    Pickles is lowkey the smart one. If it's too perfect, the inspector will start digging for stuff to find. This way, you get a small demerit out of the way and he feels satisfied in his job. So while everyone was grumbling at Pickles for eating in the kitchen, he was saving the team.

    One of my family friends was a health inspector and she said she could always tell when she was being stalled but didn’t really care, because if your restaurants health code violations can be fixed in five minutes then you’re running a pretty solid business

      That sounds pretty reasonable. Easy to fix 'hey yeah take the trash out' or 'break out a new glove box', not so much possible to hide the rats and get rid of the eight pounds of rotten tomatoes.

      I feel seen. Sometimes back of house likes to downplay what the front does to raise their tips and protect them from assholes (it's usually based in masc sexism, I've never copped this attitude off women in the kitchen - they know perfectly well how some well placed flirtation can raise everyone's tips or give you a five minute head start) it is a genuine pleasure to come across someone who gets that we're a team.

    I literally saved the butts of the last kitchen I worked in. Went on a break and ran right into the health inspector at the store next to us. I knew we were next, spun my pregnant butt around and flew into the kitchen with the news. Actual panic ensued.

      Sounds like she was a back of house employee and knows that health codes are literally impossible to keep so she wants to do as little work as possible and go home. One fine dining place I chefed at our owner just paid our health inspector to leave us be. We had quite a lot of questionable items on the menu but that was simply because we would actually reuse our food.
      Say we had lobster for Wednesday, by Friday it'd basically be unsellable on that form, but no fuss, we have lobster bisque as a side dish or main by Saturday night service.
      It's quite impossible to follow actual food guidelines. If businesses had to love legit by those guidelines you wouldn't have restaurants lmao. So impossible. You'd have to soend so much on labor to constantly keep things cleaned.

    My first experience with the health department at work was so memorable. I hated that place so much and I knew it was in fact not up to code. My manager was off doing something and my older coworkers were working so I happily took the man wherever he wanted to go. The city owned and managed the building so I figured they needed to learn a lesson.... plus it was pay back towards my boss. She wasn't happy, but boy was the rest of that summer a quick one

      @Madeleine Price considering the place was in violation of many codes and the management was well aware and didn't fix it, I think it was called for. This job was at a pool so cleanliness is rather important. Bathrooms and locker rooms were just rinsed down with water because we didn't have cleaning products to sanitize anything, the pool deck was rarely cleaned, the filtration systems we discusting and were so old they actually ended up exploding a week before we were supposed to close, and the floor of one of the locker rooms was caving in. They knew all of this and didn't make any effort to fix it.

      @lil saphy💚💙 very. Between the condition of the building and the work conditions, that job was a red flag and a half.
      I've talked about the condition of the building and the god awful management, but the actual work was terrible. I was the only cashier on the sketchy side of town (dozens of burglaries, crime, and hundreds of homeless people and low income families) and the chances of me getting robbed were so high wasn't given a cash register, I had a box with no lid. My counter wasn't cut off from the public so anyone could walk back there at any time and do or take what they wanted. I had to open and close everyday and the room in which I did that had an open window which was next to the only counter. Again, anyone could walk up and take the money or hurt me at any time. I in fact actually had people grab at the money before and had it not been for a co-worker walking by I would have been robbed and possibly injured. My manager was so bad at his job, I had to start the incident reports whenever something happened and I was the one to prepare anything the guards would need; med kits, back board, and always had 911 ready. On top of that, which was not in my job description, I also played manager and had to watch the deck when there wasn't people at the counter. Even after I clocked out, it wasn't over. The walk to my car was the worst, it got so bad I ended up having to ask the male life guard to walk me to my car. Every other day someone would be around the employee lot and would wait for us. I went out there one day and a man cracked out on God knows what was standing on my co workers car holding a spoon and threatening to stab me if I didn't give him my number. A few weeks later the same man came in trying to get me to trade rings he'd stolen so he could come in and take a shower for free. I told him no, he got mad, threw the rings at me, bought a coke and left. Not even three hours after that I had to call the police because a different man was watching the children swin while wearing a dress made of toilet paper. Upon asking him to leave he told my co worker he wanted to sa me then he'd leave. Of course my co worker being the amazing guy he is, didn't leave my side the rest of that day despite the man being arrested and charged. There's hundreds of other events and stories to tell, which is sad I have so much to say about a three month long summer job. I should have never taken the job in the first place, especially since it was my first and I was only 17 at the time and very clueless about the bad people in the world.
      Never fear though, the pool had to close because of the filter system blowing up and the locker room floor nearly caving in and because it is a low income neighborhood I doubt my city will pay to replace it anytime soon.

    This brings back so many memories. Not like we had anything to hide but as soon as the health inspector walked in the hostess would let everyone know on the radio and the manager would run out to stall and it was all hands on deck to scramble in the kitchen 🤣

      That's why the heads up from decent inspectors makes sense - they KNOW running a real ass kitchen gets messier than OHS would ideally prefer, and that it is virtually unavoidable. It's more about discernment - if you can tidy things up quick enough for a ten minute walk through that doesn't kick up any ACTUAL red flags, you're good.
      I worked at a school on a country estate and their biggest switch ups were just hiding any wooden spoons (not used often, more for small things, but we all know it's not officially coded) and putting chefs jackets on. Everything else was run pretty close to code, so didn't need much adjusting. That's what I imagine decent inspectors look for. Anyone who's worked in a kitchen that was trying to feed 30 people at once has some intelligent sympathy for the odd water glass.

      Retail I couldn't even have a Starbucks tumbler without them checking if I had something other than water in it. But like common your makeing me work from 10pm and wake up at 8am to get there by 9am and NOT let me have coffee

    I used to work in a supermarket where all the "back" work (bakery, deli, fresh cut, etc.) all lived in constant fear of the health department dropping in. My coworkers and I all hated each other to a terrifying degree, but when the health department showed up? WE BECAME BESTIES. We ran around like ants and got that place spotless in maybe 10 minutes tops. It was INSANE.

      I NEVER understood working in a kitchen like this..if it only took 10 minutes of extremely quick work, why not take 30 minutes to have everything always up to code daily?
      you never live in fear and there is no scrambling around with your heart rate at 185 BPM when the inspector inevitably shows up.
      In my kitchen all that needs to happen is sometimes a couple things need to be labeled or a drink was placed in the wrong place. we never live in fear and we dont have to stall the inspector, he just walks in

      I work in a deli(about to quit that horrid job) and we're like the total opposite. We all mostly like each other and get along(with a couple exceptions) and we clean everything constantly throughout the day. The employees there are great, the customers, it's a struggle not to entertain your darkest thoughts most days.

      @@KumoGoesFastokay so I’m the chef at a small hown town restaurant the locals love our food no doubt and we get many travelers being close to an interstate and near by a high school that does well Athletically. My main issue is getting people to date anything. Back in September we had a surprise inspection. I wasn’t expecting it until November, but a disgruntled ex employee called in a fake report. Health Inspector showed up while I was on vacation with a liquor a food truck delivery sitting in the Liquor closet and the walk in. A few items weren’t dated and the Silverware wasn’t stored properly. Bartender says they were rolling silverware when the Inspector walked in and just set them behind the bar. We got a 90. I was upset because I know we can do a 100 every day of the week, but simple mistakes and bad timing will get you. I don’t think we should have been docked points for the food and liquor deliveries but the Food Code says otherwise.

      ​@KumoPlaysWoW you can work in a *mostly* perfect kitchen but the health department will still scare you to death. The restaurant I used to work at actually had a good relationship with the health department around here, but the small things like gloves on (I don't even touch the food directly) or rags in buckets always felt inefficient and not much more sanitary

    We just got inspected by our "pre health department" company so this is especially relevant rn 😂
    Funny story actually, one time everyone started whispering that the company had swept in, so we started the mad dash for labels and temp logs. Ten minutes later we hear "oohhhh EcoLAB is here, not EcoSure"
    Y'all when I tell you the entire kitchen breathed a sigh of relief strong enough to generate an F4 twister

      No one cares. The manager/owner slips them a couple of hundreds and you’re good. Health Inspectors are not regulated and susceptible to bribery.

      @@stuffhappened9271 they really aren’t. Depends on the nature of your infraction. Put between $500-$2000 on the table and they’ll take it. Same goes with the Fire Marshall. It doesn’t work if you’re naive to giving the bribe or being cheap and not paying enough. Health Inspectors are just security theatre. To the public it looks like someone is looking out for you.

      @@notcylus6783 I’ve been a manager at bars and restaurants while going to school. Filthy establishments. The owners had safety envelopes specifically for the health inspector because it’s cheaper to pay them off then to get a fine or pay for a lawyer. As long as your fridge works, have a bottle of soap by the bartenders sink. You’re good and they’ll take the money. Most health inspectors don’t care. It’s just a job. Same goes for Fire Marshalls, all for show but when push comes to shove they take the cash.

    Health department inspections were a pain, especially when they follow you. I remember losing points for not washing hands before I put bread in a toaster. And more points for not washing hands after taking bread out of toaster. According to them it should went wash, grab bread, toast, wash, remove toast, wash, butter toast, wash, place on plate, wash, serve. Here's your 20 minute piece of toast sir. Migh taste a slight soapyness. ENJOY

    I ran many Residential Care Facilities for the Elderly and the stress level is always high eventhough I do my daily walk-thrus because you never know if someone dropped the ball before you caught it and as the Executive Director, you're responsible for everyone and everything. 😊

    I ran such a tight ship when I was a manager that we were always inspection ready. We alway got perfect scores every time and never needed warning. Just do the job right all the time ffs. People are paying a premium over home prices and they deserve a consistent standard of excellence for keeping the team fed too. Even if you shovel poop for a living, take pride in doing the job well. Your work is a reflection of your character. Be of good character.

      Quite literally happened to us last week. Truck was supposed to come before we even open, but they’re short drivers so it was during lunch. On top of that, they’re having distribution issues so half the stuff on the floor we can’t even use & have to send back bc they sent replacements last minute without approval

    My aunt is a company health inspector and I was once studying at the same city where she does her inspections. She brought me 2 cases of water, 3 cakes, 6 small milk cartons and 12 yoghurt cups during the 2 weeks she was there. She gets free stuff all the time and because she still needed to fly home with just her backpack she had to get rid of all the excess food. This happened a week before the first Covid lockdown happened and what she brought really helped us.

    I remember in culinary school that my teacher constantly told us- “Treat health inspector visits like a visit from the cops- if they don’t have papers, they don’t get in.”
    Edit: I've caused a war but I got a haha from the man himself, and that makes everything worth it. Let me clarify one thing here though, he did say more than a few times that if a health inspector shows up unannounced and it's during your busiest hour or a dinner rush or something such as that, then that is a good enough excuse to tell them to simply come back tomorrow at a much less busy time. Restaurants get dirtier in the kitchens the more tickets come in, and there's a difference between "always dirty" and "working dirty". "Working dirty" might constitute such things as rags left over counters, out of code food being left in the dish pit without being dumped immediately, utensils not being cleaned right on the mark, etc.. all relatively minor things to a health inspector, and its their job to pick up on that kind of situation.
    At the end of the day, health inspectors keep us and the places we eat safe from foodborne illnesses and other hazards, and they only shut down the most deserving of places. There are minor and critical violations they can mark down, and those minor violations usually just constitute a quick repeat visit the day after or the next week, as they can be resolved within a quick timeframe. Critical violations include storage areas not being kept at correct temperatures, seriously out of code food being served, infestations of insects/pests, unclean appliances such as "always dirty" ovens, counters, utensils, etc..
    Food is a magical thing but it is also very dangerous when prepared unsafely in commercial environments. It is a thing that brings people together and lets them relax after a long day or catch up with friends, and the atmosphere of most restaurants provides a safe, calm environment in which to enjoy eachother's company. So let's all chill down in the comments, and just think of all the good food we've had at restaurants in our lives and those good memories that they gave us, and how our favorite restaurants stay open due to health inspectors doing their jobs and ensuring the populace consumes and enjoys safely.
    Also, anyone reading who hasn't learned how to cook at home yet- give it a shot! Start with the simple stuff, salads, pasta, rice, breakfast- cooking at home often gives me a nice bit of satisfaction in my day, and there's no health inspectors to worry about! (Just your own stomach-)

    100% accurate. We had this trashcan that only ever held frozen paper fry bags from the freezer from when we'd drop fries in the fryer. No way for the health inspector to know this though. I'll never forget after we all were on our best behavior, the new guy pushed down the fry bags in the trashcan with gloves on.....

Any fussy folks were promised a free dessert.       @@virtualnatureone in my country each region has a whatsapp group with all the stores and they share info like that.

    The only time the health inspector came into the restaurant I worked at as a kid I was so High and had gotten the other cook high on the way to work. We (The grill and cook area) ended up with the Highest Rating for any station at that locations history... Best part was the Manager busted us out for coming in high but couldn't send us home because he had no one else to work. LOL! I never let him forget about it.
