It still kinda makes sense that he destroyed the knife because despite it being sharper than a kukri, you would probably drop the knife before even getting close to someone in a knife fight due to pain and probably how heavy it is.
More likely scenario is that it's pretty useless for cutting food. The handle was very sharp and he couldn't get a good grip on it without gloves. It looks like it was also very heavy, since all he had to do was just let it fall on the cucumber. Bismuth is pretty flaky for a metal, and cutting food that you'll eat with it isn't wise. Would've made for an amazing display piece, though.
