    Today, we're trying something new with an Italian Rainbow Cookies, which is more a cake and we're littlemountainranch.ca/how-to... using natural food dyes. Although the colors didn’t turn out as planned, the laughs and deliciousness sure did! The kids absolutely loved them, proving that perfection is overrated when you're having fun.

    I canned with my mom growing up in Washington State, Yakima, WA… we canned everything! My dad hunted way up through British Columbia for Deer, Elk,and an occasional Pheasant…I continue to can but not in too huge quantities anymore.. I’ve taught my Peruvian Husband to can and he Loves it😳❣️

    I love canning. I’ve had a freeze dryer for two years but I’ve been canning for 50 years! I prefer it over freeze drying.
    I did can tomatoes in January, because I had like 300 lbs in the freezer. Lol
    I can’t imagine starting corn and squash in pots. We direct sow, even in northern Michigan.
    Your Italian cookies look fantastic!!

    We make them every Christmas, it's a family tradition for cookie weekend. We do all our cookies and candy for Christmas the second weekend in December. Then everyone make their own containers for their families .

    Chelsea you and Dan are great at most stuff you do, that's why i love your channel so much. Plus the way you explain everything to thickos like me. I can actually understand what you're explaining to me. I might not be able follow you for a while my husband is going in to get a triple bypass very soon. Thank goodness my son is here but as soon as everything goes the way it should do. I will be back i hope everything works out for you all in the meantime. And as i always say super Dan he really deserves that name. Hope to speak to you all soon.

      Thanks for your kind thoughts I will keep an eye on my favourite channel, and the lovely people it's just I won't be able to catch it live for a little while. But I still love watching the subscribers going up personally I wish it was a lot quicker the work they put in to it they deserve it.

    I have been canning for 30 to35 years. Gardening and canning has always been my passion. This year I lost my husband and no need to keep doing it any more. I will still grow a few things in pots for myself. Sad time for me....

      @@LittleMountainRanch Another widow here, deeayers. You still need to eat. Think about canning connivence foods for yourself in pints -- sausage to add to omelets, chili, soup, etc. We have to take care of ourselves.

      I’m so sorry for the loss of your husband. It’s got to be one of the worst times in a person’s life to lose your mate. My Dad is going through that and has been for the past two years. We talk about mom all the time and I miss her every single day but for my dad it’s a whole other experience it’s like a part of him has gone. It’s so sad. My heart and deepest condolences go out to you.❤️🥰🙏🏻🇨🇦🍁

    I love anything with almond paste. Although I'm Canadian, for some of my childhood I was a Dane.
    The Cosmo made me smile. A couple of summers ago our neighbour plucked some Cosmos from her yard to replant in ours. Every spring they reseed themselves and grow to 6 or 7 feet. They are actually starting to become a bit of a nuisance since they are taller than most of our perennials and are sreading everywhere.

    grew up in a Brooklyn Italian neighborhood- where great bakeries were everywhere- and rainbow cookies were a sunday staple with dinner- they have food coloring on each layer of cake-(Usially in the order of the Italian flag) some bakeries also added yellow coloring- usually use apricot jam in between- my daughter and her cousin have made them at home also- will show her this recipe - so different from the NYC version- looks good

    We get almond paste in the USA grocery store, in baking aisle, canned by a company called Solo. Glad to learn how to make it.

    Hi Chelsea, I enjoy watching your videos!
    I am Italian, I have been living in Italy all my life, I love baking, and actually I bake a lot, but I have never heard of or seen those rainbow cookies.... Reading the comments, I suppose they are more like an Italian-American recipe....
    As it happens very often, Americans call "Italian" or consider as "Italian" some recipes that you could never find in Italy.... and I confess it hurts, because we care so much about our wonderful quality food and our millenial culture....

      These were probably started by Italian emigrants to celebrate their Italian heritage. The fact that the food colouring reflects the colours of the Italian flag is an indication of why they are called Italian rainbow cakes.
      If I were you I wouldn’t be so hurt because this is probably an attempt by Italian-Americans to celebrate their ethnicity.
      Us Irish have to put up with Irish-Americans calling St. Patrick’s day Pattys day, and posting gifs of four leaf clovers instead of the three leaf shamrock. And don’t get me started on the leprechaun thing!😂❤

    Freeze dried beets or strawberries make great powder for color, or even blueberries

    The water from boiled beetroot also makes a great food dye. I've used it a lot and it can be frozen in ice cube trays.

    Those are the color of the Italian flag. Look wonderful and I love marzipan/almond paste. Quite a project though.

    Chelsea, I make the rainbow cookies for Christmas.I Did buy pans from Williams Sonoma that are 9x12x1. I've filled them with raspberry and with apricot filling. Got overly ambitious and put chocolate on the sides too. The almond paste is $6.49 for an 8oz. box here in New York. You can also make macaroons and pignolli cookies (my favorite). When my sister had her babies she requested my brother-in-law to bring a pound box of rainbow cookies to the hospital. A family favorite. I never have but my friend freezes them whole and takes it out when company comes.

    Nice to see you Chelsea. That recipe looks great! My favorite is almond. Marzipan is my downfall for sure.I purchased some natural food color at a organic store and they are great. I really don't think it needs any color with all the beautiful flavoring in the batter and good chocolate. I had a friend that worked in a fancy hotel downtown Vancouver and I was able to get my hands on a 5 lb yes 5 lb block of marzipan. I made german stollen for Christmas. Needless to say friends and a couple of neighbors received a loaf for a gift. You must try it Chelsea. It is so fun to try new recipes. I have been baking cakes and gingerbread houses for years and in my buttercreams my favorite is Italian buttercream. Today for the first time I am trying Russian buttercream. It is just butter vanilla pinch of salt and condensed milk. Nice not to use the icing sugar. I guess that is why the Italian buttercream rules for my family. All your plants are doing so well. We should be able to plant things pretty soon. I usually wait till May long weekend. So excited. Mom taught me to can at a very young age to and thank her for it all the time. I miss her dearly but everytime I can it is great memories for me. Thank you Chelsea for another great video.

      I might try them… it’s only time and right now without preserving too much, time is what I have. I’m in the lower 48, Seattle area… so most of my cool weather veg are in… getting ready to plant out tomatoes next week.

    I've used some beet juice or the water from cooking beets for a food dye. Watered down spinach juice for the green.

    Amazon has a natural set of food colorings for like $6. I believe the brand is Watkins. They aren’t super vibrant, but are still fun.

    I’m not a huge almond fan. Could I use blanched almonds and vanilla extract for the paste?
    Btw- it’s nice to be reminded of all of the things one could still make from scratch with a bit of time and effort.

    Are the chocolate chips tempered? If they are, try to melt it on a lower heat, then the chocolate will stay tempered (not melt so fast on you fingers) Of it is not tempered, you can do that yourself without adding anything. Chocolate can be tempered over and over again.

    I love these little cakes. I buy some every year from a bakery in New York. I think I need to try and make them this year. Question, why do you not put your tomato and pepper seedlings in the high tunnel rather than the greenhouse? Is it due to the warmth or something else? As I’m not a gardener I know there is a logical reason. Thanks Chelsea. ❤️❤️Jane

      Not the kind we make - ours is more a bar, but maybe traditional marzipan is.

      They are a bit different. When I bought marzipan from a Dutch bakery (to use for homemade danishes), she asked if I want marzipan or almond paste.

      To make marzipan you mix 8 oz almond paste with 2 cups confectioners sugar and 1/4 cup corn syrup. I use a double boiler to warm up the almond paste.

    I don’t remember if you ever let us know how to save seeds for the next growing season. I do a very small garden and only potted flowers, the deer do not allow me to do anything else. I order seeds and so many are wasted for lack of growing space.

    Hi Chelsea. Can you water bath everything or some things need to be pressure cooked? I have a stock pot I don't want to invest in a pressure cooker yet since I don't know how to can food yet. I have foods growing in the garden I'm thinking I might try to water bath the excess. Now my dilemma is how to know how long to water bath what vegetables and how do I know if I need to add salt or vinegar or anything else in.

      Some things ( lo acid items such as meat and beans) must be pressure canned. And pressure canned and pressure cooked are two different things. I’m sure Chelsea will hop on here and give us her best tips in her guide she spoke about

      Chelsea does a lot of pressure canning and follows most governments guidelines.. but if u follow ruthanne Zimmerman from homesteading with the Zimmerman's she teaches how her basically Amish heritage has been water-bath canning everything for over a hundred years.. it was interesting to watch but I have yet to have the guts to try it

      Fruits (including tomatoes), jams and jellies, and pickled anything can be water bath canned using approved recipes. Veggies and meats either need pressure canned or frozen.

      Vegetables need to be pressure canned because they are low acid, unless you pickle them. High acid fruits can be water bath canned.

    Try coloring with beet juice. It is so mild that it won’t overpower flavor.
