a layer of berries inside, and the lower layer is not flipped upside down. I will try this one as well, thank you very much for the recipe .

You can adapt the ingredients for a 18 cm pan.. u can use the rule of three in math..it’s very easy

I made this cake it is so delicious, I dont know what I did wrong though as the custard didnt set enough for me. I left it overnight. Do I need to add more gelatine.
