Meat looks good. Please chop the cilantro and warm the tortillas. As far as the other ingredients, I think if you use what you have on hand that's "traditional". You can't always depend on having the ideal ingredients to make it the "right way", but you still have to feed your family.
Combination of crema and cotija cheese most untraditional combo. No salsa at all, third strike. Not heating tortillas, all Latinos can tell those are cold I heated tortillas, very sad representation of Latino cuisine and culture. Don’t cook it, don’t present it if you can’t respect the authenticity & call it authentic, not okay
It cooks carne asada fast...6 minits each side..I used hickory pellets...close the lid quick after flipping...if u looking your not cooking...so flip or baste quickly to cover up immediately... that is the trick
On every meat, even if you're not using a thermometer, please consider giving the safe temperature zone, to assure safe eating. It's ok to mess up meat (over cooking) as a beginner, but undercooked meat will do damage to the person... consider it as a PSA.

You probably don’t but Some folks use salsa Maggi. Similar to soy sauce *
