Shito originated with the Ga ethnic group and is the Ga name for peppper. The red pepper (which you have called salsa in this video, is just named traditionally as shito. The black pepper sauce which you referred to as shito is a distinctive name -it is actually named traditionally as kenaan shito ( i.e fried fish pepper if literally translated into English). Because all the recipes for Kenkey that I looked at online start with the already fermented corn dough, and the stuff you have at the beginning is dry. I started with Mexican corn flour that you use to make Tortillas and mixed it with water and let it sit for three days. Yes it did rise and yes it did start to have an odor like cheese, but my corn was way too watery and liquidy to form into anything. How do you go from store-bought corn flour to a dry, fermented corn flour? There seems to be very little information on this. Thanks.
You added too much water when mixing your corn flour. Put very little water and make sure all the flour is coated. The dough should be flakey not mushy.
Stella, I made the kenkey, followed recipe. But I made a lot and could not cook all. I have left over wrapped in husk. How do I store it for future use.

I would love to know what Americans came to Ghana, created the town of Tamale in Ghana and brought tamale recipe there. Maize is not native to any part of Africa. Therefore Kenkey is not native to Ghana and could not have come from there to the Americas. Greenville, MS is also home to tamales that didn't come from Latin America. If you have any information concerning the arrival of tamales into Ghana please share. Thank you!

Twin Peaks Fan Club Limit the water. Add little water and mix with the corn meal, repeat that process until you get the dry texture.

Efia Serwaa after about 3 hours on the fire it should be ready. You can check the consistency. Reference the finished product at the end of the video

If left for a few days, it will be fermented and that can make one drank.
