    Shito / Blackened Stew / Ghana Pepper sauce is best made in large batches.
    This video made about a gallon of Shito! Make sure you have enough containers and space!
    Ingredients:
    6 medium to large onions
    20oz of dried shrimp
    16oz of dried herring
    16 oz of ginger
    4 garlic cloves
    11 Tbls of chili pepper
    2 cubes shrimp bouillon
    60oz of tomato paste
    1 gallon cooking oil (I used vegetable oil)
    Salt to taste

    I do not know why some people are complaining because she used tomatoes..my mum also taught me this recipe and this is all about adding your own twist and flavours..u can add more or less no matter what u are cooking..I mean that is why it's called AUTHENTIC..she doesn't have to do it like everyone else.. that would be even soo boring..     I was taught a different way of making this. I used 1 jar shrimp powder and 1 jar of fish powder. They didn't add tomato paste or any tomatoes for that matter. I Love shito and Kenkey but I have to have my Kenkey a certain way. I'm not a fan of the one wrapped in the green leaf. I like the one in the corn husk. I guess it depends on how long they ferment the corn. Thank you for the video.

      The corn husk kenkey is called Ga or Accra kenkey, the dry banana leaves one is called Fante Kenkey. Preference depends on location.

    With my recipe I only use just a small amount of tomato paste but it’s all a matter of choice, some even don’t add tomato paste at all

    Sometimes I get frustrated and want to cry when I see Ghanians,Nigerians,and you know mainly west Africans,because we just resemble eachother so much.Yet I have no clue where my ancestors are from.But I swear y'all look like some of my family members😘✌.Thanks for sharing

    Oh God!! I found it! Smoked shrimp & blackened sauce..
    I got a feeling bout this channnel. Subscribed... I gotta make the best of it tho in NC the state's American..bc my husband is Ashanti & I want to surprise him. I found a good West African market in Greensboro, Gold Coast International market..so with women like you I can do this..
    Ima tell u American food too GMO, chemtrailed, processed. It's tough, but Ghana omg! That's real genuine vegetation, fish & meat. That sauce with the smoked shrimp is all the rave in Brklyn,N.Y. Flatbush...the Ghanian women killing em with that. Oooh everything so red, palm oil, tomato, paste....Yummy

    Shito is made with a lot of onions, garlic and less tomatoes paste. That how Ghanaian shito is made.

      There is no one route to Mecca. Everyone and his /her style. We just have to respect everyone's style.I use a lot of onions and less tomatoes but my dear it came out right ,that's all that matters.

    Looks really nice dear , I'm a bloody beginner in making shito , for the first time ill do it in a smaller quantity. What i like on ur shito is , that its not that dark .i love shito but i dont like when the chili powder is tasting bitter through too much frying. It looks red and appetizing.     There's shito in a bucket sitting in the freezer for 3 years. And it's still good. Shito is a life saver

    Wow! Thank you so much! the amount of oil is staggering! With all that tomato paste would it be advisable to add a table spoon of sugar to remove the acidity and prevent heartburn? Otherwise the recipe is amazing!! I liked that you presented so well and clearly! I am Tanzanian have never heard of this recipe but may try it on a smaller scale. Love West African food. Your sister looks younger by the way!!

    Omg you guys are really awesome
    but with my method I normally put slice onion in the oil first then add one piece bay leave before adding the blended ingredients (garlic, onion, ginger, fresh red,green n yellow pepper, clove, rosemary) then cook it for about 5mint then add the powder pepper stirred for 3mint then add one tin tomato paste diluted with a little water and stire for 10mint then add the dry powder fish n shrimps then your cube and salt then after 30mint your shito is ready hope my is ok too?

    Thank you so much for sharing this video. I have made this several times over the last 2 years. I halved the recipe this time and it worked out so well. It was nice to not have the pot spilling over, and was able to add a bit more oil for the jars. Question though, my husband says I don't have to refrigerate the jars. I thought I did considering I did not properly seal them like you would to can something. Will it go bad if left out on the counter in closed, but not sealed jars?

      Sealed jars are best regardless of refrigeration or not. The oil on top does act as a barrier but the less exposure to heat and air, the longer it will last, like anything perishable.

    Can we use dry crayfish in place of the dried shrimp or do you have a home recipe for the dried shrimp? I live outside Africa

      +Courtney Leach what you can try is making it with the same amount of oil but afterwards scoop off the excess oil. You will still need a small amount of oil to put on top of whatever storage jar or bottle you use to help preserve it.

    Hello Stella, I'm trying to make shito... I have all the ingredients with the exception of dried herrings. I live in Las Cruces, New Mexico and the closest African grocery shop in El Paso Texas hasnt got dried herrings. Can I use just the dried shrimps? Thank you.

      You can use more powdered herring instead of shrimp. Fresh pepper or powdered is fine

      From the African store or you can make your own by blending dry chili peppers into a powder form.
