Smoked Pork Steaks on the Weber Kettle Grill with the Slow 'N Sear

  • Today we're using the reverse sear method to do some smoked Pork Steaks on the Weber Kettle Grill using the Slow N Sear. We also grill up some apples and onions on our antique cast iron skillet to garnish the pork steaks with. Recipe is below!

    CANDY APPLE PIG GLAZE:
    1 diced apple
    1 diced onion
    2 cloves minced garlic
    1 1/2 tbsp minced ginger
    2 tbsp butter
    1/2 tsp each salt and pepper
    Saute all together until golden, then add:
    1 cup apple cider vinegar
    Deglaze pan and add:
    2/3 cup brown sugar
    Cook until reduced by half and has thickened. Remove from heat and stir in:
    1 tbsp each honey and molasses
    2 tsp vanilla extract
    1 tsp salt
    1/4 tsp nutmeg
    Process until smooth with hand blender if desired. Add glaze to meat on grill, add wood chips, cover and let smoke for a few minutes.

    Hey Matthew Barlow... playing ketchup here, been away for a few days. Great pork steaks, these definitely make some of the best bbq... done at 165 or so. I make my char siu with with this or a country style rib from the butt. Liking the shirt by the way... Thanks!

      I was shooting for about 165, probably could've seared them a little earlier so they didn't quite get at hot (I think the finished temp after searing was around 175 or so), but they still turned out excellent. Will be doing these again for sure, I think I'll try doing it char siu style, that sounds wonderful! Glad you dig the shirt, I just got that one.       Well, unfortunately the rub recipe is not mine to give out. It's from a fellow UA-cam cook who was generous enough to let me try it out. i"m glad they did - it's awesome. Full of savory flavor with a nice heat, perfect with pork. Everything that went into this cook went together so well, we will definitely be coming back to these again.     Matthew, I am really liking your flavor combinations. Apples, onions and Pork marry really well. My guess is that your secret rub added a little sweet, savory and heat. Thanks for sharing this!

      I think i will say yes to that. I will shoot the cook today and perhaps you can see.
      The thing is tha what i call pork but is not exactly the same cut as you have. In yours their is a shoulderblade, but in ours there is more like ribs. So i would guess our cut starts further down the back a bit. Although its as close as can get.
      The pricing here is normally porkchops 69 sek, porkshoulder steak 49 sek (more or less just about 2,75$ per pound) so i normally buy these actually. I think they make great barbecue based on the marbling, but also do great in the oven. My mom makes a dish where she puts them in a casserole dish, cover with crushed tomatos, season heavily with white pepper, and bayleafs and bake at 350 until the meat allmost is pullable. Its a great winterdish.

      Wow your mother's recipe sounds delicious! Yeah, these steaks had some shoulder blade in them - they were actually marked as pork shoulder blade steaks. So, I'm wondering what kind of cuts your getting over there?

      Well, I gotta admit - this one was pretty easy, but I appreciate it! The onions and apples went perfectly with the pork steaks, texture was just right with the apples so they still had some firmness, weren't mushy.
      Now, as for the secret rub: it's actually a recipe given to me by another UA-cam channel. It was given to me in confidence, so I can't leak any info. All I can say is that they are on to something. It was a perfect blend of flavor and heat.

Right now we're sticking with the Weber Kettle, but we did just get a couple dutch ovens that we're going to using. Just filmed an episode today using them!
