    Pork steaks over direct coals is one of the best bites in bbq. Really glad to see old school central Texas style cooking like that. I mop, which is kinda similar to the spritz

    Can't beat that direct heat action, love the color on those pork steaks 👍
    I asked Harry Soo about a mop sauce recipe and he told me he likes Apple Cider Vinegar, W Sauce, Butter, and a little brown sugar.
    I'm thinking of adding some onion and hot sauce to that recipe!

    This video popped up as I was researching how I could build a "chud box" without having a chud box, and I never thought of the WSM. What size WSM are you using? I'm assuming one would need to grab the right size WSM to have that 18-20" distance between charcoal and cooking grate.

      Awesome! Thanks for checking out the video! You and I had the same thought, I wanted to figure out how to do a Chud style cooker without having to pay a ton. I already had the WSM and figured why not? I have the 22” WSM. I would never use the 14”, too small. The difference in fuel usage between the 18”-22” is negligible. Sure it costs a little more, but I think it’s worth it to have the 22”, especially if you cook any kind of volume. I’ve been doing a series of direct heat cooks on the WSM and have been loving it. Editing a turkey direct heat video now.

      I have a 18 inch Weber Smokey Mountain and I bought it over 30 years ago and that's all I use it for now is direct heat cooking and it works perfect

    Love it man. I need more WSM videos too.😂. I've wanted to do cooks like thiz for a while on my WSM. Do u think it would be better at a lower temp like 250/275, or is hotter like u cooked at just fine.

      Depends on what you’re looking for. This is definitely more like a grilled steak. The 250-275 is more of a smoked. Either way would come out great for sure.

    Do the pork steaks and chuck roast take about the same amount of time to cook?

      Pound for pound, I’d say it’s close. So if they were each 2lbs they’d each take about the same time. But the pork steaks were less weight so they went quicker. Hope that helps.

      Took somewhere between 2.5-3hours total. I think in all, I flipped them about 5-6 times.
