    I usedto buy this from a Ghanian lady when i was in living in Sokoto, Nigeria.Loved it with the fresh pepper they grind in this wooden thingy and fried fish. I think it was 2 naira and 5 naira for the fish back then. Lol. All the way from Philippines here.

    I started watching this video because I want to learn so when my mother-in-law come to visit, she see my effort and trying to learn Ghana cooking. I'm sorry to said this will not happen, I'm a very good cook of my Southern dishes but this video made me want to take a week off work to rest! LOL The other dishes looked delicious I have to asks my husband if he every made this dish before, when he get home....

    Dokono? in Surinam (South America) it's made with casava and called dokun.
    I'm sure our ancestors brought it from Ghana.

      Georgina Bakboord in Twi it is pronounced dokono but the Fanti say dokun. The Ga say kon. Afro-Surinamese do have a strong Ghana connection because of the Dutch who owned Suriname during slavery and we’re also the main European colonialists in what was known as the Gold Coast at some point

      Georgina Bakboord - Hi Georgina, it appears that the ancestors of some Surinamese were brought over from Ghana and in some Surinamese fishing communities, they still use several Akan words in their patois.

    This is so amazing my grandma used to cook something similar to this on top of her collard greens with corn meal dough called dumpling and it was so good !!!

    Stells & Stephen I am missing kenkey and the fish with the hot peapa (pepper) it's real hot when I first ate it with the kenkey my mouth was on fire hahaha! I ate it in Accra and Kumasi with my husband!

    Nice job! Makes me want to be in Ghana right now!. Just to say that I think it is important for people to know the correct names of some of the food . Shito originated with the Ga ethnic group and is the Ga name for peppper. The red pepper (which you have called salsa in this video, is just named traditionally as shito. The black pepper sauce which you referred to as shito is a distinctive name -it is actually named traditionally as kenaan shito ( i.e fried fish pepper if literally translated into English). Love your channel.

      check any African store ask for corn dough or just kenkey. Husk, I don't know I'm still looking for an alternative

    Hi. Could you please explain the first process, how to ferment the corn dough? Because all the recipes for Kenkey that I looked at online start with the already fermented corn dough, and the stuff you have at the beginning is dry. I started with Mexican corn flour that you use to make Tortillas and mixed it with water and let it sit for three days. Yes it did rise and yes it did start to have an odor like cheese, but my corn was way too watery and liquidy to form into anything. How do you go from store-bought corn flour to a dry, fermented corn flour? There seems to be very little information on this. Thanks.

      Twin Peaks Fan Club Limit the water. Add little water and mix with the corn meal, repeat that process until you get the dry texture.

      You added too much water when mixing your corn flour. Put very little water and make sure all the flour is coated. The dough should be flakey not mushy.

    Stella, I made the kenkey, followed recipe. But I made a lot and could not cook all. I have left over wrapped in husk. How do I store it for future use.

      +Akosua serwaah freezing them in the husk wrapped in seran wrap is fine.

      Efia Serwaa after about 3 hours on the fire it should be ready. You can check the consistency. Reference the finished product at the end of the video

      janice648 , when I was young, we used to try every other day to cook different things; and my mum would say, if it doesn't work you throw it and start again, so try and imagine what that was like💁🏽💁🏽🙆🏽🙆🏽🙆🏽, crazy!! One day we tried kenkey; I had watched it being done before, so I thought piece of cake, the cooked result was a disaster 🙆🏽🙆🏽... So I was supposed to leave it overnight💁🏽💁🏽💁🏽, no wonder, coz it never cooked through😆😆😆😆😆🙆🏽🙆🏽🙆🏽

    I would love to know what Americans came to Ghana, created the town of Tamale in Ghana and brought tamale recipe there. Maize is not native to any part of Africa. Therefore Kenkey is not native to Ghana and could not have come from there to the Americas. Greenville, MS is also home to tamales that didn't come from Latin America. If you have any information concerning the arrival of tamales into Ghana please share. Thank you!

      Efia Serwaa the water is to keep the kenkey from sticking to her hands. The corn husks are to shape the kenkey as it cooks into manageable portions

    Wow, all my friends when they go to Africa they gain wait and come back.Anywhere in Africa it doesn't matter what country, west, south, east, north everywhere! 😂😆 This is and other goodfood in Africa all African food is good.
    Hopefully these Asians won't exploited it further, white europeans stole everything from Africa, this is the culture and our food is the only thing left from us. I hope I live long enough to go see all Africa and taste the food..
