The way I see it is that American pizza is basically a full meal on a bit of bread, whereas Italian pizza is comfort food that substitutes a full meal and works just as well.
Being Italian I think I'm biased but I'll try be the most objective: Italy and America seems to have a different philosophy making pizza; Italians try to have flavours that compliment each other but try to remain simple (I think the most ingredient I ever saw on a pizza is 8 for capricciosa, but most of the time it's between 3 and 6) while americans are more like "the more the better". Also, Italians spend a LOT, and I mean A LOT of time sperimenting with different leavening. Last, but not least, is the quality of the ingredients: it doesn't matter if it's Italian or American, bad ingredients will always make a pizza taste bad, using fresh ingredients it's the key to success
I like the idea of experimenting with the leavening, how small changes can make such a big difference in texture and eating experience. Also I agree! The best pizzas are always made with the freshest ingredients! Being american I think the attitude towards pizza can often be innovation too. Because while chain restaurants tend to offer just a few different flavors (which the american in the video did a great job of describing), it's not uncommon for local pizza restaurants to serve creative flavors such as spicy tikka masala, pb&j, bbq chicken, or pear & gorgonzola and there is variety not only in flavor and crust, as I understand there is also in Italy, but also presentation. For example one restaurant I visited serves salad on top of the pizza - but it's not sold separately, it's actually considered part of the toppings on the pizza. I appreciate that you took the time to write your thoughts and about the philosophy behind pizza in Italy. Now I appreciate pizza even more :)

As an Italian I love pizza! I would like to tell you one thing, Margherita is usually the standard pizza in Italy but there are many different pizzas, better, complex and divine, for example one of the best you could eat is without tomato sauce but with a base of local mozzarella (god like), chunks of Robiola cheese, a real Italian mortadella (god like) and the best Bronte pistachio pesto, one bite of this and it sends you to heaven. Almost all pizzerias and restaurants make it (with some variations), try it if you get the chance.
It doesn't really make sense to compare an american pepperoni to an italian margherita instead of american pepperoni vs italian pepperoni or american margherita vs italian margherita. It's generally true that american pizzas are heavier with the toppings but to play on the stereotype of the "lighter" italian one by using one without toppings is kinda misleading. Also: margherita might be the basic version but it's most definitely not the most commonly eaten pizza in italy, the vast majority of italians prefer pizza with toppings, only a minority of pizzas ordered are margheritas.
I totally agree, I too would have preferred the comparison was made between pizzas with the same ingredients but of different origin and processing to notice the difference in quality. By "standard" I didn't mean the most eaten but the most famous around.

I personally think Spanish, Greek and Portuguese food is the best in Europe. Unfortunately, for some reason, they are not as popular around the world as Italian and French food.

High quality Italian pizza is far better. They focus on quality tomatoes, cheese and flour. Where American pizza uses canned sauce, packaged cheese and regular flour. It's a lower quality pizza.

American pizza makes me sick after eating it. That's why I don't buy from dominoes in Australia or pizza hut. I usually go to Italian restaurant or single pizza stores that seem more homemade

It’s funny how used to process pizza we all get. I never really understood it until my husband started making pizza from scratch only following Italian recipes and sourcing the correct flours from Italy etc. We ate his pizza for a year or so. One day we were lazy and ordered pizza. The same one we used to have before he started making his own and OMG we everyone including my children kept saying that it tasted like eating cardboard and some chemical we couldn’t pinpoint. We had 4 different pizzas on the table and they all tested so artificial. I couldn’t believe how we were so used to that taste at one stage that we actually thought it used to test good.

The American Pizza looks like a shitty Domino's pizza or something, a more fair comparison would be a real local NY cheese slice that you have to fold in half, that would be a much more fair comparison to the Italian Margherita style because they would both have "homemade" quality to them

We have shit tomatoes in the US which is ironic considering they're native to the Americas and weren't even in Europe until the late 15th century. The soil is completely depleted and mass produces empty garbage. The wheat is very different too, and of course the dairy is lower quality. If you followed the exact same preparation method it would never be as good. You have to use imported ingredients which means canned tomatoes either way.
Italian here. I'm sure there are good pizzeria in Usa too, however the real secret of the italian/Mediterranean diet have nothing to do with Pasta or Pizza. It's the vegetables/fruits, specially vegetables.

Having said that, just because there are microwavable pizzas at our local gas station, it doesn't mean there aren't also pizza that has been tweaked to perfection at a ma and pop pizzeria. Also, where Italians may feel they need to stick to the book and prepare pizza in a certain way, Americans have the freedom to experiment and make things taste better or worse because taste is subjective.

As an Italian-American having grown up with the best of both options, objectively - commercial American-style pizza is way more satisfying on a deep, primitive, lizard-brain level. Sure, Neapolitan style (shown in the video) is nice, and simple, and can be "fresh-er" but, more often than not - the middle is way too wet, the cheese separates in blotches that slide everywhere, the "simple" sauce tastes like tomato-metal water, and the basil doesn't add that much to the overall product. Commercial American-Style pizza takes everything about Italian-style pizza and puts it on steroids; The thicker sauce is both acidic and sweet (adding more dimension to the flavor profile), the cheese covers the entire pizza (and is often cooked until golden) providing less wet-to-dry inconsistency and more texture, and the thicker/cakier, greasy crust increases contrast to the wet ingredients, and tends to almost "fry" in the oven when baked, adding WAY more texture and mouth feel as you eat it. Don't get me wrong, I love both and each has its time and place - But on a purely visceral, animal level - nothing beats American-style pizza when you want to abandon all your morals and indulge in the pleasures of life.

I enjoy both. Can’t deny I also love the crisp from the American ones, and there’s just something about pepperoni that’s so good lol. But Italian style pizza definitely goes down a lot easier and doesn’t leave you in a food coma, greasy-fingered mess 😅

I’m sure different people have different taste. Personally I didn’t like the pizza I had in Italy. I didn’t like the cheese because I thought it was too salty. I don’t like thin crust either. I was surprised I didn’t like it. I make my pizza at home on French bread. This isn’t uncommon in the pizza in the USA. I also use pesto sauce not tomato. I put on spinach, tomatoes, mushrooms. 😋
Depend were you have eat pizza. In Italy there are 2 type of pizza: Roman style that have thin crost and neapoletan style that are thicker and soft. For the cheese,i don't know what you have eat but probably was not mozzarella, because mozzarella have a very delicate taste. In italy we put pesto on top too,in particular with shrimp. And the various combination of pizza with mashrooms its very common. So i don't know where you eat pizza in italy,probably in turistic place,i guess.

French bread with pesto sounds good and I would definitely eat it as well, but I personally wouldn‘t call that a Pizza 😅 And for the pizza you had in italy: I think you went to a not great, touristy pizza place. Cause the cheese that is normally on italian pizzas is Mozzarella and that is not really a salty cheese. I think you just had bad luck with your Pizza in Italy

Essendo americana è abituata al guazzabuglio di ingredienti chimici. Se noti infatti ha trovato la mozzarella troppo salata. Loro mangiano solitamente cibi zuccherati all'inverosimile, e il diabete ovviamente ringrazia. Diciamo poi che la mozzarella fior di latte (dubito conosca la bufala) tipicamente ce l'ha quella punta di sapidità, quindi la zia non sa proprio cosa parla. Si aspettava, da brava americana, la stessa pizza del suo paese e si sarà persino meravigliata di non poter pagare in dollari alla cassa. Questo poi non significa che in Italia tutte le pizze siano buone, ma lasciamolo dire a chi ne capisce. We make pizzas out of everything. You can get actual breakfast pizza here, scrambled eggs and bits of breakfast sausage with cheddar and mozzarella cheese on a crust. It's awesome.

My favourite pizza looks like a compost heap but supposedly it tastes better: Parma ham, buffalo mozzarella, aurugula (AE)/rocket (BE) and cherry tomatoes. Yummy!

Not necessarily on pizza but the cheeses they used for different dishes were pretty gross most of the time and often didn't even taste like cheese. If that's too much hate for ya I will also add that their BBQ on the other hand was pretty good though

I'm not an expert on American food and I also don't need to be one to tell you that I didn't like the cheese there. And an american pizza like you see here in the video is just the type of pizza you would get from fastfood franchises like Domino's or Pizza Hut and these are also pretty much everywhere in Europe

It’s funny how used to process pizza we all get. I never really understood it until my husband started making pizza from scratch only following Italian recipes and sourcing the correct flours from Italy etc. We ate his pizza for a year or so. One day we were lazy and ordered pizza. The same one we used to have before he started making his own and OMG we everyone including my children kept saying that it tasted like eating cardboard and some chemical we couldn’t pinpoint. We had 4 different pizzas on the table and they all tested so artificial. I couldn’t believe how we were so used to that taste at one stage that we actually thought it used to test good.

Also, it doesn't really make sense to compare an american pepperoni to an italian margherita instead of american pepperoni vs italian pepperoni or american margherita vs italian margherita. It's generally true that american pizzas are heavier with the toppings but to play on the stereotype of the "lighter" italian one by using one without toppings is kinda misleading. Also: margherita might be the basic version but it's most definitely not the most commonly eaten pizza in italy, most people find it fine but a bit bland, the vast majority of italians prefer pizza with toppings, only a minority of pizzas ordered are margheritas.

We have shit tomatoes in the US which is ironic considering they're native to the Americas and weren't even in Europe until the late 15th century. The soil is completely depleted and mass produces empty garbage. The wheat is very different too, and of course the dairy is lower quality. If you followed the exact same preparation method it would never be as good. You have to use imported ingredients which means canned tomatoes either way.

Italian here. I'm sure there are good pizzeria in Usa too, however the real secret of the italian/Mediterranean diet have nothing to do with Pasta or Pizza. It's the vegetables/fruits, specially vegetables.

Having said that, just because there are microwavable pizzas at our local gas station, it doesn't mean there aren't also pizza that has been tweaked to perfection at a ma and pop pizzeria. Also, where Italians may feel they need to stick to the book and prepare pizza in a certain way, Americans have the freedom to experiment and make things taste better or worse because taste is subjective.

As an Italian-American having grown up with the best of both options, objectively - commercial American-style pizza is way more satisfying on a deep, primitive, lizard-brain level. Sure, Neapolitan style (shown in the video) is nice, and simple, and can be "fresh-er" but, more often than not - the middle is way too wet, the cheese separates in blotches that slide everywhere, the "simple" sauce tastes like tomato-metal water, and the basil doesn't add that much to the overall product. Commercial American-Style pizza takes everything about Italian-style pizza and puts it on steroids; The thicker sauce is both acidic and sweet (adding more dimension to the flavor profile), the cheese covers the entire pizza (and is often cooked until golden) providing less wet-to-dry inconsistency and more texture, and the thicker/cakier, greasy crust increases contrast to the wet ingredients, and tends to almost "fry" in the oven when baked, adding WAY more texture and mouth feel as you eat it.
Don't get me wrong, I love both and each has its time and place -
But on a purely visceral, animal level - nothing beats American-style pizza when you want to abandon all your morals and indulge in the pleasures of life.

I’m sure different people have different taste. Personally I didn’t like the pizza I had in Italy. I didn’t like the cheese because I thought it was too salty. I don’t like thin crust either. I was surprised I didn’t like it.
I make my pizza at home on French bread. This isn’t uncommon in the pizza in the USA. I also use pesto sauce not tomato. I put on spinach, tomatoes, mushrooms. 😋
Depend were you have eat pizza. In Italy there are 2 type of pizza: Roman style that have thin crost and neapoletan style that are thicker and soft. For the cheese,i don't know what you have eat but probably was not mozzarella, because mozzarella have a very delicate taste. In italy we put pesto on top too,in particular with shrimp. And the various combination of pizza with mashrooms its very common. So i don't know where you eat pizza in italy,probably in turistic place,i guess.
I don‘t want to be rude. French bread with pesto sounds good and I would definitely eat it as well, but I personally wouldn‘t call that a Pizza 😅
And for the pizza you had in italy: I think you went to a not great, touristy pizza place. Cause the cheese that is normally on italian pizzas is Mozzarella and that is not really a salty cheese. I think you just had bad luck with your Pizza in Italy

Essendo americana è abituata al guazzabuglio di ingredienti chimici. Se noti infatti ha trovato la mozzarella troppo salata. Loro mangiano solitamente cibi zuccherati all'inverosimile, e il diabete ovviamente ringrazia. Diciamo poi che la mozzarella fior di latte (dubito conosca la bufala) tipicamente ce l'ha quella punta di sapidità, quindi la zia non sa proprio cosa parla. Si aspettava, da brava americana, la stessa pizza del suo paese e si sarà persino meravigliata di non poter pagare in dollari alla cassa. Not necessarily on pizza but the cheeses they used for different dishes were pretty gross most of the time and often didn't even taste like cheese. If that's too much hate for ya I will also add that their BBQ on the other hand was pretty good though

It's not that deep man. And yea i'm sure Domino's and pizza hut aren't the best places to eat american pizza but I still overall prefer Neapolitan pizza. And you also don't have to study international cuisines to know that in Italy people value fresh ingredients much more and use a lot less processed foods. That's common knowledge for everyone that shows at least a bit of interest in different countries and their cuisines. You sound like one of these Americans that never left his country all his life
